Creamy Cod & Potato Gratin - Food Wishes
Creamed cod was one of my favorite childhood comfort foods, mostly because my mother served it over mashed potatoes, which was my favorite childhood food of any type. This version is a little fancier than my mom’s, but still very easy, and can be done in individual portions, or in one large casserole dish. Enjoy!

Cod au Gratin - Traditional Newfoundland - Bonita's Kitchen
Welcome to Bonita's Kitchen! Today we will be making Cod au Gratin, made with fresh or salted cod and so much more. See recipe below!

Recipe:
2 cod fillets, boneless 3 tbsp butter
1 tbsp olive oil 6 tbsp all- purpose flour
2 cups milk Pinch sea salt and pepper
1 cup shredded cheese ( your choice) 1 medium onion
1 tbsp green onion Pinch of fresh herbs
Prep-time 20 Min. Cooking time 25 Min.
Method:
Preheat oven to 350°F then grease a 9 x 9 inch pan or 6 small serving dishes. Start the boil on 4 cups of water with a pinch of sea salt, add your cod fillets, let boil for about 5 to 10 minutes, then drain.
In a medium saucepan, melt 3 tbsp of butter and 1 tbsp olive oil then add 1 medium chopped onion and let it fry until soft.
Remove saucepan from heat, add your 6 tbsp of flour and 2 cups of milk, return to heat and continue cooking until your sauce has thickened then season with sea salt and freshly grated black pepper. Add more milk or liquid from the cooked cod if needed.
Return to your boiled cod, put cod in dish flake apart, remove any hidden bones, then equally portion your cod into 6 small individual baking dishes or one 9 x 9 pan, pour your sauce over each one and mix it through.
Top with shredded cheese of your choice and a pinch of sea salt and freshly grated pepper, bake in a 350°F oven for 20 minutes or until golden brown.
When done, remove from the heat top with some green onion and fresh herbs.
Serve with steamed rice or baby spuds.
Bonita’s Tips:
Have water boiled first and then add cod it only needs to be part cooked.
Remove any hidden bones before adding it to this dish.
You can add cheese to the mixture and then top with bread crumbs to bake. Optional?

Here is the recipe in detail:
For 2 people
TOTAL TIME: 60 mins

Ingredients :
1 heart of cod fillet of 500 g
3 carrots
125 g button mushrooms
60 g butter
20 g flour
25 cl whole milk
100 g grated Emmental cheese
1 lemon
8 sprigs of flat-leaf parsley
Nutmeg, salt, ground white pepper
Step 1: Prepare the béchamel: melt 20 g of butter in a saucepan, add the flour until the mixture foams.
Moisten with the milk, grate a little nutmeg, salt and pepper. Cook until thickened, stirring constantly.
Step 2: Remove from the heat then add the grated Emmental cheese.
Preheat your oven to 210°C (th. 7) and butter an oven dish.
Step 3: Remove the stems from the mushrooms, clean them and cut them into strips.
Throw them in a saucepan with 20 g of butter and the lemon juice.
Step 4: Steam them covered for 10 minutes, then add them with the bechamel cooking juices.
Chop the parsley. Peel the carrots and cut them into small chunks.
Step 5: Wash and pat dry the fish, then season with salt and pepper. Place it in the dish.
Add the carrots, coat with sauce and sprinkle with knobs of butter. Bake for 30 mins.
Step 6: Tip: Serve hot. You can replace carrots with celery.
