Creamy Gochujang Pasta (A spicy Korean cream sauce) | How to make Korean chili paste pasta
This creamy gochujang pasta takes just 15 minutes to bring together and make the most delicious and easy meal. It’s perfect to add loads of flavour to a recipe with just a few ingredients. You only need few ingredients to make this recipe, but feel free to add more vegetables such as spinach, mushrooms, edamame or baby corn to make this a more nutritious dish.
???? IMPORTANT TIPS ????
???? Add pasta water for delicious glossy pasta, add around half cup of pasta cooking water to the gochujang sauce. It’s full of starchy goodness that will give a gorgeous gloss and thickness to the sauce.
???? I have use fresh chives but feel free to use basil or any other dry or fresh herbs of your choice.
???? I have use spaghetti pasta but feel free to use pasta of your choice.
INGREDIENTS
☑️ 250 grams of spaghetti or any choice of pasta
☑️ 2 tbsp olive oil
☑️ 5 cloves of garlic (finely minced)
☑️ 2tbsp of gochujang paste
☑️ 2 tbsp tomato paste
☑️ 1/2 cup coconut cream
☑️ 1/2 cup reserved pasta water
☑️ Salt as per taste
☑️ 1 tsp crushed black pepper
☑️ 2 tbsp fresh chives (finely chopped)
GARNISH
☑️ Parmesan (Vegan or Dairy)
☑️ Freshly crushed black pepper
☑️ Freshly chopped chives

This red chile sauce has been one of my most requested recipes and I'm sharing with you my version of our family recipe.

This red chile sauce is so versatile, so delicious, and so easy to make. This sauce is awesome because at its base, it can be used on so many different dishes, from enchiladas to tamales to menudo and so much more. All you got to do is start with this base, and then you can tweak it in any direction, probably as many different sauces as there are chilies, and that's not even taking into account that every single house is going to do it a little bit different.
So whether you're in Texas, New Mexico, Mexico, or along the frontera or anywhere in the USA, remember my advice, what Arnie takes always says, ain't no right way, ain't no wrong way to make chili sauce, and don't let nobody tell you you can't do it the way you like it.
Maybe what your grandma taught your mom, what my grandma taught my mom and my mom taught me may not be exactly the same, even if they're similar, but of course, my grandma's is better than yours. Just kidding! Don't get mad!
Let me just cover real quickly the couple of the different chiles I have. Now, the package here says cascabel or guajillo. It doesn't mean they're the same thing because they're not, but it means you might get one or the other in this package or possibly both. We also have some ancho chile, and we also have some pasilla chile. And I also have some chile de arbol down here. We use that one in our red chili sauce just to give it a little hint of heat and a little more complex flavor.
All right, so in the recipe we're going to use 15 guajillo/cascabel chiles, a couple of ancho chiles, and probably about four or five of the chile de arbol, a whole onion, and six cloves of garlic. All right, friend, let's get started and make this amazing red chili sauce.
Chicken thighs in roasted bell pepper cream sauce
Chicken in roasted bell pepper sauce. If you like bell peppers or capsicums, then this is for you. There is something magical that happens to bell peppers or capsicums once roasted. They become a whole new vegetable with a pleasing texture and smoky flavour. This recipe uses the peppers for the sauce base, giving you a reddish velvety sauce. It is made by first sautéing chicken thighs that have been coated in cayenne pepper and smoke paprika. Mushrooms and spinach are added for a complete meal. Simply serve it with pilaf rice or even pasta. Enjoy my Chicken thighs in roasted bell pepper cream sauce.

THINGS YOU’LL NEED:
4 large poblano peppers
2 tablespoons vegetable oil (or use butter)
½ yellow onion sliced
3 cloves garlic minced
1 cup corn kernels
½ cup Mexican crema (or use sour cream or heavy cream, or chicken broth)
5 ounces melty Mexican style cheese shredded (about 2 cups – I used Mexican manchego)
1 teaspoon chili powder (optional - I used ancho powder, though paprika is good)
½ teaspoon Mexican oregano
Salt and pepper to taste - I used a few light grinds
