-CHICKEN brEASTS, CUT INTO -1 IN.PIECES SALT & PEPPER TO TASTE 1/4 ts CORNSTARCH
1 tb DRY SHERRY
1 EGG
2 c OIL
1 sm GREEN PEPPER,CUBED
1/2 c SLICED WATER CHESTNUTS
IMPERIAL SAUCE: 1 ts HOISIN SAUCE
1/2 TO 1 c RAW CASHEWS
Marinate chicken breasts 30 min. in salt, pep- per,cornstarch,sherry & egg. Heat wok hot & dry. Add oil. When it's just beginning to smoke, add chicken,green pepper & water chest- nuts, stirring 1-2 min. Drain through colander or sieve, reserving 2-3 tbs. oil. Return the reserved oil to wok & add Imperial Sauce & hoisin sauce. Cook 1-2 min. or until thickened slightly. Add nuts,chicken & vegetables, stirring everything together until well coated w/ sauce. Serve. Note: Hoisin sauce is pre-packaged, found in Chinese specialty stores. Made from soybeans, flour,sugar,garlic & chili peppers, it is reddish-brown in color & is creamy & sweet. 1 KG. CHICKEN
3 TBSP. OIL
1/2 TSP. MUSTARD SEEDS
1 TSP. CUMIN SEEDS
FEW CURRY LEAVES
1 LARGE ONION
1/2 TSP. TURMERIC POWDER
2 OR 3 GREEN CHILLIES
2 TBSP. GINGER GARLIC PASTE
2 TBSP. SALT or as per taste
1 TSP. GARAM MASALA POWDER
2 TOMATOES
2 TSP. RED CHILLI POWDER or as per taste
5 - 7 CASHEWS
1 CUP BEATED CURD / YOGURT
1 TBSP. CORIANDER POWDER
1 BUNCH CORIANDER LEAVES
PROCESS :
STEP1 :
...Wash and dry chicken
...Cut onions, tomatoes and green chilies
...Chop coriander leaves
...Grind cashew nuts , add few drops of water or milk to make fine paste.
...Beat curd
STEP 2:
... Now heat large pan on medium high heat
...Add mustard , cumin seeds and curry leaves
...next add onions, green chilies and turmeric powder and fry for 3 minutes
...Now add ginger garlic paste and fry for 2 minutes
...Add chicken and mix well
...Add salt and fry 10- 12 minutes on medium heat
...Next add garam masala powder and red chilli powder mix well
...Now add 1/2 cup tomatoes and some part of chopped coriander leaves
...Close lid and cook for 5 minutes
...Next add cashew paste, curd and coriander powder
...Mix well and cook for 5 to 7 minutes with closed lid on low heat
....Finally add rest of coriander leaves and turn off heat.
..........Serve with rice and chapatis........

1 n 1/2 tsp - Red chilli powder (लाल मिर्च पाउडर)
(For Gravy)
3 medium - Onion (प्याज)
2 tbsp - Fresh cream (मलाई)
10-12 - Cashew (काजू)
Oil - (तेल)
1 b 1/2 tsp - Ginger Garlic paste (अदरक लहसुन पेस्ट)
2 - Tomato puree (टमाटर)
2 tsp - Coriander powder (धनिया पाउडर)
1 tsp - Red chilli powder (लाल मिर्च पाउडर)
1 tsp - Chat masala (चाट मसाला)

This recipe combines tender bite-sized pieces of chicken breast with toasted cashew nuts in a flavorful sauce. Homemade Cashew Chicken is better than takeout. The tasty sauce is a combination of garlic, rice vinegar, hoisin sauce, soy sauce, fish sauce, and toasted sesame oil.
Ingredients A:
1-600gm. Chicken
Breast meat
2-1tsp.salt
3-1tbsp.turmeric powder.
=to be season with the chicken before fry.
Ingredients B:
1-3tbsp oil
2-2inc.slice young ginger
3-7pcs.chop garlic
4-1big yellow onion/cut into cube
5-3 tbsp.Oyster sauce
6-1tsp.salt
7-1tsp.sugar
8- 100gm.water
9-100gm.Cashew nuts
10-Capsicum/bell pepper 1/3 each colors/cut into cube
11-3stock curry leaves
12-5pcs.dry chilli /cut into 2.
The curry leaves and the dry chilli /to be fry and pot aside.

Ingredients (A)
300 gm chicken meat, diced
100 gm pine-nuts
1/2 carrot, diced
150 gm celery, diced
2 cups Neptune cooking oil
5 water chestnuts, diced
1 red pepper, diced
Marinade for chicken (B)
1 teaspoon soy sauce
1 teaspoon chicken stock granule
1 teaspoon corn flour
dash of pepper
1/2 teaspoon sesame oil
Ingredients (C)
1 tablespoon fermented soy bean paste (spicy)
3 cloves garlic, chopped
Seasoning (D)
1 teaspoon soy sauce
1/2 teaspoon chicken stock granule
2 tablespoons water
dash of pepper
1/2 teaspoon sesame oil
Thickening (E)
1/2 teaspoon corn flour
+
1 tablespoon water = mixed
Method
1. Marinate chicken with (B) for 10 minutes.
2. Heat up Neptune cooking oil, deep fry pinenuts on low heat till light brown. Dish & drain.
3. Scald chicken in oil, dish & drain. Scald the vegetables from Ingredients (A), dish & drain.
4. Saute Ingredients (C) till fragrant. Add all the vegetables (Ingredients A) & seasoning (D), stir-fry till cook. Add chicken cubes & cook well. Thicken with corn flour water (E). Put in pine-nuts. Dish & serve.
