How To make Corn Drop Biscuits
2 1/2 c Corn kernels, fresh (3 ears)
Or frozen 2 Eggs
1/2 c Buttermilk
1/4 c Oil
1 tb Honey
1 tb Ground dried red peppers
1 c Cornmeal
1 c Flour
1 t Baking powder
1/2 ts Baking soda
1 t Salt
Preheat oven to 425. In large mixing bowl, beat eggs, add buttermilk, oil, honey, hot red pepper, corn. Stir to blend. In smaller bowl, sift cornmeal, flour, baking powder, baking soda and salt. Add dry to wet ingredients and stir to blend. Drop little mounds of batter (about 2 tbsp each) onto baking sheet, leaving 1/4" between. Bake for 20 min. til golden brown. DROP BISCUIT RECIPE
(makes 12 biscuits)
Ingredients:
1 cup ground oats, or oat flour (100g)
1 cup (minus 2 tbps) whole wheat flour or spelt flour (100g)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp garlic powder
1/4 cup butter (60g)
1 cup cheddar cheese, grated (100g)
1 cup grated carrots (100g)
1 cup buttermilk (240ml)
NUTRITIONAL INFO (per large pancake):
141 calories, fat 7.7g, carb 13.8g, protein 5g
Instructions:
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together the oat flour, whole wheat flour, baking powder, baking soda, salt, and garlic powder.
Using the coarse side of a box grater, grate the chilled butter into the dry ingredients. Mix the butter into the dry mixture using a wooden spoon until well incorporated.
Add the grated cheddar cheese and carrots to the bowl. Mix everything together using your hands, ensuring the cheese and carrots are evenly distributed throughout the dough.
Gently stir in the cold buttermilk, using a fork. Stir just until a sticky dough forms, being careful not to overmix.
Using an ice cream scoop or a spoon, scoop out 12 equal portions of dough onto the prepared baking sheet, spacing them apart.
Bake the biscuits in the preheated oven for approximately 15 minutes, or until they turn golden brown.
Once baked, remove the biscuits from the oven and let them cool for about 5 minutes.
Serve the drop biscuits warm and enjoy!

These biscuits are sooo good. The ingredients may surprise you but the finished product is just a delight. Solid on the outside but fluffy and airy on the inside. Oh, my.

2 cups Sifted cake flour
Bake in a preheated oven at 180 deg C for 13 to 15 minutes.
