How To make Chocolate Mayonnaise Cake w/Frosting
2 c Flour
1 c Sugar
2 tb Cocoa
2 ts Baking soda
1 c Water
1 c Mayonnaise
1 ts Vanilla extract
Brown sugar frosting: 1/4 c Butter or margarine
1/2 c Brown sugar
2 tb Milk
1 3/4 c Powdered sugar
In a large bowl, combine flour, sugar, cocoa, and baking soda. Add water, mayonnaise, and vanilla; beat at medium speed until thoroughly combined. Pour into a greased nine inch square pan or 11x7x2" pan. Bake at 350 for 30-35 minutes or until cake tests done. Cool completely before frosting. Frosting: Melt butter in a saucepan. Stir in brown sugar; cook and stir till bubbly. Remove from the heat and stir in milk. Gradually add powdered sugar; beat by hand until frosting is of spreading consistency. IMMEDIATELY frost cake, as it thickens quickly ... It is yummy!! -----

Chocolate Cake (using Mayonnaise!) with Marshmallow Frosting l Baking with Bella and Marcus
A fail-proof chocolate cake recipe. I got this recipe from my favorite baking blog of all time, Bake Happy by Aikko! When I was starting to learn how to bake (around 2013?) Bake Happy was my go-to blog. It was a gold mine of great baking recipes! It had great photos, very simple baking instructions, hacks, and tips! Unfortunately, it was already taken down (sana marevive pa huhu).
Good thing I was able to keep a copy of this recipe. If I remember correctly, Aikko got this recipe from her mom's old red baking notebook.
It's easy to do and has fewer ingredients compared to other chocolate cakes. I used this recipe countless times.
This recipe calls for a mayonnaise! Using mayo is like taking a shortcut, because you don't need to add eggs, vegetable oil, or buttermilk anymore (some common chocolate cake recipes require these ingredients). When I first tried this, I was so intrigued and also a bit worried that the taste would have a hint of mayonnaise but nope! It tasted great and it was so moist.
I highly recommend this chocolate cake recipe. It's also kid-friendly! I asked Bella and Marcus (my pamangkins!!!) to bake this chocolate cake with me for Papa's birthday.

Chocolate Cake
2 cups flour
½ cup cocoa powder
1 tsp baking soda
2 tsp baking powder
1 cup mayonnaise
1 ½ cup sugar
1 tsp vanilla extract

4 egg whites
1/2 teaspoon cream of tartar
1/2 teaspoon cornstarch
1 cup sugar
1/2 cup water

I hope my viewers have been looking to make a German Chocolate Cake from scratch. I've been wanting to make a German Chocolate Cake since forever but I always talk myself out of doing it because I thought it was going to be hard... I was so wrong... can't assume anything. LOL I hope you watching me make it, encourages you to make it... it really is pretty simple to make.
Anyway, I'll add the ingredients and measurements below along with other sweet recipes like the peanut butter cookies that my hubby is munching on!
Ingredients
Preheat oven 350°
Standard 9 baking pans
4oz Bakers German's Chocolate
1/2 cup hot water
2 sticks of room temperature butter
2 cups white sugar
1 teaspoon vanilla
1 teaspoon expresso instant coffee(in the video I add 1 teaspoon but I started adding 1 TABLESPOON) and WOW ???????????????????????????????? AMAZING
4 eggs
1 cup of butter milk or substitute sour cream and water mix or see my butter cake recipe for another substitute
2 cups of flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
FROSTING
1 stick of butter
1 cup brown sugar
1 can evaporated milk
1 teaspoon vanilla
3 egg yokes
1 cup chopped pecans
1 1/2 cups unsweetened coconut flakes
Make the FROSTING WITHOUT EGG
I actually like the frosting better this way!
1 stick of butter
1 cup brown sugar
1 teaspoon vanilla
1 can unsweetened coconut milk
3 tablespoon cornstarch add water on top of the cornstarch until it equals 1 cup
stir butter and brown sugar together just like in the video
add coconut milk and cornstarch mixture in medium low heat and consistently stir until thick
1 cup pecans
1 1/2 coconut flakes
grease and flour pan
bake cake for about 30-35 minutes

My Mama's Famous From Scratch Mayonnaise Cake W/Homemade Chocolate Icing ~ Homeschool Cooking Class
My mama was famous in these parts for her mayonnaise cake and peanut butter cake, both made completely from scratch. These cakes played a huge part in my childhood and I've loved making them for my little family through the years. When I was sitting down thinking about what I wanted to do for a video I couldn't help myself but to add Mama's cakes. Be on the lookout for her peanut butter cake video to post soon!
We love doing these homeschool cooking classes! Aiden is almost to the point to where I could stand back and let him do things on his own. This boy is so smart!
Cake Recipe:
2 cups All Purpose flour
1 cup sugar
2 tsp baking soda
1/4 cup unsweetened cocoa
1 cup mayonnaise
1 cup water
1 tsp vanilla
Heat oven to 350 degrees. Add flour, sugar, baking soda and cocoa to sifter and sift into bowl. Add mayonnaise, water and vanilla and mix until blended. Pour into prepared baking dish (I used a 9x13) and bake for 20-25 minutes (It took 28 minutes in my oven) or until a toothpick comes out clean. Let cool completely. If you're using round or square cake pans, let cool for about 10 minutes and then turn out onto cooling racks to finish cooling.
Icing Recipe:
1/2 cup unsalted butter (1 stick)
3/4 cup unsweetened cocoa
1/2 cup milk
4 cups (or 1 pound box) powdered sugar
2 tsp vanilla
Using a small pot, melt the butter over medium-low heat. When melted, add the cocoa and stir constantly until smooth. Take off heat and pour into medium mixing bowl to cool. When it's cooled for 15 minutes, add the milk and mix together until smooth. Add the powdered sugar 1 cup at a time, mixing after each. Add the vanilla and beat on high speed until smooth
