Dipping Cookies, Pretzels, Cherries in Chocolate
This is Part ONE in a 2 part video series on dipping big chunky pretzels, Oreo (r) cookies and wonderful red maraschino cherries. The key to a super tasty treat is to use REAL CHOCOLATE. Real chocolate requires TEMPERING but once you master that simple technique the candy making world is your playground! Get creative with what you dip in chocolate and what flavor combinations you select. Double dipping cookies is an extra special treat for chocolate lovers. Use white chocolate, semi sweet-dark chocolate and of course, the American favorite, Milk chocolate. We will be using all three in this demonstration. As we advocate at the Gourmet Candy Maker.com Buy the best you can find and the best you can afford when it comes to fine, specialty candy making. It's all about the ingredients. When making fine specialty confections in your home save chocolate chips for cookies and stay away from compound coatings (summer coating) which is NOT real chocolate. We will be using white chocolate, dark chocolate and milk chocolate. These great chocolate delights can be served for dessert or added to your special gift assortments. INGREDIENTS
- 1/2 cup butter
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 1/2 cup flour
- 1/2 cup cocoa
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 10-ounce jar Maraschino cherries
- 1 cup semi-sweet chocolate chips
- 1/2 cup sweetened condensed milk
INSTRUCTIONS
Begin with 1/2 cup of butter in a mixer. Add one cup of sugar and one large egg. Mix butter, sugar, and egg until creamy. Add one teaspoon vanilla.
In a separate bowl, stir together flour, cocoa, salt, baking powder, and baking soda. Add dry ingredients slowly to cream the mixture. Beat until combined. The dough will somewhat dry and almost crumbly.
Make 1-inch balls out of the dough and place them on a cookie sheet.
Drain one 10-ounce jar of Maraschino cherries. Preserve the juice and set aside for later. Pat cherries until very dry. If cherries are extra large, cut in half.
In a microwave-safe bowl, melt, in small increments, one cup semi-sweet chocolate chips and 1/2 cup sweetened condensed milk. Add cherry juice to thin to a spreadable consistency. You’ll need about three tablespoons of the juice.
Press a cherry into the center of each dough ball. Do not be afraid to press firmly.
Place in the oven and bake for 10-12 minutes at 350 degrees. The cookies will spread out during baking
Spoon one teaspoon of frosting onto the top of each unbaked cookie. Sprinkle with sugar if desired.
Betty's Fancy Chocolate-Covered Cherry Cookies
Betty demonstrates how to make Chocolate Covered Cherry Cookies to serve at parties and get-togethers. These are great treats!
Fancy Chocolate-Covered Cherry Cookies
½ cup butter
1 cup sugar
1 egg
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
½ cup cocoa powder
¼ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon baking soda
maraschino cherries, drained (about 24—the number of cookie balls made)
1 cup semisweet chocolate chips
½ cup sweetened condensed milk
¼ teaspoon additional salt
1 ½ teaspoons maraschino cherry juice
In a large bowl, cream together butter, sugar, egg, and vanilla. Add flour, cocoa powder, ¼ teaspoon salt, baking powder, and baking soda. Blend well. Dough will be stiff. Shape into 1-inch balls. Place balls 2 inches apart on ungreased cookie sheet. Push one maraschino cherry halfway into each ball. When all cookies are shaped, prepare frosting and use immediately. For frosting, melt semisweet chocolate chips along with sweetened condensed milk, and then stir in ¼ teaspoon salt and maraschino cherry juice. Spread ½ teaspoon frosting over each cherry. Bake at 350 degrees (F) for 8 to 10 minutes. Remove from oven and let cool. Transfer to nice serving plate. Enjoy! These cookies are wonderful for a party. Love, --Betty ♥♥♥
