How To make Arizona Chicken Fajitas
1/2 c Oil
1/2 c Lime juice
1 c Tequila
1/4 c Tomato paste
2 Garlic cloves
1 Jalapeno chili
1/2 ts Salt
1/2 ts Chili powder
1/2 ts Cumin
1 1/2 lb Chicken breast
10 Flour tortillas
3 tb Oil
1 Bell pepper
1 Onion
1 Tomato
Sour cream Mince garlic. Cut bell pepper and onion into strips. Cut tomato into chunks. In a glass bowl or baking dish, combine 1/2 cup oil, lime juice, tequila, tomato paste, garlic, jalapeno, salt, chili powder, and cumin. Blend well. Add chicken, cover, and marinate in refrigerator at least 6 hours or overnight. Preheat oven to 350F. Wrap tortillas in aluminum foil. Bake 15 minutes while preparing fajitas. Remove chicken from marinade. In a large, heavy skillet over medium-high heat, heat 3 Tbl oil. Add chicken and cook, stirring constantly, 5 to 7 minutes or until chicken is done. Add bell pepper and onion and cook 3 minutes more, just until vegetables are crisp-tender. Serve with tortillas, guacamole, sour cream, salsa, and cheese. Learn How to Make this Epic Chicken Fajita Burger (With Guac, Of Course)
The guys at Food Steez are the unequivocal masters of badass burgers. Here, they further prove they are the ultimate burger masters with this mouthwatering chicken fajita burger with homemade guac.
Chicken Fajita Burger with Guacamole
Burger:
• 1 lb. ground chicken breast
• 2 tbsp. melted butter
• 1 cooled tsp. chili powder
• ½ tsp. cumin
• 2 tsp. salt • 2 tsp. pepper
• juice of ½ lime
• 2 tbsp. olive oil
• 1 small sweet onion, sliced
• 1 small red bell pepper, sliced
• 1 small yellow bell pepper, sliced
• 4 slices pepper jack cheese
• 2 hamburger buns
• salt and pepper to taste

Guacamole:
• 2 ripe avocados
• ¼ cup tomatoes, diced
• ¼ cup red onion, diced
• 1 garlic clove, pressed or minced
• juice of ½ lime
• salt and pepper to taste
For the sandwich, add chicken, butter, chili powder, cumin, lime juice, pepper, and salt in a large bowl then mix until just combined. Shape into 2 patties. Heat a skillet to medium heat and coat with olive oil. Add patties and cook for 5-8 minutes per side (or until cooked through). Add cheese slices on top of burgers then place a lid on top of the skillet and allow cheese to melt. Remove and set aside.Meanwhile heat another oiled skillet or saucepan over medium-high/high heat. Add the vegetables, season with salt and pepper, a pinch of cumin, then sauté vegetables until they are crisp and tender.
For guacamole, add ingredients in a bowl then mash until smooth. Place guacamole on bottom half of bun followed by the patties then top with fajitas, and enjoy!

Recipe (4 Servings)
Grilled Chicken Breast
2 Pounds Chicken Breast
2 Tbs Taco Seasoning
1 Tbs Vegetable Oil

Marinate overnight or at least 4 hours and grill.
Fajita Peppers & Onions
1 Small White Onion
1 Small Red Onion
2 Bell Pepper (Red, Green, Or Yellow)
1 Poblano Pepper
1 Large Jalalpeno

Cut all into Julienne long strips & grill or saute until well charred.
Dirty Spanish Rice
1.5 Cups Long Grain White Rice or Brown
1 Can Diced Tomato with Green Chili
24 oz Tomato Juice
2 Limes Juiced
2 Tbs Taco Seasoning
2 Tbs Oil or Butter

Cook rice according to package
*note that the tomato juice will account for 24oz of the water needed*
Garlic Black Beans
2 Cans Black Beans
2 Tbs Chili Powder
2 tsp Dry Oregano or Fresh
4 Cloves Garlic
4 oz Queso Fresco Crumbling Cheese
1 Bunch Cilantro (Minced)

Saute garlic until well browned, then add chili powder, oregano & beans with liquid. Simmer on low about 30 minutes or until liquid is reduced. Finish with crumbled queso fresco and garnish with cilantro.

Jaguars and wolves and bears...OH MY!!! Bearizona was by far one of our favorite destinations on this journey. The animals were BEAUTIFUL!!! So was this easy chicken fajita dish made in our electric pressure cooker! Pardon the cheese on my face at the end, it was just so GOODe I decided to wear it!
