How To make Mint Chocolate Logs
Ingredients

butter, or margarine, softened

cream cheese, fat-free, softened

egg white, whipped
1
oz
unsweetened chocolate, melted
1/2
teaspoon
vanilla
1/2
teaspoon
peppermint extract
1 1/2
cup
flour
3/4
cup
sugar
1/4
cup
almonds, finely chopped
1/2
teaspoon
baking powder
1/4
teaspoon
salt
1/2
cup
mint chocolate chips, melted
Directions:
Preheat oven at 375. In a mixing bowl, combine margarine, cream cheese, egg white, melted chocolate, vanilla, and peppermint extract. Add flour mixed with almonds, baking powder.
In another mixing bowl, combine flour, sugar, almonds, baking powder, and salt. Cover and refrigerate at least 1 hour, until firm.
Divide one fourth of dough into 12 pieces. Roll each piece into 2 1/2 inch long strip and place the strips 1 inch apart on unprepared baking sheets.
Repeat with remaining dough. Bake 8 to 10 minutes, or until edges are set.
Let cookies cool on sheets 2 minutes, then remove to a rack and let cool completely. Using a knife or a metal spatula, spread melted chocolate on one end of each log.

I had a bit of a sore throat for this video so apologies for the hoarseness (although it's perfect for singing Driving Home For Christmas). ANYWAY...this Yule Log is a light, fresh take on the usual rich and heavy logs you may be used to. And, IT'S CHRISTMAS EVE!!!

For the swiss roll sponge

a pinch of salt
100g caster sugar

For the White chocolate ganache
150g white chocolate chips
100g double cream
For the filling -

How to make Emerald marine Chocolate mint tart

I was inspired by tomei's Transparent Lemon Tart and this time it was a chocolate mint tart.
Submerged in emerald green mint jelly, the ganache is reminiscent of a coral reef.
The ganache of the coral reef is the non-slip function of the jelly.

[Ingredients and recipe]
Tart (20 cm tart)
Unsalted butter: 75g
Powdered sugar: 48g
Whole egg: 36g
A - Cake flour: 125g
A - Cocoa Powder: 16g
1. cream the butter and mix in the powdered sugar
2. beat the whole egg and whisk it together
3. add the beaten eggs in several batches to 1.
4. divide the sprinkled A's into 3 in two parts.
5. wrapped in plastic wrap and placed in the refrigerator for at least 3 hours.
6. butter the mold and put it in the refrigerator.
7. roll out the dough to a thickness of 3 mm and rest in the refrigerator for 30 minutes.
8. furthermore, after setting the mold, picket and let it rest for 30 minutes.
9. Preheat the oven to 160°C, and cook at 160°C for 35 minutes.
10. Brush the tart with the egg yolk.
11. Preheat the oven to 140°C, and cook at 140°C for 5 minutes.

1. chop the chocolate.
2. boil the cream and emulsify it with the chocolate

A - Water: 480ml
B - Agar: 20g
B - Granulated sugar: 30g
1. mix B.
2. put A in a saucepan and heat B in it.
3. melt well while heating.

EASY MINT CHOCOLATE TRIFLE: Fresh, Creamy & Delicious, Perfect Dessert for St. Patrick's Day
This Easy Mint Chocolate Trifle is so creamy and delicious, it's sure to be a hit with the whole family. And, because it's green, it's also a fun dessert to make for St. Patrick's Day. You can make it in individual glasses for single servings, or you can make it in a trifle dish. Either way, it's beautiful layers of delicious chocolate cake crumbles and fresh & sweet mint cream. Read on for the easy recipe.
Mint Chocolate Trifle
chocolate cake (baked from a box according to directions on package)
3 cups heavy whipping cream, chilled
3/4 cup powdered sugar, sifted
1/2 tsp. peppermint extract
green food coloring (approx. 10 drops)
*Garnish with fresh mint leaves and chocolate shavings or sprinkles. (optional)
Using a fork or food processor, crumble chocolate cake into small crumbs. Pour half into a glass trifle dish and spread out evenly.
Pour heavy whipping cream into a separate large bowl and beat with electric hand mixer until frothy. Add in powdered sugar and continue beating until it forms stiff peaks. (Set some of this aside, if you choose to top with a few dollops of whipped cream.) Add peppermint extract and food coloring (a few drops at a time) and continue mixing. Add more drops, if necessary, to reach desired shade of green. Pour half of the green mint cream over first layer of cake crumbs in the trifle dish, and spread evenly, making sure to reach the sides of the bowl. Add second layer of chocolate cake crumbles on top. Add another layer of mint cream and spread evenly. Top with a few dollops of whipped cream. Garnish with fresh mint leaves and chocolate shavings or sprinkles, if desired. Serve chilled & enjoy!
