Ingredients for Restaurant Style Chicken Gravy:
- Chicken, curry cut pieces with bones- 500 gms
- Onions, chopped- 2 medium
- Ginger Garlic paste- 2 tsp
Cashew-Red Chilli-Tomato paste:
- Cashew nuts- 10
- Whole red chillies- 5-6
- Red ripe tomatoes-2 medium
Powders:
- Turmeric powder- 1/2 tsp
- Red Chilli Powder- 1 tsp
- Coriander powder- 2 tsp
- Garam Masala Powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Kasuri Methi (Fenugreek Leaves)- 1 tsp (roasted and crushed)
- Oil- 4 tbsp
- Salt- 1 tsp
Preparation:
- Chop the onions and quarter the 2 red tomatoes
- Dry roast the cashew nuts and the red chillies in a pan on low heat for 2-3 mins. Set aside to cool. Coarse grind first and then add the quartered tomatoes. Continue to blend it into a smooth paste.
- Dry roast the fenugreek leaves in a pan, allow it to cool and then crush lightly with your hand.
Process:
- Heat oil in a pan/kadai.
- Add the chopped onions and fry on medium heat for 5-6 mins till translucent.
- Now add the Ginger garlic paste and fry for 2 mins on low heat.
- Add turmeric, red chilli and coriander powders and mix it well. Fry it on low heat for 2-3 mins after adding a splash of water.
- Now add the chicken pieces, mix well and fry it on medium heat for 5-6 mins till the chicken is browned well.
- Add the salt and mix it well.
- Now add the cashew-red chilli-tomato paste, mix well and fry for 5-6 mins on medium heat till oil separates.
- Add the Garam Masala Powder, mix and cook for 1 min.
- Add 200 ml water, mix and cover & cook for 15 mins.
- Remove the lid and add Kasuri Methi, mix and simmer for around 2 minutes.
- Serve with chapati or rice.

Chicken Changezi Recipe Restaurant Style | Changezi Chicken Curry | Chicken Changezi | Chicken Changezi Recipe | Changezi Chicken | How To Make Chicken Changezi | Chicken Curry | Chicken Recipe
Ingredients for Chicken Changezi:
- Chicken, large pieces with bones- 1 kg
For the Marination:
- Salt- 2 tsp
- Red Chilli Powder- 2 tsp
- Ginger Garlic paste- 2 tbsp
- Lemon Juice- 2 tsp
- Whisked Curd/Yogurt (thick) - 6 tbsp (120 ml)
Onion-Cashew Paste:
- Onion, sliced- 2 medium onions (around 160 gms)
- Cashew nuts- 16
Spice Powders:
- Red Chilli Powder- 2 tsp
- Kashmiri Chilli Powder- 2.5 tsp
- Coriander Powder- 3 tsp
- Garam Masala Powder- 1 tsp
Other Ingredients:
- Ginger Garlic Paste- 2 tsp
- Readymade Tomato Purée- 8 tbsp
- Room temperature Cow Milk - 150 ml
- Fresh Cream-4 tbsp
- Chaat Masala- 1 tsp
- Kasuri Methi, dry roasted and powdered- 2 tsp
- Oil or ghee- 3 tbsps + 2 tbsps for frying the chicken
- Salt for seasoning- 1/2 tsp
Preparation:
- Marinate the chicken pieces with ingredients specified and set it aside for 30 mins.
- Slice the onions.
- Now take a pan, heat 1.5 tbsp oil and add the sliced onions. Fry on medium heat for around 8-10 mins till light brown in color and then add the cashew nuts. Mix and continue to fry on medium heat for another 1-2 mins. The onions should not become too dark in colour.
- Now set aside, cool and grind it to a paste by adding around 2-3 tbsp water.
- To fry the chicken pieces, heat 2 tbsp oil in a large frying pan and place the marinated chicken pieces side by side without the extra marinade. Fry on high to medium high heat for 3 mins and then flip the pieces. Continue to fry on high to medium high heat on this side for 3 mins. Fry for another 2 mins on medium heat on each side till uniformly browned.
- Use readymade tomato purée/paste for this recipe. If not available, blend 2 medium sized red tomatoes and use that instead.
- Use boiled milk cooled to room temperature.
- Dry roast the Kasuri Methi (Fenugreek Leaves) and crush it with your hands when cooled.
Process:
- Heat oil in a pan and add the ginger garlic paste.
- Fry on low heat for 2 mins and then add the tomato purée.
- Give a mix for a minute and then add the Onion-Cashew Paste.
- Mix and fry on medium heat for 4-5 mins till oil separates.
- Add all the Spice Powders and 1/2 tsp salt and cook on medium heat for 3-4 mins till oil separates.
- Now switch off heat and add the room temperature milk (boiled and cooled) and give a mix. Switch on heat.
- Keep stirring for 3-4 mins on low to medium low heat till it’s cooked and oil separates.
- Now add the fried chicken pieces and mix it well.
- Keep mixing and frying the chicken pieces on medium heat for 3-4 mins till oil separates.
- Now add 250 ml water, give a mix and cover and cook on low heat for 15 mins till meat is cooked and oil separates.
- Now add the cream, chaat masala and dry roasted Kasuri Methi.
- Mix and cook on low heat for 2-3 mins.
- Serve with roti, naan or rice.

1) Tuscan Chicken. Cooked with a creamy garlic sauce with sundried tomatoes. I’m yet to find a chicken lover who didn’t go crazy for this recipe. It’s relatively simple to make using regular ingredients, and it’s also a complete meal. Made with spinach, sundried tomatoes, cannellini beans in a delicious creamy sauce, in 30 minutes, wow!
It’s not authentic to Tuscany, this is my version, but it does contain many of the delightful Tuscan ingredients we all love. This recipe uses chicken breasts, you can however use chicken thighs if that’s your preference. If using breasts, you want them to be juicy and not dry. To achieve this, don’t over cook them in the pan, simply brown each side on high heat. When you touch them, they should still feel soft inside. Transfer to the oven and finish cooking at a low temperature. As soon as they become just firm to the touch, they are ready. If your sauce isn’t quite ready, take them out anyway. You will reheat them in the sauce. Some pieces will be thicker than others, so take that into consideration.

A sweet and sour spicy fried chicken that will send your palate to heaven. There’s a few steps involved but it’s relatively easy to make, the extra effort is well worth it. There’s never enough so maybe double the amount.
5) Garlic and Oregano Chicken. In a mushroom and cream sauce.

An incredibly tasty chicken meal made under 30 minutes using few basic ingredients.
The chicken is coated in smoked paprika then sautéed until brown. The sauce is of course the hero of this dish, creamy with garlic and oregano.
Use a home made chicken stock if you can, otherwise stock cubes will still do the trick. You can use your favourite mushrooms or even a variety for extra deliciousness. Use a good quality heavy or thickened cream for a rich tasty result. Enjoy Garlic and oregano chicken in mushroom cream sauce.
