How To make Cliff's Pizza Topping
1 lg Bell pepper, green, chopped
1 lg Bell pepper, red, chopped
1 md Onion, chopped
1 lg Tomato, sliced into rounds
1 c Mozzarella cheese, shredded
(Use more or less to taste)
Sprinkle cheese on rolled out pizza pie (1/2 recipe of Marty's pizza dough). Tope with chopped peppers and onions, cover with round tomato slices. Sprinkle with salt and pepper. Cook for about 20 to 25 minutes on 450 degrees, or until crust is brown and cheese
melted. (I omit pizza sauce for this one. If you've never tried it... try it just once, you might be surprised how good it is without sauce. Make sure the pizza is completely covered with vegetables, sometimes I use very finely chopped broccoli with this as well, and if I feel adventurous, jalapeno peppers).

Ingredients for Pasta Con Sarde:
1 lb. Bucatini or Perciatelli Pasta
1 fennel bulb, green part only
1 can CUOCO Seasoning for Pasta con Sarde (Macaroni with Sardines)
1/2 cup Extra Virgin Olive oil
2-4 cloves of garlic, chopped
6-8 anchovy fillets
1/2 cup raisins
1/2 cup pine nuts
Toasted Bread Crumbs
1 cup unseasoned bread crumbs
3 Tablespoons Extra Virgin Olive Oil
Orange and Fennel Salad:
1/2 fennel bulb
2-4 oranges
1/8 - 1/4 cup Extra Virgin Olive oil
1/2-1 teaspoon salt
Hot red pepper flakes to taste

Pasta Alla Norma | Kitchen on the Cliff with Giovanna Bellia LaMarca
Our family celebrates the November 3rd birthday of the famous Sicilian Bel Canto Composer Vincenzo Bellini with Pasta alla Norma, named for his renowned opera, Norma. Enjoy this delectable dish and make it often!
Ingredients
2 large or 3 medium eggplants, sliced
Salt as needed
1-2 cups canola oil for frying
Spicy Tomato Sauce
1/4 cup extra virgin olive oil
1 onion, chopped
1/2 tsp peperoncino, hot red pepper flakes, or more to taste
28 oz can Italian peeled tomatoes
1 tablespoon sugar
1/2 tsp nutmeg
1/2 tsp allspice
1/4 tsp ground cloves
1 tablespoon fennel seeds
1 tablespoon capers in salt, rinsed
salt to taste
1 lb perciatelli or bucatini pasta
Ricotta salata*
*To make this dish vegan, either omit the cheese, or add your favorite vegan cheese. Using a cheese grater, shred some Violife Just Like Feta over the pasta for a similar taste and texture as the ricotta salata.

Struffoli are small deep-fried balls of dough, coated in warm honey and generally enjoyed during the holiday season. They make any occasion festive and fun!
Dough Recipe:
3 cups flour
4 eggs
pinch of salt
Few teaspoons of olive oil quanto basta
Optional: Grated zest of one orange
3 cups canola or other vegetable oil for frying
Glaze:
1 cup honey
1/4 cup sugar
1/4 cup orange blossom water or orange juice
Grated zest of one orange
Colored sprinkles
Optional: red and green candied cherries
