How To make Cincinnati Chili/Authentic
1 quart Water
2 pounds Ground beef
4 tablespoons Chili powder
2 medium Onions -- grated
2 tablespoons Vinegar
16 ounces Tomato sauce
1 large Bay leaf
5 Whole allspice
5 Whole cloves
1/2 teaspoon Red pepper
2 teaspoons Worcestershire sauce
1 teaspoon Ground cumin seeds
1/2 ounce Bitter chocolate
1 1/2 teaspoons Salt
4 Garlic cloves
1 teaspoon Cinnamon
Add ground beef to water in 4 quart pot; stir until beef separates to fine texture. Boil slowly for 30 minutes. Add all other ingredients; stir to blend. Bring to a boil; reduce heat and simmer uncovered about 3 hours. For last hour the pot may be covered if desired consistency has been reached. Chili could be refrigerated over night so that the fat can be lifted from top before reheating and serving. Serve over cooked spaghetti, top with chopped onions, shredded cheddar cheese (either or both are optional as are the oyster crackers).

Let's make some chili!
Skyline Cincinnati Chili Recipe - Original OR Vegetarian
Here are 3 Ways to make your 3-Way Cincinnati chili, all based on the original Skyline recipe, including two VEGETARION OPTIONS, and the secret step that makes it smooth like the restaurant. If you see recipes out there that call for nonsense like nutmeg or diced tomatoes, RUN the other way. This is the real deal here.
Ingredients:
2 to 2½ Cups water (2½ Cups will make it original thin and saucy like at Skyline restaurants).
1 15 oz. can of tomato sauce
1 Tablespoon white vinegar
2 teaspoons Worcestershire sauce
1 lb. ground beef OR 1 lb. impossible burger OR 1 lb. Beyond Beef OR ¾ to 1 cup dry lentils (less for a thinner chili)
1 medium onion, finely chopped or grated
2 cloves garlic, finely minced, covered in 1 teaspoon salt and smashed to a paste
1 large bay leaf
½ oz. baking chocolate OR 1 teaspoon unsweetened cocoa powder
1 teaspoon ground cumin
½ teaspoon cinnamon
1 teaspoon powdered allspice
2 Tablespoons chili powder (chili powders vary in heat, so adjust to taste)
AND to serve:
Thin spaghetti, cooked al dente (this recipe should cover 2 pounds/8 servings)
Finely shredded MILD Cheddar cheese
Shredded onions
Red kidney beans

How To Make Cincinnati Chili
Unlike any other chili you've had, this classic Cincinnati chili recipe is thinner than traditional chilis with a deliciously unexpected spice blend that includes cinnamon, allspice and even chocolate! Use it to make Coneys or served over spaghetti with onions, cheddar cheese and kidney beans for a customary 5-Way chili.
