Chocolate covered cherry cookies!
Chocolate covered cherry cookies! Today is the the debut of 12 days of cookies! This is our favorite time of year and our busiest season. You want to impress your family and friends at your holiday party or dinner, bake some amazing homemade cookies that will rock your socks off and this one does that. Its pretty simple with a big payoff on taste!
½ cup butter room temp
1 cup sugar
1 large egg
1 tsp vanilla extract
1 ½ cups flour
½ cup cocoa sifted
¼ tsp salt
¼ tsp baking powder
¼ tsp baking soda
1 10-oz jar Maraschino cherries Drained, save juice( you won't use all of them)
1/2 cup milk chocolate chips
1/2 cups semi sweet chocolate chips
½ cup sweetened condensed milk
In the stand mixer or handle held mixer in a mixing bowl, cream your butter then slowly add your sugar until creamy and pale. Begin with ½ cup of butter in a mixer. Add your egg on low speed, then add in vanilla.
In a medium mixing bowl, whisk together flour, cocoa, salt, baking powder, and baking soda. Make sure there are no clumps in dry ingredients, if so, sift your ingredients.
Add dry ingredients slowly to cream the mixture. Beat on low speed until combined. The dough will somewhat dry and almost crumbly.
Make 1-inch balls out of the dough and place them on a parchment lined cookie sheet with 1 inch ice cream scoop. Roll in hands until smooth
Drain a 10 oz jar of Maraschino cherries. Preserve the juice and set aside for later. Pat cherries until completely dry. If cherries are large, cut in half.
In the microwave, place ingredients in bowl, melt, in small increments, both chocolate chips and sweetened condensed milk. Add cherry juice to thin to a spreadable consistency. You’ll need about 3 tbsp of the cherry juice.
Press a cherry into the center of each dough ball. Do not be afraid to press firmly.
Spoon 1 tsp of chocolate cherry frosting onto the top of each unbaked cookie. Place in the oven and bake for 10-12 minutes at 350 degrees The cookies will spread during baking. Serve ooey, gooey delicious y'all

Chocolate Cherry Cookies Ingredients
1 1/4 cup flour
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon kosher salt
8 tablespoons salted butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon almond extract
about 36 maraschino cherries, undrained
Chocolate Cherry Coating Ingredients
2 tablespoons maraschino cherry juice
2 tablespoons water
2 tablespoons sugar
4 oz chocolate melting wafers, or chocolate chips
Chocolate Cherry Cookies Directions
In a large bowl, measure out 1 1/4 cups flour, ½ cup cocoa powder, 1 teaspoon of baking powder and 1/2 teaspoon kosher salt. Give this a whisk to combine, and set it aside for later.
In a large bowl, add 8 tablespoons of softened butter, and use a hand or stand mixer to beat the butter for about a minute. Add 1 cup sugar and beat on medium speed for about 2 minutes until it’s light and fluffy, stopping to scrape down the sides of the bowl a few times.
Add one egg, a teaspoon of vanilla extract, and a teaspoon of almond extract, and beat on medium speed for about a minute until well blended, stopping to scrape down the sides of the bowl. Begin adding the flour mixture, start with tipping in a half and mixing.
Okay, once it’s mixed in, scrape down the bowl and add the rest of the flour. Mix just until incorporated. Take about a tablespoon of the dough and roll it between your hands to form balls that are about an inch in size. Space them on a parchment lined baking sheet, about 2 inches apart.
Use your thumb to press a small indent into the top of each cookie, you could also use a round ½ teaspoon measure. Put a maraschino cherry, cut side down, in the indent of each cookie. Don’t drain the maraschino cherries from the jar, we’re going to use the juice to make the cherry chocolate coating. Once you’ve added all the cherries, chill the cookies for an hour.
Preheat the oven to 350 degrees. Place the cookies into the 350 oven and bake for about 20 minutes, until the cookies are just set around the edges. Cool on the baking sheet for 5 minutes, then on a wire rack.
While the cookies are cooling, combine 2 tablespoons of water, 2 tablespoons of the maraschino cherry juice, and two tablespoons of sugar in a medium saucepan. Cook over medium heat, using a whisk to stir every so often. Bring the liquid to a simmer and once the sugar has dissolved, add about half of the chocolate wafers. If you don’t have chocolate wafers, you can also use chocolate chips. Stir to melt, add the rest of the chocolate, i’m using about ½ or 4 oz of chocolate. Once the chocolate has melted, remove from heat and let cool for a few minutes.
Spoon the melted cherry flavored chocolate over each cookie. Let the topping cool briefly, then add another layer of melted chocolate. I put these in the refrigerator to chill and harden the chocolate coating.

Chocolate-Covered Cherry Cookies | Baking Christmas cookies with my mom!
While these fudgy cookies are not the traditional cookie for many, they’re definitely unique! The chocolate dough on the bottom and chocolate ganache on top trap the cherry in the center of the cookie, creating a gooey, super-flavorful bite. There’s nothing more Christmas than these cookies!

INGREDIENTS
- 1/2 cup unsalted butter
- 1 cup white granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder, sifted
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 10-oz jar Maraschino cherries
- 3/4 cup semi-sweet chocolate chips
- 3/4 cup heavy cream
INSTRUCTIONS
- Preheat the oven to 350°F.
- In a large bowl, cream the butter and sugar. The mixture will be light and fluffy and well combined. Mix in the egg and vanilla extract until it is smooth.
- To the wet ingredients, slowly add the flour, cocoa, baking powder, baking soda, and salt. Beat until combined. The dough will be dry and almost crumbly.
- Using a cookie scoop, make 1-inch balls out of the dough, roll them in sanding or white granulated sugar, and place them on a parchment-lined cookie sheet.
- Drain one 10-ounce jar of Maraschino cherries. Reserve the juice and set it aside for later. Pat cherries until very dry. If cherries are extra-large, cut them in half. Press a cherry into the center of each dough ball. Do not be afraid to press firmly.
- Place in the preheated 350°F oven and bake until the cookies are set, 10-12 minutes. Once the cookies are baked, remove them from the oven. Allow the cookies to cool for 5 minutes and then frost while warm.
- While the cookies are baking, heat the heavy cream until it begins to simmer. Once it is simmering, pour the cream over the chocolate chips. Allow the cream to melt the chocolate for 3 to 5 minutes. Once the chocolate is melting, slowly stir the mixture until it is smooth. Once the chocolate is smooth, add 1 tbsp of the reserved cherry juice.
- Once the ganache has cooled slightly and thickened, spoon 1 to 2 teaspoons of frosting onto the top of each baked warm cookie, covering the cherry. Sprinkle with sugar or decoration, if desired.
