•chicken 1/4 kg
•salt 1/2 tsp
•fajita seasoning 1/2 tbsp
•garlic paste 1 tbsp
•capsicum 1 chopped
•baby corn 1 cup boiled
•onion 1/2 chopped
•cream 3 to 4 tbsp
•Oil 3 to 4 tbsp

Hi, it’s Aviva Goldfarb, and welcome to my kitchen! I love helping busy people eat well. And if you want more ideas like the one I’m going to show you today, make sure and subscribe to the channel because every Wednesday I release a new cooking video. This week, what we have are Mexican chicken packets. So I’m going to show you how to make dinner in a packet that your family will love partially because everybody can have it their own way if they want to.
We are going to make chicken breasts in a packet with some Mexican seasonings and vegetables. And the great thing is that you can put everything in the packet—the vegetables, the seasonings, the chicken—or the fish, if you prefer making it, or even a tofu. And wrap it up in a packet. You can either cook it in the oven or you can cook it on the grill, and then you can just serve it right in a packet, and you have everything together. You can throw some rice or quinoa on the side, too.
So here’s all we’re going to do. First, we’re going to make a combination of spices to rub on the chicken. And for this recipe, I’m using chili powder and garlic powder and cumin. We’re going to rub those on the chicken, and then we’re also going to cut up some bell pepper and some onion to put on the bottom of the vegetables, and you can use whatever vegetables you like. But that’s what we’re going to use for this recipe.
We’re going to put the vegetables on the foil packet and then we’re going to put the chicken on top of the vegetables, and we’re going to pour some chunky salsa on top. Make sure and look for brands of salsa that have no sugar added.
We’re going to bake the chicken for 30 minutes at 350 degrees until it’s just cooked through. You want to be careful with chicken breasts not to cook them or they can get a little dried out. But the salsa is going to help keep it moist. And then we’re going to open up the packets and put some freshly grated cheddar cheese on top. And just close it up for a minute to get that cheese to melt in there. And that is all you have to do to have a delicious dinner for yourself or your family.
Our chicken is cooked—smells so good. By the way, you can also make this recipe in the slow cooker, or you can assemble the packets and bring them on a camping trip. A lot of people like to make packets of food to bring with them camping, and then they can just throw them right on the grill. So let’s see how it came out.
