✅Ingredients
MUFFINS:
• 1/2 cup salted butter, room temperature
• 1 3/4 cups all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1 cup sour cream
• 1/2 cup brown sugar
• 1/2 cup granulated sugar
• 1 teaspoon pure vanilla extract
• 2 large eggs
STREUSEL TOPPING:
• 1 cup packed brown sugar
• 1 cup all-purpose flour
• 1/2 teaspoon salt
• 1/2 teaspoon ground cinnamon
• 1/2 cup cold salted butter, cut into small pieces
✅Instructions
1️⃣ 00:41 - Preheat oven to 350 degrees F. Lightly grease a muffin tin, or line with paper cups.
2️⃣ 00:48 - In a medium bowl, prepare the streusel topping by stirring together brown sugar, flour, and salt. Use a pastry blender (or two knives) to cut the butter into the flour mixture until it resembles small pebbles or sand. Set aside.
3️⃣ 01:51 - Make your muffin batter in a mixing bowl by beating together butter, sour cream, granulated sugar, brown sugar, vanilla, and eggs using an electric hand mixer until light and creamy. Stir in flour, baking powder, and baking soda until combined.
4️⃣ 02:47 - Spoon batter into prepared muffin tin (makes 24 muffins). Sprinkle a heaping spoonful of streusel on top.
5️⃣ 03:21 - Bake in the preheated oven for about 25 minutes, until a toothpick inserted into the center comes out clean. Remove muffins from tin and transfer to a wire rack to cool completely.

INGREDIENTS
- 2 cups flour
- 1/4 cup cornstarch
- 1 1/2 cups sugar
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 8 tbsp unsalted butter, room temperature
- 1/2 cup vegetable oil
- 3 eggs
- 2 egg yolks
- 1 cup milk
- 2 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup toasted pecans, chopped
- 1/2 cup sugar
- 1 tbsp cinnamon
For the glaze:
- 1 cup sifted powdered sugar
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1-2 tbsp milk
INSTRUCTIONS
- Preheat the oven to 350°F. Grease a bundt pan with baking spray and set it aside.
- In the bowl of an electric mixer, combine the flour, cornstarch, sugar, baking powder, and salt. Mix on low speed for 30 seconds to combine. Add the room temperature butter 1 tbsp at a time and allow each piece to incorporate before adding the next, 2-3 minutes, until the mixture looks like wet sand. Add the oil and mix on low.
- In a large measuring glass, combine the eggs, yolks, milk, and vanilla extract. Whisk to combine. With the mixer on low speed, add half of the wet mixture to the mixer. Mix for 1 minute and add the sour cream. Continue to mix for 1 minute, then add the remaining milk mixture. Mix until just combined, 1 minute, and turn the mixer off.
- In a small bowl, combine 3/4 cup of toasted pecans, 1/2 cup of sugar, and the cinnamon. Stir to combine. Pour roughly 3/4 of the batter into the prepared Bundt pan. Sprinkle about 3/4 of the sugar mixture on top. Repeat with the remaining batter and sugar mixture. Use a knife inserted all the way to the bottom of the pan and make figure-eight patterns to combine the sugar and batter slightly.
- Bake in the preheated oven until the cake is golden and a skewer inserted in the middle comes out mostly clean, 45-55 minutes. Remove the cake from the oven and cool in the pan for 10 minutes. Then invert on a cooling rack for 40 minutes to finish cooling.
- While cooling, combine the powdered sugar, cinnamon, vanilla extract, and milk. Whisk until smooth and drizzle over the cooled cake. Top with the remaining nuts and serve.

This is mine and mom's version of a Cinnamon Walnut Coffee Cake. It is a more dense cake and it goes well with your morning coffee. Let me know what you think about this version and y'all enjoy.

Ingredients:
1 cup butter at room temperature
2 - 3/4 cups sugar, divided
2 teaspoons vanilla
4 eggs
3 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 coups sour cream
2 tablespoons ground cinnamon
1/2 cup chopped walnuts
In large bowl, cream the butter and the 2 sugars (2 cups white) until fluffy. Add vanilla and mix in.
Add eggs one at a time, beating well after each addition
In separate bowl combine flour baking powder, soda and salt.
Alternately add the flour mixture and sour cream to the butter/sugar mixture.
Spoon 1/3 of batter into a prepared Bundt pan.
Combine the remaining 3/4 cup sugar, cinnamon and nuts.
Sprinkle 1/3 over batter.
Repeat with the batter and sugar cinnamon mixture.
Bake in a preheated 350°F oven for 70 minutes or until cake tests done.
Cool for 10 minutes in pan before removing to a wire rack to cool completely

Serves twelve
½ cup softened, unsalted butter plus more for the pan
1 cup sugar
2 eggs -- room temperature
2 cups sifted flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups sour cream
1 teaspoon vanilla extract
½ cup dark brown sugar
1 teaspoon ground cinnamon
1 cup chopped nuts -- walnuts, hazelnuts or macadamia nuts
Heat oven to 350 degrees and prep an 11 round cake pan with butter and flour.
Mix the sifted flour, baking powder, baking soda and salt in a bowl.
In a small bowl, mix together the brown sugar, cinnamon and nuts.
Cream the butter with the sugar. Add the eggs, one at a time and beat until uniform. Add half of the flour and mix in. Add half of the sour cream and mix in. Add the remaining flour and mix in. Finally, add the remaining cream and mix in.
Place half of the cake batter into the pan and spread it out. Tap the pan on the counter. Spread half of the nuts and sugar on the batter. Add the remaining batter and spread it out. Tap the pan again and add the remaining nuts.
Bake the cake for 30 to 35 minutes -- until a cake pin or toothpick comes out clean. Cool down completely and serve. Enjoy!

Coffee Cake with a Cinnamon Sugar Ripple and Crumbly Streusel Topping
My deliriously soft coffee cake has a surprise ripple of cinnamon in the middle and a super simple streusel topping. This recipe takes just 30 minutes to prep and makes enough to feed a crowd (if you're willing to share!).
Recipe:
Ingredients
½ cup unsalted butter softened (113g)
8 oz cream cheese softened (225g)
1 cup light brown sugar tightly packed (200g)
½ cup granulated sugar (100g)
2 large eggs
1 ½ teaspoon vanilla extract
2 ½ cups all-purpose flour (335g)
2 teaspoons baking powder
1 teaspoon cornstarch
½ teaspoon salt
½ cup buttermilk (120ml)
Cinnamon Swirl
¼ cup sugar (50g)
1 ½ teaspoon cinnamon
Streusel Topping
1 ⅓ cup all-purpose flour (175g)
1 cup + 2 Tbsp brown sugar packed (225g)
3 Tablespoons granulated sugar
4 ½ teaspoons cinnamon
¼ teaspoon salt
10 Tablespoons unsalted butter melted (140g)
Glaze (optional)
½ cup powdered sugar (65g)
2-3 teaspoons milk

00:34 Preheat oven to 350F and lightly grease and flour a 13x9 baking pan.
00:38 In stand mixer, or using an electric mixer in large bowl, cream together butter and cream cheese.

Streusel
03:59 Melt butter in a medium-sized bowl on 10 second increments (stirring between) until just melted (you don't want it to be too hot, if it does get too hot allow to cool.
04:21 Use a fork to whisk together your flour, sugars, cinnamon, and salt. Pour melted butter over mixture and use a fork to stir until combined (mixture should be crumbly).
05:15 Sprinkle streusel evenly over batter.
05:24 Bake on 350F for 40-50 minutes (check doneness with a toothpick inserted in center).
05:48 Allow to cool before cutting and serving.
Glaze (optional)
05:53 If desired, make glaze by whisking together powdered sugar and milk. Drizzle over cooled coffee cake.
