Creamy chicken and rice is so satisfying and a one-pot meal! This chicken and rice recipe has all the creaminess of risotto and heartiness of plov. Perfect for lunch or dinner!

INGREDIENTS FOR Creamy Chicken and Rice:
►1/4 cup olive oil
►4 Tbsp unsalted butter, divided
►1 med onion, finely diced
►2 large carrots, grated or cut into matchsticks
►1 1/2 lbs boneless, skinless chicken thighs,
►2 tsp salt (we used sea salt), divided
►1/4 tsp black pepper, freshly ground
►2 bay leaves, optional
►1 cup dry white wine such as Chardonnay
►5 cups hot low sodium chicken broth
►2 cups medium-grain rice such as Jasmine rice
►1 head garlic
►1/3 cup fresh Italian parsley, finely chopped
►1/2 cup shredded parmesan cheese, plus more for serving

ONE POT CHICKEN AND RICE | EASY CHICKEN RICE RECIPE | ONE PAN CHICKEN RICE
One Pot Chicken and Rice | Easy Chicken Rice Recipe | One Pan Chicken Rice | Chicken and Rice Casserole | Chicken Rice Bowl Recipe | One Pot Meals | Chicken Rice Recipe
Ingredients for One Pot Chicken Rice:
- Boneless Chicken pieces- 500 gms
- Basmati Rice- 2 US cups measure (375-400 gms)
For Marination:
- Turmeric Powder- 1/4 tsp
- Red Chilli Powder- 1.5 tsp
- Whisked Curd/ Yogurt- 4 tbsp
- Salt- 1 tsp
Whole Spices:
- Star Anise- 2
- Whole Black Peppercorns- 10-12
- Bay Leaves- 2
Spice Powders:
- Coriander Powder- 2.5 tsp
- Garam Masala Powder- 1 tsp
Other Ingredients:
- Onions sliced- 2 (150 gms)
- Green Chillies slit- 2-3
- Ginger Garlic paste- 2.5 tsp
- Coriander leaves, chopped- 4 tbsp +1 tbsp for garnish
- Mint leaves, chopped- 2-3 tbsp
- Salt- 1 tsp
- Refined Oil- 3- 4 tbsp
- Thick Coconut milk- 100 ml
- Water- 500 ml
Preparation:
- Marinate the chicken pieces with items mentioned and set aside for 30 mins.
- Also wash and soak the Basmati Rice for 30 mins.
- Slice the onions, slit the green chillies and chop the coriander & mint leaves.
- Prepare the coconut milk or use readymade.
Process:
- Heat 2 tbsp oil in a pan and place the marinated chicken pieces side by side. Sear the pieces on high to medium heat for 3 mins till browned. Flip on the other side and repeat the same for 3 mins on the other side. Remove and set aside on a plate.
- Add another tablespoon oil to the same pan and heat it.
- Add the whole spices, give a stir and add the sliced onions. Fry on medium heat for 5-6 mins till light brown in color.
- Add the ginger garlic paste and fry on low heat for 2 mins.
- Add the fried chicken pieces back to the pan and stir fry for a minute.
- Now add the coriander powder and Garam masala powder. Mix and fry on low heat for 2 mins till the chicken pieces are coated with the masala.
- Now add 100 ml coconut milk & 500 ml water and give a mix.
- Keep the heat on high and add slit green chillies, chopped coriander & mint leaves and 1 tsp salt.
- Give a stir and wait for the water to come to a boil.
- Add the drained rice to the boiling water and give a gentle stir. Cook the rice on medium heat for 5 mins.
- Again give a gentle stir, reduce the heat to low and cover & cook on low heat for 5 mins.
- Remove the lid, give a gentle stir and cover and cook on low heat for another 5 mins.
- Once done, garnish with chopped coriander leaves and let it rest for 15-20 mins before serving.

Chicken & Rice ????
2 lbs chicken thighs
Season with:
1/2 tsp cardamom, all spice
1 tsp paprika, turmeric
Salt to taste
1 lemon
2 Tbsp oil of choice
1.5 cups basmati rice
Add chicken stock amount according to the rice packet direction
2 Tbsp butter
1/2 onion & bell pepper
1 Serrano or jalapeño
3-4 cloves minced garlic
Seasonings: 1/2 tsp all spice, cardamom
1 tsp turmeric, paprika
Salt to taste (depending on how salty stock is)
Top with diced cucumbers and tomatoes that are tossed with a bit of oil, lemon juice, and salt

Superior Chicken & Rice ????
2 cups basmati rice
3 cups stock or water (add more salt if water)
4 chicken thighs
1 Tbsp olive oil
Seasonings:
1 tsp chili powder, paprika, garlic, onion
1/2 tsp rosemary, thyme, oregano
Salt to taste
Cook the chicken thighs 1/2 way through, remove them and add the rice. Add your stock or liquid and re add the chicken. Adjust for salt at this time!
Bring everything to a boil, cover and
cook for 20 minutes or until chicken is cooked through!
Finishing touches:
Chop everything as fine as you want!

Sun dried tomatoes
Jalapeño
Mint
Arugula
Feta cheese
HOW TO MAKE THE BEST ONE POT CHICKEN RICE
Ingredients:
Chicken Marinate
½ kg boneless chicken
½ tsp salt
2 tbsp plain yogurt
1 tsp ginger paste
1 tsp garlic paste
¼ tsp turmeric
½ tsp red chili
One Pot Preparation
3 tbsp cooking oil
½ cup sliced onion
2 bay leaves
¼ tsp ginger paste
1 ½ cup-soaked basmati rice
1 tsp salt
1 ½ cup hot coconut milk
1 cup hot water
½ tsp garam masala
1 ½ tbsp fresh coriander
1 tsp ghee
Instructions:
1. Mix the chicken pieces with salt, yogurt, ginger paste, garlic paste, turmeric, and red chili
2. Saran wrap and marinate for 15 minutes
3. Place the chicken in a pot with cooking oil and cook until brown for 10-12 minutes on low-medium heat
4. Remove the chicken pieces, add sliced onions, splash of water, bay leaves, ginger paste and rice that has been soaked for 30 minutes
5. Pour hot coconut milk and hot water
6. Place the chicken back into the pot
7. Cook for 10-15 minutes on low-medium heat with the lid on
8. Sprinkle garam masala, chopped coriander leaves, and ghee
9. Give it one last stir before serving
10. Ready to Enjoy!
