Kardea's Country-Fried Steak with Gravy

Ingredients
White Gravy:
2 tablespoons bacon drippings
2 tablespoons unsalted butter
2 cloves garlic, minced
1/4 cup all-purpose flour
3 cups half-and-half
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
Country-Fried Steak:
2 pounds cube steak, or boneless chuck steaks pounded to 1/4-inch thick
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cups all-purpose flour
2 tablespoons Miss Brown’s House Seasoning, recipe follows
1 cup whole milk
2 large eggs
Vegetable oil, for frying
Chopped fresh curly parsley, for garnish
Miss Brown’s House Seasoning:
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons sweet paprika
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
Directions
Special equipment: a deep-fry thermometer
For the gravy: Melt the bacon drippings and butter together in a saucepan over medium heat. Add the garlic and cook until softened, about 30 seconds. Whisk in the flour and cook until foamy. Whisk in the half-and-half and cook, stirring frequently, until the mixture thickens, about 4 minutes. Whisk in the mustard and season with salt and pepper. Set aside and keep warm.
For the country-fried steak: Sprinkle the steaks with the salt and pepper. Combine the flour and House Seasoning in a shallow dish. Whisk together the milk and eggs in a separate shallow dish. Dredge the steaks in the flour mixture and shake off the excess. Dip in the milk mixture and then in the flour mixture again, pressing to coat well. Place the coated steaks on a rimmed baking sheet.
Pour enough oil into a large cast-iron skillet to reach 1 inch up the sides. Heat to medium-high heat (about 350 degrees F).
Fry the steaks, in batches, until golden brown and crispy, 3 to 4 minutes. Drain on paper towels.
To serve, spoon the gravy on each serving of steak. Sprinkle with the parsley before serving.
Miss Brown’s House Seasoning:
Yield: about 3 tablespoons
Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

Chicken Fried Steak

Ingredients
2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup all-purpose flour
3 whole eggs, beaten
1/4 cup vegetable oil
2 cups chicken broth
1/2 cup whole milk
1/2 teaspoon fresh thyme leaves
Directions
Preheat oven to 250 degrees F.
Cut the meat with the grain into 1/2-inch thick slices. Season each piece on both sides with the salt and pepper. Place the flour into a pie pan. Place the eggs into a separate pie pan. Dredge the meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Once tenderized, dredge the meat again in the flour, followed by the egg and finally in the flour again. Repeat with all the pieces of meat. Place the meat onto a plate and allow it to sit for 10 to 15 minutes before cooking.
Place enough of the vegetable oil to cover the bottom of a 12-inch slope-sided skillet and set over medium-high heat. Once the oil begins to shimmer, add the meat in batches, being careful not to overcrowd the pan. Cook each piece on both sides until golden brown, approximately 4 minutes per side. Remove the steaks to a wire rack set in a half sheet pan and place into the oven. Repeat until all of the meat is browned.
Add the remaining vegetable oil, or at least 1 tablespoon, to the pan. Whisk in 3 tablespoons of the flour left over from the dredging. Add the chicken broth and deglaze the pan. Whisk until the gravy comes to a boil and begins to thicken. Add the milk and thyme and whisk until the gravy coats the back of a spoon, approximately 5 to 10 minutes. Season to taste, with more salt and pepper, if needed. Serve the gravy over the steaks.

Chicken Fried Steak Recipe with Homemade Gravy
You will absolutely love this tender delicious breaded chicken fried steak recipe with homemade gravy that comes together in 30 minutes.
Chicken fried steak is thinly sliced cubed steak that is battered and fried in oil and is then served with a simple milk-based gravy. The history of this recipe is a little bit murky, but to tie things together you are essentially taking a fried chicken batter and applying it to steak.
Ingredients for this recipe:
For the Steak:
• 2 eggs
• ½ cup whole milk
• 2 dashes hot sauce
• 1 cup all-purpose flour
• ½ cup corn starch
• 1 teaspoon paprika
• 1 ½ teaspoons onion granules
• 1 ½ teaspoons garlic granules
• ½ teaspoon pepper
• 1 ½ teaspoons sea salt
• 8 cube steaks
• sea salt and pepper to taste
• 1 cup cooking oil
For the Gravy:
• 4 tablespoons unsalted butter
• 6 tablespoons all-purpose flour
• 4 cups whole milk
• sea salt and pepper to taste
Serves 8
Prep Time: 10 minutes
Cook Time: 20 minutes
Procedures:
1. Steak: In a bowl whisk together the eggs, milk, hot sauce, salt, and pepper until combined.
2. In a separate bowl whisk together the flour, corn starch, paprika, onion granules, garlic granules, pepper, and 1 ½ teaspoons of sea salt until combined.
3. Next, add 1 cube steak to the bowl with the whisked eggs and milk and completely coat.
4. Transfer the egg-washed steak to the bowl with seasoned flour and dredge to completely coat on each side. Place on a cookie sheet tray lined with parchment paper and repeat until all of the steaks have been breaded.
5. Add the breaded steak 2 or 3 at a time to a large frying pan over medium to medium-high heat, or at 350°, and cook for 1 ½ to 2 ½ minutes per side or until browned and cooked through.
6. Drain on paper towels or a cookie sheet tray with a rack. Repeat the process until all of the steaks have been cooked.
7. Gravy: In a medium-size saucepot over low heat add in the butter until melted and then whisk in the flour until completely combined.
8. Pour in the milk while constantly whisking and turn the heat to medium-high until nappe, or very thick.
9. Finish the gravy with salt and pepper and serve with the chicken fried steak.
10. Serve with optional garnishes of chopped green onions and parsley.
Chef Notes:
Make-Ahead: This recipe is meant to be eaten as soon as it is finished cooking.
How to Reheat: To reheat the steak, place it on a rack on a cookie sheet tray and bake at 350° for 4-5 minutes or until crisp and warm. If reheating the steak from the freeze, bake on a cookie sheet tray lined with parchment paper at 350° for 12-15 minutes. Heat the gravy in a small saucepot over low heat until warmed. You can also heat both of these in a microwave until warm.
How to Store: Cover and keep in the refrigerator for 3 days. This will freeze covered for up to 2 months. Go straight from the freezer to the oven when reheating.

This CHICKEN FRIED CHICKEN is comfort food at it’s best, your family will run to the table for it, lol! Well I always did, it’s just that good. This is one hearty meal that I think everybody loves because it’s definitely a stick to your ribs kind of meal. I pick out boneless chicken breasts, but you can use thighs if you prefer, I slice the breast in half lengthwise then pound them fairly thin about 1/2 inch or so because you don’t want them so thick that they don’t cook well from the center. You want them to cook evenly so it’s important that they are uniform in size, I love to side them with mashed potatoes and a good veggie, I picked green beans. You want to make sure that your meat is dry before breading it if you want your coating to stick well. Gravy will complete this amazing chicken fried chicken, and mine is a winner. I hope you give this recipe a try.❤️

1 Boneless chicken breast (about 3/4 lb)
about 1/2 inch thick
3/4 C. All purpose flour
3/4 tsp onion powder
3/4 tsp garlic powder
1/4 tsp cayenne pepper (optional)
1/4 tsp Baking powder
1/4 tsp Baking soda
1 tsp parsley flakes
1 tsp Paprika
Pepper to your liking
Salt (about 1/2 to 3/4 tsp) you decide
1 C. Vegetable oil
EGG MIXTURE _______________
1 large egg
3/4 C. Buttermilk
GRAVY____________________
2 Tbsp Bacon grease
2-3 Tbsp flour mixture used for breading (i used 3 Tbsp)
2 C. Milk
Salt to your liking
Pepper to your liking
