INGREDIENTS⬇

❖› 2 chicken fillets
❖› 1 green pepper
❖› 1 red pepper
❖› 1 small onion
❖› 4oz or 100g low‑fat grated cheese
❖› 4 tortilla wraps
❖› 1 tablespoon chilli powder mix
❖› 1 teaspoon vegetable oil
Method
------------
✔1. Cut the chicken into small strips.
✔2. Slice the peppers and onions into thin strips.
✔3. Fry the chicken in the olive oil over a medium heat for 8–10 minutes.
✔4. Add the chilli powder mix and vegetables.
✔5. Stir fry for a further 3 minutes until the seasoning mix coats them thoroughly to make a juicy filling.
✔6. Heat the tortillas in either: Oven Pre‑heat the oven to 180°C or Gas Mark 4. Wrap in tin foil and heat for 15 minutes. Microwave Place on a plate, cover with cling film and heat for 1 minute on full power.
✔7. Place the chicken mix on top of the wrap, sprinkle cheese on top and roll the tortilla around the filling to make a fajita.
✔8. Serve with Tossed Green Salad (page 72).

Roti Wrap/ Roti Sandwich
Ingredients for Roti Dough Preparation:
Flour (Maida) 2 cups
Salt 1/2 tsp
Oil 1 tbsp
Water as required
Ingredients for Chicken Marination:
Chicken Boneless 1/2 kg
Salt to taste
Garlic paste 1 tsp
Coriander powder 1/2 tbsp
Cumin powder 1/2 tbsp
Red chili powder 1/2 tbsp
Black pepper powder 1/2 tsp
Tomato ketchup 2 tbsp
Oregano 1 tsp
Red chili flakes 1/2 tbsp
Oil 1 tbsp
Ingredients for Spicy Mayo Sauce:
Mayo 1 cup
Chili sauce 2 tbsp
Green chilies (chopped) 1/2 tsp
Garlic powder 1/2 tsp
Cream 1/2 cup
Black pepper powder 1/2 tsp
Red chili powder 1/2 tsp
Salt to taste
Ingredients for Assembling:
Oil (for cooking) 2 tbsp
Oil (for greasing) as required
Spicy mayo sauce as required
Cooked chicken as required
Cheese slices as required
Tomatoes (sliced) as required
Lettuce leaves as required
Directions for Roti Preparation:
In a bowl add flour, salt, oil and water and kneed it properly until your dough is soft and ready. Keep it aside and let rest for 5 minutes.
Now, make the small balls and with the help of rolling pin, roll down into chapati form and then cook it on tawa until 80% done and take it off.
Directions for Chicken Preparation:
Now in a bowl add boneless chicken, salt, garlic paste, coriander powder, cumin powder, red chili powder, black pepper powder, tomato ketchup, oregano, and red chili flakes. Marinate the chicken for about 10-15 mins.
Add oil in pan and cook the marinated chicken for about 8-1o mins or until water dries out. Remove it from flame and keep it aside.
Directions for Spicy Mayo Sauce Preparation:
In a bowl, add mayo, chili sauce, green chilies, garlic powder, cream, red chili powder and salt. Mix well and your sauce is ready.
Directions for Assembling:
Now take chapati and equally place cheese, lettuce leaves, tomatoes, chicken pieces and sauce into four portions of each side of chapati. Then flip each side on the other until its properly fold.
Then grill each side for 1 minute or make it in sandwich maker.
Your Roti wrap is ready to serve.

Cooking time: 25-30 mins

CHICKEN TORTILLA SOUP:
• 2 tablespoons olive oil
• 1 medium white onion, diced
• 1 medium red bell pepper, diced
• 5 cloves garlic, minced
• 2 teaspoons chili powder
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• 4 cups chicken broth
• 3 boneless skinless chicken breasts
• 15 ounce can tomato sauce (pasatta)
• 15 ounce can fire roasted diced tomatoes
• 15 ounce can black beans
• 7 ounce can diced green chiles
• 1 1/2 cups frozen corn (or use canned)
• 1/2 teaspoon salt
• 1/2 cup freshly chopped cilantro
• 1/4 cup lime juice
FOR SERVING:
• 3 cups tortilla strips or tortilla chips
• 2 medium avocados, diced
• 1 cup shredded Monterey jack cheese
• 1/4 cup sour cream

1️⃣ 00:00:10 - Heat olive oil in a large pot over medium high heat. Add in onion and bell pepper and saute 5 minutes. Add in garlic, chili powder, cumin, and paprika and toast for 60 seconds.
2️⃣ 00:00:43 - Pour in chicken broth, add in chicken breasts, and bring to a boil. Reduce heat to medium low and simmer until chicken is cooked through, about 15 to 20 minutes.
3️⃣ 00:01:03 - Remove cooked chicken from soup, shred with a fork, and return to the pot.
4️⃣ 00:01:17 - Pour in tomato sauce, diced tomatoes, black beans, green chiles, and corn. Return soup to a simmer and let simmer 5 minutes.
