Hello, I'm Chris Brooks, Development Chef at OAL and today I'm going to show you how we can cook a delicious pizza topping sauce with Steam Infusion. Manufacturers want to cook pizza sauce with Steam Infusion because the fast process enhances fresh oregano flavours, cooks without burn on so it's easy to clean and it's more energy efficient. With Steam Infusion, we're cooking from the centre of your vessel. The lance mounted Vaction pump rapidly heat, mixes and pumps at the same time. Just look at the turbulence in that vessel. Here's how we use the unique processing conditions to cook pizza sauce. Just like you do now, we're going to add all our ingredients apart from the starch slurry into the vessel. Some flour, oil, garlic, onion, lemon juice, tomato puree, herbs and spices. We're now going to turn the Steam Infusion lance on and start to heat and mix the product. Unlike a traditional steam jacket, we're heating from the centre and don't expose the ingredients to excess temperature. If you think about your traditional steam jacketed pan, ingredients can see temperatures in excess of 130 degrees C and hence the problems of burn on on the surface. The partial vacuum generated in the Steam Infusion process prevents this from occurring inhibiting Maillard reactions. It's this high-speed partial vacuum that pumps the ingredients at a rate of up to 50,000 litres per hour and helps release the flavours in the herbs and spices capturing them in the sauce and giving consumers those lovely fresh flavours. At 70 degrees, when we add our 3% starch solution, we switch to our gentle cooking mode that introduces steam slowly preserving starch integrity. So there you have it, 300kg of pizza sauce, cooked in less than 7 minutes with a Boswick of 5. FIVE Pizza Sauce Ideas that are NOT Tomato - Recipes and Example Pizzas
In this video I show you 5 different pizza sauces that DO NOT have a tomato base. I also give examples of how to use each sauce. Recipes below.
Poolish Dough Recipe -
Pickle Pizza Recipe -
Honey-Chipotle BBQ:
In a small sauce pan add:
1/2 cup tomato paste
1/2 cup ketchup
¼ cup apple cider vinegar
½ cup brown sugar
1 chipotle pepper in adobo sauce
1 teaspoon additional adobo sauce
2 Tablespoons honey
1 teaspoon salt
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper
Whisk everything together and bring it up to a simmer. Chill for 24 hours.
Coconut-Curry Sauce:
In a Saute pan over medium heat add
2 tbsp olive oil
4 garlic cloves , minced
2 tsp fresh ginger , finely grated
1/2 onion , finely chopped (brown or yellow)
let that saute for a little bit then add
SPICES:
1 tbsp garam masala (Note 3)
2 tbsp curry powder (mild or spicy, your choice) (Note 4)
2 tsp cumin
1 tsp coriander powder
1 tsp paprika (sweet, or hot for spice!)
1/2 tsp turmeric
I’ll saute that for a little bit to get the spices to bloom
Then I’ll add a 16 ounce can of coconut milk and a quarter cup of tomato paste, stir everything together and bring to a simmer. Salt to taste and that’s it.
KOREAN BBQ:
In a small sauce pan add
1 cup soy sauce
¾ cup dark brown sugar
1 tablespoon Sriracha
1 tablespoon rice wine vinegar
1 ½ teaspoons black pepper
1 teaspoon grated fresh ginger
1 teaspoon sesame oil
2 tablespoons minced garlic
Whisk everything together and bring to a boil.
Then in a small bowl add a tablespoon of corn starch and a tablespoon of water, whisk it all up and then add it to your sauce.
Continue to simmer and stir for a few minutes while your sauce thickens ups.
PESTO:
In a cold food processor add
1/2 cup olive oil
3 tablespoons pinenuts
2 garlic cloves
Blend that up into a paste then add
1/2 cup parmigiano
And a 1/4 cup pecorino
Blend that until smooth then add three cups of sweet basil
Blend just until the basil is incorporated and then strain the pesto through a sieve
GARLIC CREAM SAUCE:
In a medium sauce pan
Melt 1/2 a stick salted butter
add 3 cloves chopped garlic
and 1 tablespoon flour
Brown flour then add 16 ounces heavy cream
simmer and stir until thickened
Remove from heat and add a cup of asiago
Continue to whisk until incorporated.
