Moroccan inspired Chickpea Stew Recipe | EASY ONE POT MEAL IDEA!
LEARN HOW TO MAKE AN EASY MOROCCAN CHICKPEA STEW RECIPE
LAY HO MA!! I absolutely love one pot recipes. Not only is this stew easy to make, it's incredibly delicious! Join me in this episode and learn how to make an easy vegan moroccan chickpea stew. Let's begin.
Ingredients:
3 red onions
5 pieces garlic
1 large sweet potato
3 tbsp olive oil
2 tsp cumin seeds
1 tsp chili powder
1 generous tbsp sweet paprika
1 tbsp cinnamon
few sprigs fresh thyme
2 cans 400ml chickpeas
1 800ml can San Marzano whole tomatoes
1.6L water
3 tsp pink salt
2 bunches of collard greens
1/4 cup sweet raisins
few sprigs fresh parsley
Directions:
1. Dice the onions, finely chop the garlic, and peel and cube the sweet potato
2. Heat up a stock pot on medium heat. Add the olive oil
3. Add in the onions and garlic. Then, add in the cumin seeds, chili powder, paprika, and cinnamon
4. Give the pot a good stir and add the thyme
5. Add in the sweet potato and chickpeas. Stir well
6. Add in the tomatoes and crush to release it's juices
7. Pour in two tomato cans worth of water
8. Add the pink salt and stir well. Turn up the heat to bring to a boil, then simmer on medium for 15min
9. Remove the leaves from the collard greens and give it a rough chop
10. Add the greens into the stew along with the dried raisins
11. Transfer 3 cups of stew into a blender and blend on medium high
12. Pour the blend back into the stew and give it a good stir
13. Plate and garnish with freshly chopped parsley

Coral lentils recipe with tomato chicken and peppers!
In a Dutch oven, pour 50 milliliters of olive oil. Add the equivalent of 3 finely chopped onions.
Brown the onion well in the oil. The onion should be translucent.
Add the spices and herbs (paprika, turmeric, ginger, salt, pepper, garlic powder, coriander and/or chopped parsley).
Mix the spices together well, with the onion and the oil to bring out all the flavors. Added a tablespoon of cooked tomatoes and a tablespoon of tomato puree.
Mix again. Added cubes of chicken breast.
Brown them before incorporating 2 chopped carrots and a few peppers into strips.
Then add 500 milliliters of tomato purée and 200 grams of coral lentils, well washed and drained beforehand.
Finally, cover with boiling water and cover over low heat until the lentils and vegetables are tender. Watch the cooking and stir occasionally.

- Olive oil 50 milliliters
- 3 finely chopped onions

- Herb a tablespoon or two of chopped parsley or cilantro
- A tablespoon of cooked tomatoes
- A tablespoon of tomato puree
- 2 chopped carrots
- 2 large bell peppers in strips
- 1 or 2 cubed chicken breasts
- 200 grams of coral lentils
- 500 milliliters of tomato puree
- Boiling water

???? Extra virgin olive oil (I used Early Harvest)
???? 1 large onion, chopped
???? 3 garlic cloves, minced
???? 2 carrots, chopped
???? 3 tsp dry oregano
???? 1 1/2 tsp cumin
???? 1 tsp rosemary
???? 1/2 tsp red pepper flakes
???? 2 dry bay leaves
???? 1 cup crushed tomatoes (from a can)
???? 7 cups low-sodium vegetable broth
???? 2 cups red lentils, rinsed and drained
???? Kosher salt
???? Zest of 1 lemon
???? Juice of 2 lemons
???? Fresh parsley for garnish
???? Crumbled feta cheese to serve, optional

Ingredients:
1 cup basmati rice
1+1 cups water
1 onion
2 long green chili peppers
2 pieces garlic
2 tomatoes
1 cup red lentils
1 tsp cumin seeds
1 tsp coriander seeds
4 cardamom pods
2 tbsp olive oil
1/2 tsp turmeric
2 tsp garam masala
1/2 salt
1 tsp sweet paprika
400ml coconut milk
few sprigs cilantro
Directions:
1. Rinse and drain the basmati rice 2-3 times. Then, add to a small saucepan along with 1 cup of water. Heat up on medium high until the water begins to bubble. Then, give it a good stir and turn the heat to medium low. Cover and cook for 15min
2. Finely chop the onion, long green chili peppers, and garlic. Dice the tomatoes
3. Rinse and drain the red lentils and set aside
4. Heat up a sauté pan to medium heat. Toast the cumin seeds, coriander seeds, and cardamom pods for about 3min. Then, coarsely crush using a pestle and mortar
5. Heat the sauté pan back to medium heat. Add the olive oil followed by the onions. Sauté for 2-3min. Add the garlic and chili peppers. Sauté for 2min
6. Add the toasted spices, turmeric, garam masala, salt, and sweet paprika. Sauté for about 1min. Add the tomatoes and sauté for 3-4min
7. Add the red lentils, coconut milk, and 1 cup of water. Give the pan a good stir and bring to a boil. When it comes to a boil, turn the heat to medium and stir. Cover and cook for about 8-10min (check on the curry once in a while and give it a stir)
8. Turn the heat off on the rice and let it steam further for another 10min
9. Plate the rice and curry. Garnish with some freshly chopped cilantro and serve!
