How To make Chocolate Marshmallow Fudge
1 lg Can Evaporated milk
1/4 lb Butter
4 c Sugar
2 pk Chocolate pieces ( 6 Ozs ea)
1/2 Jar marshmellow cream
Combine first three ingredients in saucepan and cook to 234 deg.F or until it forms a soft ball in cold water. Stir often. Remove from heat and fold in remaining ingredients. If desired add chopped nuts. Pour into greased 8 X 13 inch pan. Refrigerate until firm. Cut into squares.

MARSHMALLOW CHOCOLATE FUDGE
INGREDIENTS
• Chocolate chips – 4 cup [dark chocolate + milk chocolate ]
• Mini marshmallow – 4 1/2 or 5 cup or as required
• Fresh cream – 2 or 3 tbsp [ optional – I added to get soft chocolate bites ]
• Baking tin lined with parchment paper or grease generously with butter .
METHOD
Chop the marshmallow into small bits .
Melt the chocolate using double boiler method or microwave method .
Once the chocolate melts add the fresh cream .
Melt till smooth and silky
Pour a thin layer of melted chocolate over the greased tin or parchment paper .
Now spread the marshmallow evenly.
Again pour all the melted chocolate .
Gently tap it twice .
Flatten it with a greased spatula .
Cover the tin and pop it in the fridge for an hour Or in the freezer for quick setting .
Once the chocolate hardens remove it .
Run a khife around the edges to loosen the fudge .
Slice it into squares and serve .
NOTES
1. Instead of layering one by one , once you melt the chocolate add the marshmallow in the same bowl and mix well nad then layer it and set .
2. Store it in the fridge .
3. I have added little fresh cream to get a semi thin pouring consistency .
4. Instead of fresh cream ,you can use condensed milk or Nutella or butter .
5. You can also make of peanut butter .
6. You can add crispy rice also.
7. Y not add roasted and chopped dry fruits .
8. U can add few drops of vanilla essence .
9. I used only dark chocolate , u can use both the chocolates to balance the taste .
10. Use parchment paper or foil to line the tin instead of greasing .

16 ounces semi-sweet or bittersweet chocolate (bittersweet chocolate has less sugar.)
1 tsp salt
1 1/4 cups sweetened condensed milk (I make my own with less sugar)
1 tbsp vanilla extract
3 cups mini marshmallows (I use Trader Joe’s corn syrup FREE marshmallows.)

In this episode of In The Kitchen With Matt, I will show you how to make traditional fudge. This creamy old fashioned fudge recipe is so yummy. If you are a homemade fudge lover like me you have got to try this. I love all kinds of fudge, 3-ingredient microwave fudge, peanut butter fudge, cookies, and cream fudge, etc. My aunt gave this recipe to my mom in 1968, and I remember helping her make it when I was young. It is similar to a fantasy fudge. We always had it around the holidays. Creamy old fashioned fudge is more finicky than microwave fudge, but it tastes better to most people. If I can do it, you can do it. Let's get started and make some fudge from scratch!

1/2 cup of butter, salted or unsalted (113g)
1 cup mini-marshmallows or 10 large marshmallows (50 to 60g)
2/3 cup of evaporated milk (158ml)
1 cup semi-sweet chocolate chips (or use milk or dark chocolate) (170g)
