You’re in for a real treat with this Cincinnati Style Chili recipe, it’s really hard to beat. I love Texas chili, but this Cincinnati chili is unique in its own way, some of the untraditional ingredients in this chili takes it to a whole new level. It’s been a few years since I tasted Skyline chili for the first time, and since then I have come up with my own copycat recipe and I give it an A+. I’m sure you will love it if you give it a try. ❤️

INGREDIENTS——————————
5 C. Water
2 lbs. 85/15 ground Chuck
2 C. Finely chopped yellow Onions
3 large crushed garlic cloves
3 tsp Tomato paste
2 8oz. Cans Tomato sauce
3/4 tsp Apple cider vinegar
2 tsp Worcestershire sauce
Pepper as needed
Salt as needed
1/2 tsp ground Allspice
1/2 tsp ground Cloves
1 large Bay leaf
1 tsp Ground Cumin
1/2 tsp Cayenne pepper (optional)
1 oz. Freshly grated Unsweetened Chocolate
1/8 tsp ground Nutmeg
2 tsp Ground cinnamon (add last)
1 tsp Onion powder
1 tsp Garlic powder
3 Tbsp Chili powder (try Gebhardt's chili powder if you don't have homemade)
1 tsp Paprika
OTHER INGREDIENTS AND TOPPERS——————
Cooked Spaghetti (as needed)
Freshly grated Mild Cheddar Cheese (as needed)
Chopped Onions (as needed)
Red Kidney Beans (as needed)
Oyster Crackers (as needed)

Instant Pot Cincinnati/Skyline Chili (copycat recipe)
Instant Pot Cincinnati/Skyline Chili is a copycat recipe that is quick and easy to make in the instant pot. You can eat it as 3 way chili, 4 way by adding beans, or 5 way by adding onions on top. You put it over spaghetti noodles or on a hotdog to make chili dogs or coney dogs. This is an awesome recipe sure to please your taste buds.
Cincinnati Chili
2 Pounds 93% ground sirloin (raw)
1 Quart + 1 Cup tomato juice (5 cups)
1 Teaspoon cinnamon
1 Large peeled whole onion (I used a large diced onion)
2 Dashes Worcestershire sauce
1/8 Teaspoon. garlic powder
1 Teaspoon allspice
4 Tablespoons chili powder
1 Teaspoon pepper
1 Tablespoon salt
1 Teaspoon vinegar
5 Bay leaves
1 Teaspoon cumin
Combine all ingredients in the instant pot. Stir to make sure it is evenly combined.
I add the bay leaves after I stir, it's easier to mix it well. Add the onion last if you are going to use a whole onion.
Make sure to break up the meat as you mix.
Cook on manual high or pressure cook high for 12 minutes and allow it to do a self release. It took about 18 minutes to self release.
Remove onion (if you used a whole one) and bay leaves.
May be served over spaghetti noodles and sprinkled with shredded sharp Cheddar Cheese. Add what ever you like. Beans, chopped onions, etc.. Can also be served over Hot dogs on bun for Coney Islands.

Ingredients:
2 lbs ground beef (Or Ground turkey + 1Tbls olive oil for healthier option )
2 cups chopped onions
4 cups beef stock
1 (15oz) can tomato sauce
2 -3 tablespoons chili powder
2 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce
2 3/4 tablespoons cocoa
2 teaspoons instant minced garlic
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon ground allspice

Cincinnati Style Skyline Chili
Cincinnati chili (or Cincinnati-style chili) is a Mediterranean-spiced meat sauce used as a topping for spaghetti or hot dogs (coneys); both dishes were developed by immigrant restaurateurs in the 1920s. In 2013, Smithsonian named it one of the 20 Most Iconic Foods in America. Its name evokes comparison to chili con carne, but the two are dissimilar in consistency, flavor, and serving method; Cincinnati chili more closely resembles Greek pasta sauces and spiced-meat hot dog topping sauces seen in other parts of the United States.

Ingredients include ground beef, water or stock, tomato paste, spices such as cinnamon, nutmeg, allspice, clove, cumin, chili powder, bay leaf, and in some home recipes unsweetened dark chocolate in a soupy consistency. Customary toppings include cheddar cheese, onions, and beans; specific combinations of toppings are known as ways. The most popular order is a 'three-way', which adds shredded cheese to the chili-topped spaghetti (a 'two-way'), while a 'four-way' or 'five-way' adds onions and/or beans before topping with the cheese. Ways are often served with oyster crackers and a mild hot sauce. Cincinnati chili is almost never served or eaten by the bowl.
While served in many local restaurants, it is most often associated with the over 250 independent and chain chili parlors (restaurants specializing in Cincinnati chili) found throughout greater Cincinnati with franchise locations throughout Ohio and in Kentucky, Indiana, Florida, and the Middle East. The dish is the Cincinnati area's best-known regional food.

Origins and history
Cincinnati chili originated with immigrant restaurateurs who were trying to expand their customer base by moving beyond narrowly ethnic styles of cuisine. Tom and John Kiradjieff emigrated from the village of Hrupishta (today's Argos Orestiko), fleeing ethnic rivalries and bigotry in the fallout from the Balkan Wars and World War I, in 1921. They began serving a stew with traditional Mediterranean spices as a topping for hot dogs which they called coneys in 1922 at their hot dog stand located next to a burlesque theater called the Empress, which they named their business after. Tom Kiradjieff used the sauce to modify a traditional dish, speculated to have been pastitsio, moussaka or saltsa kima to come up with a dish he called chili spaghetti. He first developed a recipe calling for the spaghetti to be cooked in the chili but changed his method in response to customer requests and began serving the sauce as a topping, eventually adding grated cheese as a topping for both the chili spaghetti and the coneys, also in response to customer requests.
To make ordering more efficient, the brothers created the way system of ordering. The style has since been copied and modified by many other restaurant proprietors, often Greek and Macedonian immigrants who had worked at Empress restaurants before leaving to open their own chili parlors, often following the business model to the point of locating their restaurants adjacent to theaters.
Besides Empress, Skyline, and Gold Star, there are also smaller chains such as Dixie Chili and Deli and numerous independents including the acclaimed Camp Washington Chili.
