White Christmas Fudge
With pistachio, apricot and cranberry, this white Christmas fudge (recipe below) is the perfect sweet treat to share this festive season.

White Christmas Fudge
Makes 24 pieces Prep 10 mins (+ chilling time) Cooking 10 mins
375g white chocolate buttons
297g can Coles Sweetened Condensed Milk
80g pkt Coles Pistachios
½ cup (75g) dried apricots, thinly sliced
½ cup (65g) dried cranberries
1. Grease a 19cm x 29cm (base measurement) slice pan and line with baking paper. Reserve 25g of the white chocolate. Place the condensed milk and remaining white chocolate in a medium saucepan over medium-low heat. Cook, stirring, for 8 mins or until chocolate melts and mixture is smooth. Remove from heat. Stir in pistachios, apricot and cranberries. Pour into the prepared pan. Place in the fridge overnight or until firm.
2. Place the reserved chocolate in a microwave-safe bowl. Cook on high, stirring every 30 secs, until melted. Drizzle over the fudge. Set aside until set. Store in an airtight container at room temperature for up to 3 weeks.

Easy Fudge Base:
2 cups white chocolate chips
2/3 cups sweetened condensed milk
Place in microwave safe mixing bowl, heat for 20 seconds, stir, and repeat until completely melted and thoroughly combined. Place fudge in 9x9 pan lined with parchment paper and sprayed lightly with non-stick spray. Refrigerate fudge for 4 hr to overnight. Cut into squares and enjoy!
Gingerbread Fudge
Make fudge base then add
1 TBSP molasses
1/2 tsp each of nutmeg, ginger, cinnamon
Christmas Sugar Cookie Fudge
Make fudge base, then add
2/3 cup sugar cookie mix
Sprinkles to your hearts content!
Grinch Fudge
Make fudge base, then add
pinch of salt
green food coloring until desired color
red heart sprinkles OR red cookie icing
Peppermint Fudge
In a food processor, crush 12-13 oreos, no need to remove the cream
add 2 TPSB melted butter to crushed cookies. Combine and press into bottom of 9x9 pan. Then you can either freeze for 10 min, or bake on 350 F for 8 min. Once cooled make fudge base , adding 1/4 tsp peppermint extract if desired, then put on top of crust. Top with crushed peppermint. Refrigerate fudge for 4 hr to over night.

The holidays are the perfect time to indulge in extra sweetness and I have the most perfect Christmas fudge recipe for you. It is the perfect combination of sugar cookies and fudge, one bite of this and you'll go in for more. There are only 3 simple ingredients, 4 if you are add the sprinkles to make it extra special. It comes together in no time at all, the hardest part is waiting for the fudge to cool off and harden so you can cut it up and enjoy. You can also change it up by skipping the sprinkles and adding your favorite nuts, I personally haven't tried that but I will next time I made this recipe.

Coconut Oil Cooking Spray:
SUGAR COOKIE CHRISTMAS FUDGE
24 oz bags white chocolate chips
1 1/4 cup sugar cookie mix
(1) 14 oz can of sweetened condensed milk
Christmas sprinkles (optional)
Prepare a 9×9 baking dish (I used a 8x8 for thicker fudge) with parchment paper and a thin layer of non-stick cooking spray. Set aside.
Add white chocolate chips, sugar cookie mix, and sweetened condensed milk to a saucepan. Melt over medium heat, stirring frequently until smooth.
Once mixture has melted, add about 1/2 a cup of Christmas sprinkles.
Pour fudge mixture into the prepared dish and top with more sprinkles.
Place in refrigerator and allow to set overnight, or until firm. Slice into bite size pieces. Enjoy!
