- 1/2 cup confectioners' sugar (65 gr)

- 1/2 cup finely chopped chocolate (40 gr ruby chocolate + 35 gr dark chocolate)

I tasted the Honolulu Cookies Company’s Mini Bites Chocolate Chip Macadamia Premium Shortbread Cookies I bought from Costco and I fell in love with its tastes. I wanted to make a homemade version of these cookies. In this recipe, I achieve a pretty similar taste and I really enjoyed eating them! I wanted to share this recipe so that you can also enjoy the homemade Premium Shortbread Cookies at home as well.

255g (1 cup + 2 tbsp) Unsalted Butter (room temperature) -
3g (1/2 tsp) Salt -
3g (1/2 tsp) Sea Salt -
100g (1/2 cup) White Sugar -
55g (1/4 cup) Brown Sugar -

These easy six-ingredient Cranberry White Chocolate Shortbread Cookies is a fantastic holiday cookie!
Makes: 40 cookies
Prep: 20 minutes
Cook: 15 minutes
✨INGREDIENTS
1 cup (227g) salted butter, softened
3/4 cup (90g) powdered sugar
1 teaspoon vanilla extract
2 cups (282g) all-purpose flour (I use King Arthur)
1 cup (128g) dried cranberries, finely chopped
6 ounces (170g) white chocolate bar, chopped
✨INSTRUCTIONS
Using an electric mixer on medium speed, beat butter, powdered sugar, and vanilla extract in a large bowl until it just becomes light and fluffy, about 1 minute.
Add flour, cranberry, and white chocolate. On low speed, beat until the dough just starts to come together, about 3 minutes.
Turn dough out onto a lightly floured surface and press together to form a log. Divide the dough in half and form each piece of dough into a 7-inch log. Wrap in parchment paper and chill for at least 2 hours, up to two days.
Preheat oven to 350 degrees and line two baking sheets with parchment paper.
Slice each log into 1/4-3/4 inch slices and evenly space on the baking sheets. You should have about 40 cookies.
Bake until the bottom edges of the cookies just start to brown, 14-16 minutes.
Allow cookies to cool and serve!

Salted Chocolate Chunk Shortbread Cookies
Shortbread-style chocolate chip cookies that are buttery, sweet, and salty with delicious crunchy edges. These are easy, slice-and-bake cookies that you can make ahead and bake in less than 15 minutes.
A recipe adapted from Alison Roman's Dining In cookbook, these internet-famous chocolate chip cookies are the best – tender with the crumbly texture of a classic shortbread cookie and the goodness of a chocolate chip cookie we love plus lots of salt for a beautiful contrast.
Equipment
Hand mixer, stand mixer fitted with a paddle attachment or food processor
Baking sheet(s)
Ingredients
1 cup plus 2 tablespoons (2¼ sticks) salted butter cut up & softened to room temperature (see note)
½ cup granulated sugar
¼ cup light brown sugar sub: dark brown sugar
1 teaspoon vanilla extract
2¼ cups all-purpose flour
6 ounces dark chocolate chopped into small chunks (see note)
1 egg lightly beaten (see note)
½ cup turbinado sugar for rolling (see note)
1 teaspoon flaky salt for sprinkling
Instructions
1. Cream butter, granulated sugar, light brown sugar, and vanilla extract over medium-high speed until light (pale yellow) and fluffy, about 3 minutes. Scrape down the sides of the bowl as needed.
2. On low speed, slowly add flour and chocolate. Mix until just combined.
3. Place the dough on a clean work surface and divide it in half.
4. Wrap each half in plastic and roll it on the counter to form a log. It should be about 6 inches long and 2 inches in diameter.
5. Refrigerate the dough for at least 2 hours or until firm. You can also freeze it for about 30 minutes.
6. Brush the egg on the outside of the log and roll it in turbinado sugar.
7. Using a sharp knife, carefully slice the log into ½-inch thick rounds. Press them back together if they break apart.
8. Arrange them about an inch apart on a baking sheet lined with parchment paper. You will need a baking sheet for each log. Sprinkle them with flaky salt.
9. Bake in a preheated oven of 350° F (177° C) for 12 to 14 minutes until the edges start to brown. Let them cool on the baking sheet.

This year we are ringing in the new year with warm tea, jam-filled thumbprint cookies and a marathon of movies. This is my happy place! I am filling these cookies up with my favourite: raspberry jam. Plus, it is the only flavour of jam I currently have in my home. But you can use any flavour jam that you like. If you are looking to lighten this recipe, you can skip the glaze entirely.
