How To make Chicken & Cashews
1 1/2 lb Chicken Breast ;boneless
CUT INTO 1-IN.PIECES SALT & PEPPER TO TASTE 1/4 ts CORNSTARCH
1 tb DRY SHERRY
EGG 2 c OIL
GREEN PEPPER,CUBED IMPERIAL SAUCE: Hosin Sauce 1 c Cashews raw
1 c Water Chestnuts;sliced
Marinate chicken breasts 30 min. in salt, pepper, cornstarch,sherry & egg. Heat wok hot & dry. Add oil. When it's just beginning to smoke, add chicken,green pepper & water chest- nuts, stirring 1-2 min. Drain through colander or sieve, reserving 2-3 tbs. oil. Return the reserved oil to wok & add Imperial Sauce & hoisin sauce. Cook 1-2 min. or until thickened slightly. Add nuts,chicken & vegetables, stirring everything together until well coated w/ sauce. Serve. Note: Hoisin sauce is pre-packaged, found in Chinese specialty stores. Made from soybeans, flour,sugar,garlic & chili peppers, it is reddish-brown in color & is creamy & sweet. If it's too thick to spread, thin w/ some sesame oil.

Thai Cashew Chicken Recipe by Food Fusion

Serves 3-4
Recipe in English:
Ingredients:
-Soy sauce 2 tbs
-Water 4 tbs
-Fish sauce ½ tbs
-Dark soy sauce ½ tbs (optional)
-Oyster sauce ½ tbs
-Sugar ½ tbs
-Cooking oil 2-3 tbs
-Kaju (Cashew nuts) ¾ Cup
-Lehsan (Garlic) chopped 1 & ½ tbs
-Pyaz (Onion) sliced ½ medium
-Boneless chicken preferably thigh julienne cut 350g
-Sukhi lal mirch (Dried red chillies) 3-4
-Thai red chillies 4-5
-Hara pyaz (Spring onion) white part julienne ¼ Cup
-Shimla mirch (Capsicum) julienne ½ Cup
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp or to taste
-Hara pyaz (Spring onion) leaves julienne ¼ Cup
Directions:
-In a bowl,add soy sauce,water,fish sauce,dark soy sauce,oyster sauce,sugar,whisk well & set aside.
-In a wok,add cooking oil,cashew nuts & fry until light golden & set aside.
-In the same wok,add garlic & mix well for a minute.
-Add onion,mix well & saute until translucent.
-Add chicken & mix well until it changes color.
-Add dried red chillies,thai red chillies,spring onion white part,capsicum,salt,black pepper powder & mix well.
-Add prepared sauce,mix well & cook for 3-4 minutes then cook on high flame until it dries up.
- Add spring onion leaves,fried cashew nuts & mix well.
-Serve thai cashew chicken with fried rice!

-Karahi mein cooking oil aur kaju dal dein aur light golden ho janay tak fry ker lein & side per rakh dein.
-Us he karahi mein lehsan dal ker ek minute kliya ache tarhan mix ker lein.
-Pyaz dal dein aur translucent hunay kliya sauté ker lein.
-Chicken dal dein aur rang tabdeel ho janay tak ache tarhan mix ker lein.
-Dried red chillies,thai red chillies,hara pyaz white part,shimla mirch,namak ar kali mirch powder dal ker ache tarhan mix ker lein.
-Tayyar sauce dal ker ache tarhan mix karein aur 3-4 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
-Hara pyaz leaves aur fried kaju dal ker ache tarhan mix ker lein.
-Thai cashew chicken ko fried rice ka saath serve karein!

CASHEW CHICKEN | THAI CASHEW CHICKEN STIR FRY | CASHEW CHICKEN RECIPE

Ingredients for Cashew Chicken:
(Tsp- Teaspoon; Tbsp- Tablespoon )
Boneless Chicken (thigh) - 450 gms (cut into 2 inch strips)
For Marination :
Salt-3/4 tsp
Crushed Pepper- 1/2 tsp
Making the Sauce:
- Oyster Sauce- 1 tbsp
- Dark Soy Sauce- 2 tsp
- Rice Vinegar- 1 tsp
- Honey - 1 tbsp
- Water- 1 tbsp
Other Ingredients:
- Spring Onion whites- 3-4 tbsp
- Garlic chopped- 2 tsp (5-6 cloves)
- Ginger chopped- 1.5 tsp
- Thai Long Red Chillies, sliced -2
- Spring Onion greens, cut into 2 inches- 20 nos.
- Roasted whole cashews- around 30
- Oil- 2 tbsp for stir-frying the chicken pieces + 1 tbsp
Preparation:
- Take boneless thigh pieces, pat dry and cut them into 1/2 thick by 2 inch long inch strips.
- Now add salt and crushed pepper
- Set aside for 15 mins.
- To prepare the Sauce, add all the items in a bowl. Stir it well to mix uniformly. Whisk it well.
- Chop the ginger, garlic, spring onion white and spring onion greens.
Process:
- Heat 1.5 tbsp oil in a wok and add the marinated chicken pieces. Spread the pieces for it to get the heat.
- Fry on medium heat for 4-5 mins till browned. Remove and set aside.
- Add 1 tbsp oil to the oil in the wok and heat.
- Now add the fine chopped garlic, ginger and spring onion whites.
- Stir fry on high heat for 1 min and then add the fried chicken pieces. Mix it well and stir fry for 1 min.
- Add the roasted cashews and stir fry for 1 min.
- Now add the rest of the sauce, mix and stir fry on medium heat for 1-2 mins till the chicken becomes brown and begins to thicken.
- Garnish with cut spring onion greens and sliced Thai red chillies. Mix and stir fry for around 1 minute.
- Serve hot after garnishing with some more spring onion greens.
