How to Make Christmas Mince Pies #shorts
Food52 Resident Yi Jun Loh (@jun.and.tonic on Instagram) shares his recipe for Christmas mince pies. He adds beef as a completely optional ingredient along with a number of dried fruits including raisins, currants, figs, apricots, cranberries, and more! GET ORIGINAL THE RECIPE ►►
PREP TIME: 1 hour
COOK TIME: 40 minutes
MAKES: 2 dozen mini pies
INGREDIENTS
3 cups dried fruit (I use 50g, around 1/3 cup, each of dark raisins, golden raisins, currants, figs, apricots, cranberries, blueberries, mulberries, and cherries, but most combinations will work well)
25 grams candied ginger
1 apple, peeled and sliced into 1/2-inch cubes (Braeburn or Granny Smith work well)
1 orange, zested and juiced
1 cup (240ml) port (can be substituted with red wine)
1/2 stick (60g) butter
1/3 cup (70g) dark brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 salt
1/4 cup (60ml) brandy or cognac
Your favorite pie dough recipe (I used Stella Parks' No-Stress, Super-Flaky Pie Crust x2)
1 egg, whisked together with one tablespoon water (for egg wash)

Amazing Creamy Turkey Pie Recipe
This will be the best turkey pie recipe you will ever taste. If you have any turkey, ham or chicken leftovers, then this recipe is for you. If you don’t, it’s still well worth making. There’s something amazing and homely about a flaky buttery home made savoury pie. You can cut corners if you buy the pie crust already made plus if you’re using turkey or roast chicken leftovers. For this pie, I used a 9 inch non stick cake pan. If you can make the turkey stock yourself, it’s well worth it, but otherwise you can use any chicken stock. See my recipe for the pie crust, you will need one and a half the quantities so you have enough to cover. Enjoy my turkey pie! Happy Baking!
