INGREDIENTS
• 1 (14-ounce) can sweetened condensed milk
• 1 teaspoon vanilla extract
• 1/4 teaspoon salt
• 2 cups confectioners' sugar
• 4 cups (14 ounces) shredded, sweetened coconut
• 3/4 cup whole almonds, toasted
• 24 ounces milk or dark chocolate candy melts (I used Ghirardelli)

Hey friends, today I'm sharing how to make coconut joys with almonds, it's one of my all-time favorite homemade candy recipes! This is a no-bake recipe that comes together in snap! I've been known to whip these up for other occasions, but these are a Christmas-y treat to me and they are a holiday tradition for us. If you are a fan of candy such as Mounds and Almond Joy bars, you've got to try this simple treat. Coconut Joys
Who wants to make the house even more stuffy with a hot oven? Not me! I wanted to find a sweet that I could whip up with ingredients I had on hand and that didn't require baking...so Ta-da! Here are some great Coconut Joys! Super easy and so gooood! Give them a try and let me know what you think!

Here is how to make them!
Coconut Joys
1 1/2 c. flaked coconut
1 c. powdered sugar
1/4 c. butter, melted {I used less}
1 oz. milk chocolate, melted
2 Tbsp. chopped pecans
Mix the coconut, powdered sugar and melted butter. Roll into 1 in. balls. Use the end of a wooden spoon to make an indentation.. Fill with melted chocolate, sprinkle with nuts. Store in refrigerator. Bring to room temperature before serving.

Here is a delicious candy just like a Mounds bar in bite size form.
Double everything for the full recipe as in this video I make half the recipe.
Also the recipe called for Semi-sweet Chocolate chips but I'm a fan of milk chocolate so that is what I used.
Ingredients:
1/4 C salted butter
1 C powdered sugar, sifted
1 1/2 C coconut flakes, unsweetened
1 C milk chocolate chips, or semi-sweet
Melt the butter in the microwave.
Combine butter, sugar, and coconut. Mix well.
Form into 3/4 balls and place on baking sheet pan.
Place in freezer for 20 minutes.
Melt chocolate in microwave. Roll the chilled balls in the chocolate and place on wax paper lined pan. Place in freezer for a few minutes to set.
Enjoy. These are addictive.
Recipe claims the full recipe with make about 3 1/2 dozen.
To achieve this, make them fairly small as the size I made them, would have made a little over 2 dozen.

Ingredients
1 14 oz bag sweetened coconut flakes
2 cups semi-sweet chocolate chips
⅔ cup chopped lightly salted almonds
1 14 oz can sweetened condensed milk
Instructions
Preheat the oven to 325F.
Line a large baking sheet with parchment paper and set aside.
In a large bowl combine coconut, chocolate chips, almonds, and sweetened condensed milk.
Stir until combined.
Scoop out dough with a cookie scoop onto prepared baking sheet.
Moisten the tips of your fingers with water and shape into discs. Pat the tops flat.
Bake cookies for 12 to 14 minutes or until tips of coconut are just starting to turn golden brown.
Let cool on baking sheet.
Store cookies in an airtight container.
Almond Joys - Rihana Cary
Ingredients:
1 cup unsweetened coconut
1/2 cup coconut oil
1/4 cup coconut milk
1/4 cocoa powder
1/4 cup chocolate protein powder
2 T honey
12 almonds
mix together coconut flakes, coconut milk, and 1T of honey together and set aside
in a separate bowl mix melted coconut oil, 2T honey, 1/4 cup cocoa powder, 1/4 cup chocolate protein together
in a silicone baking mat scope 1/2t of chocolate mix into the bottoms of the dish, fill with 1/4t coconut mixture, and almonds, the cover with chocolate mixture
freeze for 45 minutes, then remove from baking mat and enjoy! keep these in the freezer :)
