Mamaw’s Old-Timey Fudge
3 cups sugar
2/3 cups Hershey cocoa
1/8 teaspoon salt
12 ounce can evaporated milk
1/4 cup (4 Tablespoons) butter
1 teaspoon vanilla
1/2 cup pecan pieces, optional
Line an 8x8 inch dish (or smaller) with foil and butter the foil. Set aside.
In a large heavy - bottomed sauce pan (at least 3 quarts), whisk together the sugar, cocoa, and salt. Using a wooden spoon, stir in the evaporated milk and turn the heat on medium high.
Once the sugar and cocoa have dissolved, put a candy thermometer in the candy and begin boiling the mixture. Once it comes to a boil, stop stirring! Reduce the heat to medium and let it gently boil until it reaches 235°. This will take approximately 12 to 13 minutes. 
When it reaches 235°, add the better and vanilla without stirring and remove it from the heat. Do not stir! Allow it to sit undisturbed until the temperature drops to 115°. Then add nut if you were adding them. Beat the fudge with your wooden spoon for 2 to 3 minutes or until it loses its glossiness. As soon as the shine disappears, pour it immediately into your foil lined 8 x 8” dish (or smaller if you want thicker fudge) and gently spread it. Allow it to cool completely and harden. Cut with a sharp knife.

White Christmas Fudge
With pistachio, apricot and cranberry, this white Christmas fudge (recipe below) is the perfect sweet treat to share this festive season.

White Christmas Fudge
Makes 24 pieces Prep 10 mins (+ chilling time) Cooking 10 mins
375g white chocolate buttons
297g can Coles Sweetened Condensed Milk
80g pkt Coles Pistachios
½ cup (75g) dried apricots, thinly sliced
½ cup (65g) dried cranberries
1. Grease a 19cm x 29cm (base measurement) slice pan and line with baking paper. Reserve 25g of the white chocolate. Place the condensed milk and remaining white chocolate in a medium saucepan over medium-low heat. Cook, stirring, for 8 mins or until chocolate melts and mixture is smooth. Remove from heat. Stir in pistachios, apricot and cranberries. Pour into the prepared pan. Place in the fridge overnight or until firm.
2. Place the reserved chocolate in a microwave-safe bowl. Cook on high, stirring every 30 secs, until melted. Drizzle over the fudge. Set aside until set. Store in an airtight container at room temperature for up to 3 weeks.

The holidays are the perfect time to indulge in extra sweetness and I have the most perfect Christmas fudge recipe for you. It is the perfect combination of sugar cookies and fudge, one bite of this and you'll go in for more. There are only 3 simple ingredients, 4 if you are add the sprinkles to make it extra special. It comes together in no time at all, the hardest part is waiting for the fudge to cool off and harden so you can cut it up and enjoy. You can also change it up by skipping the sprinkles and adding your favorite nuts, I personally haven't tried that but I will next time I made this recipe.

SUGAR COOKIE CHRISTMAS FUDGE
24 oz bags white chocolate chips
1 1/4 cup sugar cookie mix
(1) 14 oz can of sweetened condensed milk
Christmas sprinkles (optional)
Prepare a 9×9 baking dish (I used a 8x8 for thicker fudge) with parchment paper and a thin layer of non-stick cooking spray. Set aside.
Add white chocolate chips, sugar cookie mix, and sweetened condensed milk to a saucepan. Melt over medium heat, stirring frequently until smooth.
Once mixture has melted, add about 1/2 a cup of Christmas sprinkles.
Pour fudge mixture into the prepared dish and top with more sprinkles.
Place in refrigerator and allow to set overnight, or until firm. Slice into bite size pieces. Enjoy!

INGREDIENTS
1 12-ounce bag white chocolate chips about 2 cups
1 16-ounce container vanilla frosting
Red and Green gel food coloring
INSTRUCTIONS
Line an 8 x 8 casserole dish with foil. Spray with nonstick spray.
In a large microwave-safe bowl place the white chocolate chips.
Microwave on high for one minute and stir.
Add the vanilla frosting to the melted chips.
Microwave for 30 seconds and stir. Microwave at 15-second intervals until you achieve melted and smooth mixture.
Measure out ¾ cup of the mixture into two different bowls and leave the remaining mixture in the original bowl. The original bowl will stay white.
Tint each ¾ cup bowl full of fudge with red coloring and green coloring to the desired depth of color.
Drop big tablespoons of each color into the foiled pan in random patterns. Then take a table knife and run it through the fudge to create a marbled design.
Refrigerate uncovered until set at least an hour.
Remove the fudge from the pan and peel the foil back. Cut into squares to serve!

These are 3 of my very favorite fudge recipes! They are easy and no fail and make a perfect gift. Creamy fudge is the best way to show someone you love them at Christmas.
Peanut Butter Fudge
2 cups sugar
1/2 cup milk
1 1/3 cup peanut butter
1 (7 oz.) jar marshmallow creme
Instructions
In a sauce pot bring sugar and milk to a boil and boil for 3 minutes. Mix in peanut butter and marshmallow creme. Stir until smooth and creamy. Pour into a 8 x 8 square pan, lined with parchment paper and aluminum foil. Once set cut into squares.
Chocolate Fudge
1 (7 oz.) jar marshmallow creme
1 1/2 cups sugar
2/3 cup evaporated milk
1/4 cup butter
1/4 tsp salt
2 cups milk chocolate chips
1 cup semisweet chocolate chips
1/2 cup chopped nuts
1 tsp vanilla extract
Instructions
In a large sauce pot over medium heat, combine marshmallow creme, sugar, evaporated milk, butter, and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly. Remove from heat and add vanilla, chocolate chips, and nuts. Stir until smooth. Pour into a 8 x 8 square pan, lined with parchment paper and aluminum foil. Once set cut into squares.
Oreo Fudge
3 cups sugar
3/4 cup (1 1/2 sticks) butter
2/3 cup evaporated milk
2 cups white chocolate chips (12 oz. pkg.)
1 (7 oz.) jar of marshmallow creme
1 1/2 cup finely crushed oreo cookies
1 tsp vanilla extract
Instructions
In a large sauce pot, over medium heat, combine sugar, butter, and evaporated milk. Bring to a full boil, stirring constantly. Boil, for 3 minutes. Remove heat and add white chocolate chips, marshmallow creme, vanilla, and 1 cup of crushed oreo cookies. Stir until smooth. Pour into a 8x8 square pan, lined with parchment paper or aluminum foil. Sprinkle with 1/2 cup of crushed oreo cookies over top. Once set cut into squares.
