How To make Ritzy Chocolate Covered Nuts
CANDY:
2 c Almond slivers
1 c Sugar
1/3 c Water (or less)
TOPPING:
12 oz Chocolate (can use
-chips, but if they -have a gray bloom, -they might not melt) In a heavy sauce pan, boil almond slivers, sugar and water over low to medium heat until all the water is gone and the sugar crystallizes on the peanuts. Pour almond slivers out onto a well-greased baking sheet. Separate clumps with a greased fork. Bake in a preheated 350 degree F. oven about 15 minutes. Be careful not to burn. Melt chocolate over low heat with constant stirring. When candied almonds have cooled, dip into melted chocolate. Place on foil to set. were inspired by a presentation Shirley attended at a cooking schools convention at the Ritz Carlton. They are basically the same recipe Paula Murphy uses for candied peanuts; she uses raw, Spanish peanuts instead of almonds, and she doesn't coat them with chocolate.

Macadamia Nut Clusters/Bark Recipe
Ingredients:
4 ounces keto-friendly chocolate (75-90% dark chocolate)
2/3-2 cups roasted unsalted macadamia nuts (based on your own preference)
Instructions:
Simmer a pot of water. Place a glass bowl on top of the pot, with the bottom of the bowl a few inches above the simmering water. Chop the chocolate into small pieces and melt them in the glass bowl, stirring with a spatula. Add macadamia nuts into the bowl of melted chocolate, and stir until everything is covered in chocolate.
Scoop the chocolate-covered nut clusters onto parchment paper using a teaspoon. Sprinkle sea salt on top, if desired. Refrigerate until hardened.
Or, if you’d like to make bark, pour the entire chocolate-nut mix onto a parchment paper-lined plate or sheet pan. Sprinkle sea salt on top, if desired.
Refrigerate clusters or barks until hardened. Use your hands to break up the hardened bark into smaller pieces—and enjoy!

CHOCOLATE COVERED PEANUT CLUSTERS
Chocolate Covered Peanut Clusters
48 ounces Chocolate Bark
24 ounces Semi-Sweet Chocolate Chips
2 tablespoons Coconut Shortening or Vegetable Shortening
4 pounds Salted Cocktail Style or Dry Roasted Peanuts
Melt chocolates with the coconut shortening in a double boiler until smooth. Pour in the peanuts and scoop out onto baking sheets lines with waxed paper. I used a 2-tablespoon scoop. Let harden and pack into airtight containers. No need to refrigerate. Last at least a couple of weeks if not longer.
Rich Chocolate Cake with Chocolate and Macadamia Coating
This recipe is a classic rich dark chocolate sponge cake with crunchy chocolate macadamia coating - you can replace the macadamia with any nuts you like. I hope you enjoy this video :)

- 3 eggs
- 10g (4/5 tbsp) sugar for egg yolks
- 60g (1/3 cup) sugar for egg whites
- 60g (1/3 cup) dark chocolate chips

- 25g (1/5 cup) cake flour
- 15g (2 1/2 tbsp) almond powder
- 25g (3 1/3 tbsp) cocoa powder
Chocolate nut coating:
- 40g (1/4 cup) chopped macadamia (or preferred nuts)
- 90g (1/2 cup) dark chocolate chips
- 30g (2 1/4 tbsp) coconut oil
