Today I am making chicken enchilada cornbread casserole also known as tamale pie. This is a baked casserole dish perfect for dinner. The cheese in this recipe is versatile and can be made with ground beef as well.

INGREDIENTS
1.5 lbs shredded cooked chicken
add seasonings and spices to your preference
8 oz (227 g) pepper jack cheese
I used an 8 x 12 (2.7 quarts) baking dish
Bake at 400 F / 204 C for 23 to 25 minutes
**CORNBREAD MIX**
1 cup (140 g) yellow cornmeal
3/4 cup (98 g) all-purpose flour
1 Tbsp (15 g) baking powder
1/2 tsp (3 g) salt
2 Tbsp (25 g) sugar
1 large egg
1 1/4 cup (295 ml) milk
3 oz (85 g) pepper jack cheese
**ENCHILADA SAUCE**
1/4 cup (59 ml) cooking oil
1/4 cup (35 g) all-purpose flour
2 Tbls (12 g) chili powder
1/4 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 Tbsp (10 g) chicken bouillon
2 cups (473 ml) water

How to make cheesy chicken tamale casserole | body and soul recipe
This CHEESY CHICKEN TAMALE CASSEROLE is a quick and easy weeknight dinner!
Prep Time : 10 mins Cook Time : 40 mins Total Time : 50 mins
Ingredients
8.5 oz corn muffin mix, (such as Jiffy)
14.5 oz cream-style corn
2 eggs, lightly beaten
1/2 cup milk
1 tsp chili powder
1/2 tsp cumin
2 cups taco cheese blend, shredded , divided
1 1/2 cups enchilada sauce
3 cups shredded cooked chicken, from rotisserie chicken
Instructions
1. Preheat oven to 400 degrees F. Lightly spray a 9x13 inch casserole dish with non stick cooking spray, set aside.
2. In a large bowl combine the corn muffin mix, cream-style corn, eggs, milk, chili powder, cumin and 1 cup of cheese. Stir till combined then pour into the casserole dish. Bake for 20 minutes.
3. Remove from oven and use a knife to pierce the cornbread mixture several times all over. Pour the enchilada sauce all over the top of the casserole. Top with the shredded chicken and remaining cheese. Bake for an additional 20 minutes.
4. Let cool for 10 minutes before slicing into pieces and serving with optional toppings. Enjoy!
Notes
Substitute the shredded chicken for equal amounts shredded pork or beef if desired.

I’m always looking for simple and easy weeknight dinner recipes that will feed my family and keep them happy, which is why I LOVE this super easy and totally cheese Chicken Tamale Casserole!
It combines all the flavors of those authentic tamales into an easy casserole dish that takes less than one hour from start to finish. Since I’m a major fan of all things Mexican food, I had no doubts that this casserole dish would come in as a success.
The base of the casserole is made with a boxed corn bread mix (like Jiffy) that’s infused with creamed corn, chili powder, cumin and a little cheese.
TAMALE PIE MADE WITH MASA HARINA: Delicious, More Authentic Recipe w/Ground Beef, Corn & HATCH CHILE
Let's face it, there's no substitute for tamales, but this Tamale Pie made with Masa Harina is at least closer to the flavor profile of tamales because it's not made with corn bread. It's really delicious! Masa Harina is a corn masa flour. I typically buy Maseca brand, in case you're looking for it in the grocery store and aren't sure you've got the right thing. Read on for the recipe.
Tamale Pie
1 lb. lean ground beef
1/2 chopped white or yellow onion
2 minced garlic cloves
1 15oz. can corn, drained
1 can crushed tomatoes
1/2 cup chopped Hatch green chile
1 Tbsp. red chile powder
1 Tbsp. cumin
salt to taste (I use about 1 tsp.)
approx. 1 cup grated cheddar cheese
For the dough topping:
2 cups masa harina (I use Maseca brand)
1 tsp. baking powder
1 tsp. salt
1/2 cup melted fat (I use butter. You can also use lard or vegetable oil.)
1 1/2 cups warm chicken broth
In large skillet over medium high heat, brown ground beef. Add in chopped onion and fry until translucent. Add in all other ingredients: minced garlic, crushed tomatoes, corn, green chile. Season with chile powder, cumin and salt. Continue cooking approx. 5-10 minutes. Once fully cooked, take off burner and set aside.
Meantime, make dough by mixing together the dry ingredients: masa harina, baking powder and salt. Add in melted fat and mix until crumbly. Add chicken broth a little at a time until fully absorbed into dough. If it's too dry, add more chicken broth. It should be spreadable.
Grease a 9x13 baking dish with butter or non-stick cooking spray, then add meat mixture and spread evenly across the bottom of baking dish. Sprinkle shredded cheese on top. Spoon dough on top and carefully spread across the top of dish. (This will take a little time. If dough is not spreading, wetting your spatula with water may help.) Sprinkle additional cheese on top and bake at 350º for 30 minutes until golden brown.

Mom's Tamale Pie Recipe
Meat mixture
-1 tablespoon oil
-1 small onion, diced
-1 jalapeno, minced
-2 cloves garlic, minced
-7ozcan diced green chilies (use half for meat mixture and reserve half for cornbread)
-salt and pepper to taste
-2 tablespoons Guajillo chili powder
-2 Tablespoons flour
- lb ground beef
-1 packet taco seasoning
-1 cup water
Heat oil in skillet; saute onions for about 7 minutes; add jalapeno and cook for 3 minutes. Add garlic and green chilies; salt and pepper to taste. Add Guajillo chili powder and cook 1 minute. Add ground beef; crumble and brown. Add flour and taco seasoning; cook 1 minute. Add water and lower heat to low and simmer 10 minutes.
Cornbread Batter
-1 cup cornmeal
-1/2 cup flour
-1 tablespoon baking powder
-2 tablespoon sugar
-1/2 teaspoon salt
-1 egg
-1 tablespoon oil
-14 oz can cream of corn
-1/2 cup milk
-reserved half of can green chilies
-1/2 cup shredded cheddar cheese
Mix all ingredients together in bowl.
Place half of cornbread batter into greased 11 x 7 inch pan; add meat mixture; top with additional 1 1/2 cups shredded cheddar cheese and finally remainder of cornmeal batter. Bake in preheated 400 degree oven for 25 minutes. Allow to sit for 10 minutes before serving. Top with spoonful of sour cream and cowboy candy if desired. Enjoy!!!
