1 can cream of mushroom soup, condensed
1/2 cup light cream
4 eggs
separated
1 egg white
1 cup chicken :
shredded
Heat soup in a double boiler top while separating the eggs. Beat the egg yolks until thick and lemon-colored. Remove the soup pot and add egg yolks, stirring well. Add chicken. Cool slightly. Beat 5 egg whites until very stiff. Fold into egg yolk mixture. Gently turn the batter into a well-buttered souffle dish and bake at 375 degrees for 30 minutes.

Easy cheesy baked chicken for busy moms! I got this recipe from my great friend Martina! She’s a mom of three and works full-time and this is her go to dish that makes the whole family happy! And bonus it’s a keto thing! Here’s the recipe:
Three large chicken breasts butterfly them and season them with salt and pepper. Make sure they are room temperature and patted dry.
Mixed together: one block of room temperature cream cheese, half a tablespoon of Tony’s creole seasoning, 1 tablespoon of Italian seasoning, 2 tablespoons of sun-dried tomatoes squeezed dry, and a couple of handfuls of baby spinach rough chopped.
Mix together with a spoon and spread a large spoonful over each chicken breast then topped the dish with 2 cups of shredded mozzarella cheese and a sprinkling of pecorino Romano. Pop in the oven at 400° for 30 minutes.

If you are in a hurry you can even use store-bought dough, but making the dough from scratch, whenever this is possible, improves the quality of this recipe.

Ingredients
Makes about 10 servings
Pizza Dough
3 cups (375g) bread flour
1 tsp (5g) salt
10g fresh yeast (or 1 tsp active dry yeast)
1 tsp (5g) sugar
2 tbsp (28ml) olive oil
1 cup (240ml) warm water
Filling
2 cups (300g) chicken, cooked and shredded
1/2 cup (120g) pizza sauce
1 cup (100g) Mozzarella cheese
1/2 cup (50g) Parmesan Cheese
Basil leaves
Topping
1 egg, beaten
Parmesan Cheese, grated
1. Prepare the dough. Stir yeast with sugar until it liquefies. Dissolve in about ¼ cup (60 ml) warm water. In a large bowl mix flour with salt. Add dissolved yeast, oil and gradually ¾ cup warm water. Mix everything together then knead until smooth and pulls away from the sides of the bowl.
2. Place the dough in an oiled bowl, cover with plastic wrap and let it sit for at least 2 hours at room temperature, to let the dough rise until doubled in size.
3. Preheat oven to 400F (200C). Line a baking sheet with parchment paper.
4. Onto a floured surface turn the dough and roll into a 12x16 inch (30x40cm) rectangle.
5. Add mozzarella in a row in the center or edge. In a bowl combine shredded chicken with tomato pizza sauce and spread over the mozzarella. Top with Parmesan cheese and basil leaves.
6. Fold the dough over the filling and roll, seal the edges on all sides.
7. Place it seam side down on the prepared baking sheet.
8. Brush with beaten egg, sprinkle Parmesan cheese and cut slices on top to let the steam escape.
9. Bake for about 30 minutes or until golden brown.
10. Let it cool for about 10 minutes before serving.
