Stuffed Peppers with Minced Meat and Rice - RECIPE
8-10 peppers
500-600 g of minced meat
1 onion
1 carrot
1 grated tomato (or 1/2 teaspoon. Canned tomatoes)
2/3 teaspoon rice
1 teaspoon paprika
Clean the peppers from the cob and seeds, wash them and dry them, with the hole facing down.
Onions and carrots, finely chopped (for easier preparation of grated carrots), fry in 3-4 tablespoons of oil.
Add the minced meat and fry until chopped.
I add the tomatoes and let the liquid boil and finally add the rice. Fry it in the cup and then add the red pepper, which I also fry for about 1 minute and remove from the heat.
I don't care what spices I add. I add to our taste - 1 teaspoon of savory, black pepper, and salt to taste. There have been cases where I did not have carrots or tomatoes. And without them, the peppers grow. It's not that fatal!
I fill the peppers with a teaspoon and this is the slowest and most touchy part. It is difficult to say when black pepper is well stuffed because if you stuff it a lot, it will crack during baking. But half-empty pepper is more unpleasant, isn't it? So, I fill the peppers, arrange them in a pan, and pour water, but without covering them. Salt and water. The salt in the filling is not enough to taste a whole pan of peppers.
Bake them at 180 degrees for about 45 minutes, turn them over, and return them to the oven for another thirty minutes.

This delicious Italian Chicken & peppers dish is so easy to make and pairs well with Tagliatelle or Linguine.
Ingredients
4x Chicken Thighs
2 Tblspoons Olive Oil
1 Onion (peeled & sliced)
200 gr Different colored peppers
4x Tomatoes chopped or 1 Tin
1/2 tspoon Crushed Garlic
1 Bay leaf
1/4 tspoon All Spice
1/2 tspoon Cinnamon
1/2 tspoon Thyme
1 tspoon Sweet Paprika
1 tspoon Rigani
Salt & Ground Black pepper
250gr Tagliatelle (for 2 people)
Method
- Place a pan on medium heat, add the olive and the onions. Cook for 2 min.
- Then add the herbs, spices & garlic, give it a mix.
- Place the Chicken thighs on top of the onions, then turn over.
- Add the sliced peppers & chopped tomatoes. Mix & place the chicken on top of the peppers & tomatoes.
- Add the Salt & Ground Black pepper. Give it a slight mix
- Cover with the lid, lower the heat & let it cook for 30 min.
- After 30 min, remove the lid & let it cook further more till your pasta is done.
- Place another pot with hot water on the stove, once at boiling point add the pasta. Cook for 7 min.
-Drain the pasta & coat with olive oil.
- Serve in a bowl with grated Parmesan cheese. Enjoy :) ━━━━━━━━━━━━━

Make couscous according to packet instructions (usually just double quantity boiled water to couscous, salt and olive oil) and add some fresh lemon juice to it. In a pan, sauté ginger and garlic, then add salt, chilli flakes and some ketchup. Next add diced courgette and mixed peppers and cook for few minutes before adding diced red onion. Take off the heat and add the vegetable mixture to the prepared couscous. Mix well and finish with fresh coriander. Enjoy!

This is a fun cooking video I made while streaming on twitch, the recipe for my PLANT BASED UNSTUFFED PEPPERS & LENTILS turned out so good I had to share it here on YouTube. I hope you enjoy the video, it's a little silly and a lot of fun and flavor!
FULL RECIPE:
2 green peppers boiled in water and cut into strips, then layer on the bottom of a baking dish
Half a yellow onion Sautéed with the tops of the bell peppers I cut off (once cooked I added the items below)
In the same pan add in 1 can of fire roasted tomatoes
1 cup of cooked green lentils (Cooked in my Instant pot for 10 minutes)
1 cup of cooked white rice (or you could use cauliflower rice)
Add in fresh basil chopped and stir in
Season to taste with the following (or whatever is in your pantry) oregano, salt, pepper, red pepper flakes, garlic powder, onion powder, parsley flakes
Spread mixture on top of the layered green peppers
I added a little marinara sauce on the top and layered in more fresh basil a sliced tomato and topped it with some Dairy Free Mozzarella cheese
Broil for 4-5 min until “cheese” is a little golden brown
This would be really great if you added in some mushrooms or fresh spinach into the mixture! Play with it and make it your own!
