How To make Chicken with Lemon Grass and Cashews
2 sm Dried chilies
Oil 1 Garlic clove, chopped
1 lb Chicken, sliced
1/2 ts Sugar
1 tb Oyster sauce
1 tb Fish sauce, Nuoc Mam
3 tb Chicken stock, or water
1/2 c Cashews, roasted unsalted
1 tb Lemon grass, chopped
2 Shallots, cut in quarters
1. with a little oil, stir-fry the chilies until cookied evenly but not
burnt, set aside. 2. Fry the garlic, with a little more oil until gold, add the chicken, sugar, oyster sauce and fish sauce. Fry until chicken is browned, lower the heat and add your liquid. Cook for few more minutes. 3. When the chicken is completely cooked add the nuts, lemon grass, shallots and chilies carefully...don't break the chilies.

CHICKEN, NOODLE & CASHEW SALAD **asian recipe**

Serves 4
2 limes
2 tablespoons of peanut oil
1 stalk lemon grass, finely chopped
2 garlic cloves, finely chopped
2 tablespoons sweet chilli sauce
2 tablespoons soy sauce
4 (500g) chicken fillets (breast)
125g vermicelli noodles
1/2 cup cashews nuts, chopped lightly
1 red capsicum, sliced and chopped
1 large lebanese cucumber, peeled & sliced diagonally
Take a piece of breast and slice it to flat it slightly. Cover it with greaseproof paper and pound the chicken until flatten (approx 2-3cm)
Add chicken in a bowl, add lemongrass, oil, garlic, sweet chilli sauce and soy sauce. Mix well.
Place a deep frying pan on moderate heat and fry the chicken pieces, approx 3 mins on each side or until cooked through. Remove and keep warm. In the same pan fry stir fry the capsicums for approx 23 mins, add the cashews and fry for a further 1-2mins.
Turn heat off and add the cucumbers. Allow the to soften slightly.
In a deep serving bowl, add the cooked chicken pieces and the noodle mixture, mix well and serve immediately.
How To Make - Celery & chicken Stir Fry [anyhowcanlah]
Celery & chicken stir fry is a simple & delicious dish that has both meat protein & vegetable fibre. This is one dish you can go with white rice. With light seasoning and short prepartion time, everyone can make this at home. You can use chicken thigh or breast, sliced pork or beef.
I added in fried garlic. You can also pre-roast in air fryer/oven. Roasted garlic gave this dish extra garlicky kick (only if you are GARLIC FANATIC).
Here's what you need:
Chicken thigh 1 piece
(no bones & skin)
Celery 2 stalks
Carrot 1 stalk
Cashew nuts. 10 or more nuts (up to your liking)
Garlic 20 cloves
Ginger. 10 cm
Seasoning Chicken thigh
Soy Sauce 1 tbsp
White Pepper 1 tbsp
Sesame Oil 1 tbsp
Cornstarch 1 tsp
Seasoning
Celery
Soy Sauce 1 tsp
Oyster Sauce 1 tsp
Sesame Oil 1 tsp
