Carob Oatmeal Raisin Cookies
INGREDIENTS
1 1/4 cups or 1 can of chickpeas
1/4 cup carob powder
3/4 cup water
1 cup nut or seed butter ( I used cashew butter) OR nut-free use seed butter of choice
¾ cup oats (Preferably certified glyphosate free)
1 tsp vanilla extract
½ tsp baking soda
½ tsp baking powder
1 cup (approx. 12) soft pitted Medjool dates
Pinch of salt
¾ cup raisins
INSTRUCTIONS
Preheat the oven to 350°F. Line a large cookie sheet with parchment paper.
Add the chickpeas, vanilla, water, dates and salt to a food processor and process until smooth.
Add nut or seed butter and carob powder. Continue to blend.
Once ingredients are well combined and smooth add oats, baking soda, and baking powder. Blend briefly, just till combined.
Stir in raisins. You can do this in the food processor or by hand. Scoop out the batter about 2-3 tablespoons at a time.
Bake at 350 F for 12-15 minutes until the tops are slightly golden. Let cool on the tray until just warm before removing.

1. In a bowl add 1 1/4 cup all-purpose flour, 1 tsp baking soda, 1/2 tsp salt, and 1/2 tsp cinnamon. Now whisk together and set it aside.
2. In a separate bowl add 1 cup unsalted softened butter, 3/4 cup brown sugar, 1/4 cup granulated sugar, 2 large eggs, and 1 tsp vanilla extract.
3. Using an electric hand mixer and mix that on medium speed until it’s well combined
4. Now add in the flour mixture and 2 cups rolled old-fashioned oats and blend them together using an electric hand mixer.
5. Then add 1 1/2 chocolate semisweet chocolate chips 1 cup walnuts, chopped, and Mix with a spatula.
6. Once your cookie dough is well-combined scoop out mounds of the cookie dough onto a baking sheet lined with parchment paper. You’ll want to use a medium to large cookie scoop here. Mine fits approximately 2 tablespoons.
7. You can drop the cookies directly onto the parchment paper and bake them from there or I like to roll them into balls before baking. They just look prettier that way, but that’s definitely optional. Now bake your cookies in the oven at 350 degrees Fahrenheit for about 11 minutes.

90g Unsalted Butter
75g Light Brown Sugar
50g Granulated Sugar
1 Egg
1 tsp Vanilla Extract
135g Rolled Oats
70g Plain Flour
1/2 tsp Bicarbonate of Soda
1/2 tsp Salt
1 tsp Cinnamon (more if you like cinnamon a lot) 75g Raisins

Best Oatmeal Raisin cookies recipe
Best ever!
Ingredients:
Soak 1 cup (155g) raisins in a bowl with 3 beaten eggs, 1 t Vanilla and 1 t Cinnamon for one hour.
In a separate bowl, cream 1 cup (240g) butter with 1 cup (220g) brown sugar and 1 cup (200g) white sugar.
Add 1 t salt and 2 t baking soda.
Stir in 2 1/2 cups ( 350g) flour.
Add the raisin mixture. Mix again.
Add 2 cups (200g) regular rolled oats or quick oats. If you use old fashioned oats, then “pulse” in a food processor/ blender 5-7 times for best results. Pulsing the oats will make them “finer”, therefore they will cook faster like quick oats.
Optional 3/4 cup (68g) walnuts or pecans.
Bake 350*F or 180*C
10-12 minutes
