Mexican Cooking TAMALES Casserole Recipe!!

Here is what your casserole will look like once it rests and cools -
Bake at 380 degrees (F) for 50 Mins
Ingredients
3 cups of corn kernels
4 cups of maseca (instant corn masa)
1 cup milk
1 cup of water
1 1/2 Tbsp chicken bouillon or salt to taste
10- 15 roasted Anaheim peppers
1/2 onion
8 oz of Queso fresco
3 cups medium cheddar cheese
1/2 butter shortening
1/2 cup butter + extra to coat the bottom of the baking dish
1 tbsp sugar
1 tbsp Baking powder
Optional- 2 to 3 cups of Shredded chicken (Add around the same time as mixing cheddar cheese)
Tastes best with salsa verde- add fresh onion and cilantro
Tip❗️
If you’d like a more cake texture use 3 cups maseca + 1 cup AP flour
Please allow this casserole to set for 15- to 20 minutes. The longer you allow it to rest the better It will form into squares

Think of this savory pie as the cheeselicious union between tamales and nachos.
INGREDIENTS
For the crust:
•Butter for greasing
•1 cup masa
•½ cup cornmeal
•2 Tbsp sugar
•1 Tbsp baking powder
•1 tsp chipotle powder
•1 tsp salt
•½ tsp black pepper
•1 egg
•⅔ cup buttermilk
•⅓ cup chicken stock
•½ cup diced green chilies
For the filling:
•½ cup red onion, chopped fine
•¾ cup fire roasted tomatoes
•1–2 Tbsp jalapeño, chopped and seeded (optional)
•⅓ cup corn kernels, thawed
•1 ½ cups chicken, pulled or chopped
•1 ½ cups of your favorite enchilada sauce
•1 cup cheddar cheese, grated
•1 cup jack cheese
•Serve with: cilantro, sour cream and hot sauce
LET'S GET COOKING...
1.Preheat oven to 400ºF. Grease a cast-iron skillet with butter. (You can also use a round pie dish if you’d like.)
2.In a mixing bowl, mix together all ingredients for the crust and pour into pan. Bake for 20-30 minutes until puffed and golden.
3.Mix together red onion, tomatoes, jalapeño, corn, chicken enchilada sauce and half the cheese.
4.Pour filling into baked crust and top with remaining cheese, bake for another 15–20 minutes until hot and bubbly.
5.Slice and serve with cilantro, sour cream and hot sauce, if desired.

Chicken Tamale Pie | Delish
A layer of cornbread topped with cheesy shredded chicken = DINNER GOALS.
DIRECTIONS
1. Preheat oven to 400º. Prepare cornbread base: In a medium bowl, combine corn muffin mix, sour cream, corn and egg. Whisk until evenly combined. Spray a large oven-safe skillet with cooking spray. Pour into a large cast iron skillet and bake until golden, 15 minutes. Let cool slightly.
2. Meanwhile, in a large skillet over medium heat, heat oil. Add onions and cook until tender, 5 minutes, then add garlic and cook 1 minute more. Add taco seasoning and season with salt. Add chicken and 1/2 cup enchilada sauce and stir until combined.
3. Poke holes all over cornbread with the bottom of a wooden spoon. Pour remaining 1/4 cup enchilada sauce over poke holes and top with chicken mixture.
4. Top with cheddar and Monterey jack and bake 20 minutes more.
5. Garnish with cilantro and serve.

1/2 c. corn kernels (canned, fresh, or frozen)
1 large egg
Cooking spray, for skillet
1 tbsp. extra-virgin olive oil
1 large onion, chopped
2 cloves garlic, minced
1 tbsp. Taco Seasoning
2 c. Shredded chicken
3/4 c. enchilada sauce, divided
1 c. shredded Cheddar
1 c. Shredded Monterey Jack
Chopped fresh cilantro, for garnish

INGREDIENTS
1 package (8.5 oz) corn muffin mix (such as Jiffy)
1 can (14.5 oz) cream-style corn
2 eggs, lightly beaten
1/2 cup milk
1 tsp chili powder
1/2 tsp cumin
2 cups shredded taco cheese blend, divided
1 1/2 cups enchilada sauce
3 cups shredded cooked chicken, from rotisserie chicken
*If using a Taco seasoning pack for your chicken, add a little at a time until its to your liking...
INSTRUCTIONS
Preheat oven to 400 degrees F. Lightly spray a 9×13 inch casserole dish with non stick cooking spray, set aside.
In a large bowl combine the corn muffin mix, cream-style corn, eggs, milk, chili powder, cumin and 1 cup of cheese. Stir till combined then pour into the casserole dish. Bake for 20 minutes.
Remove from oven and use a knife to pierce the cornbread mixture several times all over. Pour the enchilada sauce all over the top of the casserole. Top with the shredded chicken and remaining cheese. Bake for an additional 20 minutes.

I used a 6qt Dutch over or you can use you favorite dish, you can also use banana leaves but tbh I don’t think it mixes too well with the masa it changes the flavor overall, I will definitely use them for more of a chicken or green salsa tho ????
