How To make Chicken or Beef Fajitas
Ingredients

cup
vegetable oil
1/2
cup
lime juice
1
cup
tequila
1/4
cup
tomato paste

garlic cloves, minced
1
each
whole jalapeno pepper
2
teaspoon
salt 2 ts chili powder
2
teaspoon
cumin
2
pound
chicken breast*
10
each
flour tortillas for fajitas
3
tablespoon
vegetable oil
1
each
large bell pepper, cut into
1
each
large onion, cut into strips
1
each
large tomato,cut into chunks
Directions:
*Boneless, skinless breast, cut into strips; or skirt steak.
In a glass bowl or baking dish, combine 1/2 cup oil, lime juice, tequila,
tomato paste, garlic, jalapeno, salt, chili powder, and cumin. Blend well.
Add chicken, cover, and marinate in refrigerator at least 6 hours or
overnight. Wrap tortillas in aluminum foil. Bake 15 minutes while
preparing fajitas. Remove chicken from marinade. In a large, heavy skillet
over medium-high heat, heat 3 Tbl oil. Add chicken and cook, stirring
constantly, 5 to 7 minutes or until chicken is done. Add bell pepper and
onion and cook 3 minutes more along with tomatoes, just until vegetables
are crisp-tender. Serve with tortillas, guacamole, sour cream, salsa, and
grated cheese.

Garlic Powder : 1 and 1/2 teaspoons
Cumin powder : 1and 1/2 teaspoons

Dried Oregano : 1 and 1/2 teaspoons
Black Pepper Powder : 1 teaspoon

Chicken breast : 2
Olive Oil : 1 table spoon
Lime Juice : 2 tea spoons
fajita seasoning mix : 3 tea spoons
yellow Bell pepper : 1 sliced
Red Bell Pepper : 1 sliced
Green Bell Pepper : 1 sliced
Onion : 1 large sized sliced
oil : 2 table spoons

Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.

These are my classic chicken fajitas, and my favorite way to serve them, is as a SOMBRERO PLATE, I gave it the name because I top them with freshly grated Oaxaca cheese covering them like a sombrero. I season my chicken fajitas with a perfect homeade seasoning and I cook them to perfection and set them aside while I saute my peppers, onions, garlic, jalapeño, cilantro and tomatoes to perfection, then I replace my chicken and give it a quick toss and place a good serving of my delicious juicy chicken fajitas on my po re heated cast iron sizzler and top them with freshly grated Oaxaca cheese then place them in a preheated 250° oven just long enough for cheese to melt, and VOILA!! a beautiful, easy, quick delicious weeknight meal , I love to serve them with refried beans, mexican red rice and homeade flour tortillas and my favorite EVERYDAY SALSA.
SEASONING INGREDIENTS
1 large chicken breast
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
1 tsp chile powder
1/2 tsp smoked paprika
1 tsp lemon pepper
1/4 tsp oregano
salt (to your liking)
MARINADE
To the Seasoning add
juice of 1 lime
1/4 C. orange juice
1 Tbsp olive oil
PEPPER/ONION INGREDIENTS
1/4 C. yellow bell pepper
1/4 C. orange bell pepper
1/3 C. red bell pepper
1/3 C. green bell pepper
1/2 medium sliced onion (you decide amount)
1/2 large jalapeño (seeded and sliced)
chopped cilantro (you decide amount)
1 large minced garlic
1 sliced Roma tomato (seeds removed)
freshly grated Oaxaca cheese (as needed)

Ah yes, the TexMex classic, fajitas. We all know it. We all love it. However, going out with friends and family trying to enjoy a steamy plate of meat, beans, vegetables, and warm tortillas that you just want to cuddle up in are so darn expensive!!
