Creamy Mustard Chicken | The Tastiest Recipe
Learn how to make the most amazingly delicious Creamy Mustard Chicken. This recipe ticks all the boxes with it being easy to make, cheap, and extremely tasty. Ingredients -
2 Tbsp (40ml) - Olive Oil, Divided
2 Tbsp (28g) - Clarified Unsalted Butter
1 - Brown Onion, Diced
5g - Flat Leaf Parsley, Roughly Chopped
4g (5 Sprigs) - Thyme, Roughly Chopped
5 - Cloves of Garlic, Minced, Diced, or Sliced
200g - Streaky Bacon, Diced
1kg (2.2lb) - Chicken Thigh, Boneless & Skinless
80ml - White Wine (Substitute for Vegetable or Chicken Stock)
500ml - Thickened Cream (Pouring Cream/Whipping Cream)
2 1/2 Tbsp (60g) - Dijon Mustard
1/2 Cup (50g) - Parmesan Cheese, Grated
2 Cups (80g) - Fresh Baby Spinach
Seasoning to Taste
Garnish with Grated Parmesan
Garnish with Flat Leaf Parsley
To Serve -
This dish can be eaten on its own or it can be served with rice, pasta, vegetables or with a salad.
Storage -
This can be placed in the fridge for up to 5 days and it can also be placed in the freezer in an airtight container for up to 4 months.
Reheating -
This can be placed in the microwave and heated in bursts to avoid/prevent the cream from splitting or, it can be placed into a pot or pan and heated gently over medium heat.

This Smoked Monterey Chicken recipe has become a family favorite and is perfect for weekly meal prep, with excellent leftovers. It's an easy and delicious barbeque recipe that you can make on your Traeger pellet grill. In this video, we'll show you how simple it is to prepare and cook this mouthwatering chicken. We'll start by warming the smoker to 325 degrees and seasoning the chicken breast with a southwest seasoning like Malcolm's Grande Gringo Mexican Seasoning. Then, we'll use a wireless probe like the MEATER Block to monitor the internal temperature as the chicken cooks for about 20-25 minutes. Once the temperature reaches 160 degrees, we'll glaze the chicken with our favorite BBQ sauce and add toppings like bacon crumbles, Monterey Jack cheese, cheddar cheese, and black olives. Grilled Monterey Chicken
This is my version of the classic Chili’s Monterey Chicken recipe where I cook the chicken on the grill instead of stove top and does it ever make a difference! BBQ sauce, bacon, and peppers instead of tomatoes, make this Grilled Monterey Chicken a dinner your whole family will love.

Ingredients
4 chicken breasts boneless skinless (See Note 1)
1 tbsp olive oil
1/4 tsp chili powder
1/4 tsp garlic powder
1/8 tsp kosher salt
1/8 tsp black pepper
4 slices bacon sliced
1 cup BBQ sauce
4 slices Monterey Jack cheese
1/2 cup diced red bell pepper
2 green onions chopped (green parts only)
Instructions
Cut the green onion tops and red bell pepper into dice. Set aside.
Slice bacon into small 1/4 pieces. In a skillet over medium heat cook bacon until crispy. Set aside to drain on a paper towel. (See Note 2)
In a small bowl mix together the chili and garlic powders with the salt and pepper. Rub oil on chicken and press spices on both sides. Set aside.
Preheat grill to 350°F. Clean grill grates. Place chicken on grill, baste with BBQ sauce and cook for 4 minutes. Turn, baste with BBQ sauce and cook another 4 minutes and continue cooking until it reaches an internal temperature of 165°F depending on thickness of chicken. Brush again with BBQ sauce.
Place a slice of cheese on each breast and top with half of the bacon.
Close the grill and let the cheese melt, about 1 minute.
Serve with remaining bacon, green onion and red bell pepper sprinkled on top.
Notes
Pound the chicken breasts to about 3/4 to get as even as possibly for even grilling. Or if really large, slice horizontally.
Save that bacon fat, it's liquid gold! I use it to fry potatoes and other foods to add that extra flavor punch. I store it in a resealable jar in the refrigerator after cooling.

Fajita Stuffed Chicken
INGREDIENTS
4 large chicken breasts
2 medium bell peppers, green and red, sliced
1 large red onion, sliced
4 oz. Cream cheese
1 cup pepper Jack cheese (can use Monterey Jack or mozzarella)
2-3 garlic cloves, minced
Lime wedges
Cilantro to garnish
Avocado oil
Fajita Seasoning
1 tsp chili powder
2 tsp smoked paprika
1 tsp onion powder
1/2 tsp garlic powder
1 tsp ground cumin
1/2 tsp cayenne pepper
1 tsp kosher salt

Monterey Chicken
Ingredients:
2 chicken breasts sliced in half to make 4
8 slices of bacon
1 container of mushrooms
1 onion
1 clove garlic
BBQ sauce
Your favorite seasonings
1 pkg Colby jack cheese
Directions:
1. Cook bacon, I like to chop mine but you can leave it whole. I find that if you chop the bacon the chicken cuts easier without all the toppings sliding off.
2. Remove bacon from pan once cooked and drain on a paper towel.
3. Into bacon drippings add onions, mushrooms and garlic and soften.
4. Remove them from pan and put into a bowl and set aside.
5. Slice your 2 chicken breasts in half to make 4 thinner breasts.
6. Season on both sides with your favorite seasonings. I like to use a southwest seasoning.
7. Cook chicken breasts in the same pan you cooked everything else. Cook for 7 minutes on each side. They will not be cooked all the way through.
8. Place chicken breasts on a foil lined cookie sheet.
9. Top with your favorite bbq sauce. Spread evenly over the top.
10. Add mushrooms and onions, dividing them evenly over the chicken breasts.
11. Add the bacon, either 2 slices criss crossed on each chicken breast or distribute the bacon pieces over the breasts evenly.
12. Put a good handful of cheese on top of each breast covering the toppings.
13. Place in a 400° oven for 20 minutes.
14. Garnish with chopped tomatoes and green onions.
15. Enjoy!
