How To make Chicken with Sun Dried Tomatoes & Cream
4 Boneless, skinless chicken
-breasts 3 tb Butter
Salt & Pepper to taste 1 lg Shallot, minced
1/2 c Heavy cream
1/2 c Dry white wine
1/8 ts Cajun poultry seasoning
1/4 c Sun-ripened dried tomatoes
Slice chicken breasts into 3 pieces, salt and pepper and saute in butter until lightly browned. Remove chicken and saute shallot until softened. Add balance of ingredients and bring to boil, stirring until sauce thickens slightly. Return chicken to skillet and simmer, coating with sauce. Serve with pasta.

Ingredients:
4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried paprika
1/4 tsp garlic salt
3 tbsp olive oil
1 brown onion peeled and sliced
2 cloves garlic peeled and minced
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes I like the bright red one from the deli counter
1 red bell pepper de-seeded and sliced
1 tbsp tomato puree (paste)
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock (use bouillon for gluten free)
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese grated
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley

Chicken Breast With Sun Dried Tomatoes and Homemade Wine Sauce
Chicken Cutlets With Sun-Dried Tomato Cream Sauce
Ingredients
3-4 boneless skinless chicken breast
60 mL (1/4 cup) flour
Salt and pepper to taste
Oil to pan fry
75 mL (⅓ cup) sun-dried tomatoes, chopped
2 shallots, finely chopped
125 mL (½ cup) white wine
125 mL (½ cup) chicken stock
125 mL (½ cup) 35% heavy whipping cream
Pinch red pepper flakes
Parmesan cheese, grated to taste
Method:
Mix flour, salt and pepper in a shallow dish.
Coat chicken pieces in flour mixture.
Heat oil in a large pan medium heat.
Pan fry chicken until browned and fully cooked.
Transfer chicken to a plate.To the pan add sun-dried tomatoes and shallot cook until shallot is starting to soften.
Add wine and stock to pan; scraping up the fond on the bottom.
Sprinkle in pepper flakes.
Stir in cream, and grate in Parmesan or Pecorino.
Place chicken and any juices back into the pan.
Simmer gently over medium heat with lid on 10-15 minutes.

Creamy Sun dried Tomato Chicken
Chicken cooked in a creamy garlic parmesan and sun-dried tomato sauce all in one pan in under 30 minutes. Serve with zucchini noodles, veggies or a salad for a low-carb protein packed lunch or dinner!

Creamy Tuscan Chicken with Sun-dried Tomatoes and Spinach.
Recipe:
6 chicken cutlets
1 cup flour
1 tbs salt
1 tsp pepper
2 cloves garlic (sliced)
1 cup sun-dried tomatoes (julienned)
4 cups spinach
1 cup white wine
1 cup chicken stock
1 1/2 cups heavy cream
1 cup pecorino (grated)
3 tbs EVOO
Get a large sauté pan hot and add 2 tbs of the oil. Combine the four salt and pepper. Dredge the chicken in the flour mix and brown each side in a pan in batches to not over crowd the pan. Once browned place on a dish lined with paper towel. Add the remaining oil and sauté the garlic and sundried tomatoes just until the garlic begins to brown. Add the wine and reduce by half. Add the chicken stock and reduce by half. Add the cream and bring to a simmer, once simmering add the spinach and cook until wilted. Stir the pecorino into the cream and then place the chicken back into the sauce. Simmer until the cream has reduced by half and is thick enough to coat the back of a spoon. Serve on a large platter and enjoy!

Ingredients -
2 Tbsp (40ml) - Sun-Dried Tomato Oil (The oil that the tomatoes are soaked in)
3 (250g-300g Each) Large Chicken Breast, Butterflied & Halved
2 Tbsp (28g) - Unsalted Butter
1 - Small Brown Onion, Diced
5 - Garlic Cloves, Minced or Grated
1/3 Cup (80ml) - White Wine (Substitute With Chicken Stock)
3/4 Cup (180ml) - Chicken or Vegetable Stock
1/2 Cup (100g) - Sun-Dried Tomatoes
1 Tbsp (20g) - Dijon Mustard
1 Cup (250ml) - Thickened Cream (Whipping or Double Cream)
20g (0.7oz) - Parmesan Cheese, Freshly Grated
5g (0.2oz) - Thyme, Roughly Chopped
5g (0.2oz) - Oregano, Roughly Chopped
1 tsp (2g) - Dried Chilli Flakes
1 Cup (15g) - Fresh Basil Leaves, Roughly Picked
Seasoning to Taste
If you wish to use dried herbs instead of fresh use 1 tsp each of dried.
For chicken thighs instead of chicken breast, sear the chicken for 6 minutes on each side
