Chicken with Cashew Nuts | A Classic Family Meal | Easy Asian Recipes
Chicken with cashew nuts is one of the most popular Westernised Chinese dishes. It's based on a Sichuan dish called Gong bao ji ding (宫保鸡丁), which is the Chinese name for Kungpao chicken.
Quite different to a true gong bao ji ding, chicken with cashew nuts is nevertheless a great family dish. It came about as a result of ingredients being substituted to a traditional gong bao ji ding to create a dish that used ingredients commonly found in the West, and which also suited the Western palate. It uses capsicum/peppers instead of dried chilli and chicken thigh instead of chicken breast, and of course there is no Sichuan pepper to be found. It's a family favourite.

Ingredients:
-Soy sauce 2 tbs
-Water 4 tbs
-Fish sauce ½ tbs
-Dark soy sauce ½ tbs (optional)
-Oyster sauce ½ tbs
-Sugar ½ tbs
-Cooking oil 2-3 tbs
-Kaju (Cashew nuts) ¾ Cup
-Lehsan (Garlic) chopped 1 & ½ tbs
-Pyaz (Onion) sliced ½ medium
-Boneless chicken preferably thigh julienne cut 350g
-Sukhi lal mirch (Dried red chillies) 3-4
-Thai red chillies 4-5
-Hara pyaz (Spring onion) white part julienne ¼ Cup
-Shimla mirch (Capsicum) julienne ½ Cup
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp or to taste
-Hara pyaz (Spring onion) leaves julienne ¼ Cup
Directions:
-In a bowl,add soy sauce,water,fish sauce,dark soy sauce,oyster sauce,sugar,whisk well & set aside.
-In a wok,add cooking oil,cashew nuts & fry until light golden & set aside.
-In the same wok,add garlic & mix well for a minute.
-Add onion,mix well & saute until translucent.
-Add chicken & mix well until it changes color.
-Add dried red chillies,thai red chillies,spring onion white part,capsicum,salt,black pepper powder & mix well.
-Add prepared sauce,mix well & cook for 3-4 minutes then cook on high flame until it dries up.
- Add spring onion leaves,fried cashew nuts & mix well.
-Serve thai cashew chicken with fried rice!

-Pyaz dal dein aur translucent hunay kliya sauté ker lein.
-Chicken dal dein aur rang tabdeel ho janay tak ache tarhan mix ker lein.
-Dried red chillies,thai red chillies,hara pyaz white part,shimla mirch,namak ar kali mirch powder dal ker ache tarhan mix ker lein.
-Tayyar sauce dal ker ache tarhan mix karein aur 3-4 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
-Hara pyaz leaves aur fried kaju dal ker ache tarhan mix ker lein.
-Thai cashew chicken ko fried rice ka saath serve karein!

Spicy Cashew Chicken
Servings - 2 - 3
INGREDIENTS
(For Chicken Marination)
Boneless chicken - 700 grams
Kosher salt - 1/4 teaspoon
Black pepper - 1/8 teaspoon
Paprika - 1/8 teaspoon
(For Spicy Soy Sherry Sauce)
Hoisin sauce - 250 grams
Soy sauce - 80 grams
Sherry wine - 60 milliliters
Red wine vinegar - 2 tablespoons
Sriracha sauce - 1 tablespoon
Powdered sugar - 65 grams
Garlic - 45 grams
Chilli flakes - 1/4 teaspoon
(Rest of the Ingredients)
Rice flour - 135 grams
All purpose flour - 35 grams
Kosher salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Water - 330 milliliters
Rice flour - 135 grams
Baking powder - 1/8 teaspoon
Oil - 80 milliliters
Green onions - 195 grams
Cashews - 230 grams
Sesame seeds - for garnishing

PREPARATION
(For Chicken Marination)
1. In a mixing bowl, add 700 grams boneless chicken, 1/4 teaspoon kosher salt, 1/8 teaspoon black pepper, 1/8 teaspoon paprika and mix it well.
2. Marinate the chicken for 30 minutes.
(For Spicy Soy Sherry Sauce)
1. In a another mixing bowl, add all the spicy soy sherry ingredients and mix it well. Keep aside.
(Rest of the Preparation)
1. In a bowl, add 135 grams rice flour, 35 grams all purpose flour, 1/4 teaspoon kosher salt, 1/4 teaspoon black pepper, 330 milliliters water and mix it well to make a thick batter.
2. In a another bowl, add 135 grams rice flour, 1/8 teaspoon baking powder and mix it well.
3. Take the marinated chicken piece, roll it in rice flour mixture and then dip it in rice flour and all purpose flour mixture.
4. Heat 80 milliliters oil in a heavy pot, add the dipped pieces in it and cook till it turns golden brown from both sides and the chicken is cooked through.
5. Now, add 195 grams green onions, 230 grams cashews and mix it well.
6. Then, add the prepared sauce in it and mix it well.
7. Cook for 7 - 10 minutes and turn off the heat.
8. Garnish with sesame seeds and green onions.
9. Serve hot with rice.

INSTRUCTIONS
Cut 1 lb of chicken breast into bite-size pieces. You can also use chicken thigh if you want.
Marinate it with 1/3 tsp of salt and 1/3 tsp of baking soda, some white pepper to taste, 2.5 tsp of cornstarch, and 1.5 tbsp of Chinese cooking wine. Gently rub for a few minutes or until the chicken feels velvety.
In a bowl, combine the following ingredients and set it aside: 1.5 tbsp of soy sauce, 1 tbsp of oyster sauce, 1 tbsp of hoisin sauce, 1 tbsp of ketchup, 2 tbsp of water.
Turn the heat to high and heat the wok until it is smoking hot. Add some oil and toss it around to create a nonstick layer.
Add the chicken and stir for 2-3 minutes or until the chicken changes color. Turn off the heat and take the chicken out. Make sure you tilt the wok to leave the oil behind.
Turn the heat back on medium, use the remaining oil to saute the garlic, ginger, scallion, and celery. Stir over medium heat for a couple of minutes.
Pour in the sauce and introduce the chicken back into the wok. Keep mixing for another 2-3 minutes or until the chicken is cooked through; Then, add the bell pepper and the roasted cashews. Give it a final toss. That’s it, you are done.
