How To make Chicken & Rice
2 lg Chicken breasts [boneless
-skin on or off] 1 cn Cream of chicken soup
1 cn Cream of celery soup
1 cn Cream of mushroom soup
1 cn (soup can full) rice [do
-not use minute rice] 3/4 cn (soup can) milk
1/8 ts Salt
1/4 ts Pepper
1) Mix the soups, milk and the rice, and pour into a 9"x13" baking
pan 2) Split the chicken breasts into 4 equal parts and place them on
top of the soup mix... Season with the salt and pepper and whatever else you prefer... 3) Bake in a 300=F8 oven for 2 hrs... garnish as desired and serve...

Season with:
1/2 tsp cardamom, all spice
1 tsp paprika, turmeric
Salt to taste
1 lemon
2 Tbsp oil of choice
1.5 cups basmati rice
Add chicken stock amount according to the rice packet direction
2 Tbsp butter
1/2 onion & bell pepper
1 Serrano or jalapeño
3-4 cloves minced garlic
Seasonings: 1/2 tsp all spice, cardamom
1 tsp turmeric, paprika
Salt to taste (depending on how salty stock is)
Top with diced cucumbers and tomatoes that are tossed with a bit of oil, lemon juice, and salt

Ingredients for One Pot Chicken Rice:
- Boneless Chicken pieces- 500 gms
- Basmati Rice- 2 US cups measure (375-400 gms)
For Marination:
- Turmeric Powder- 1/4 tsp
- Red Chilli Powder- 1.5 tsp
- Whisked Curd/ Yogurt- 4 tbsp
- Salt- 1 tsp
Whole Spices:
- Star Anise- 2
- Whole Black Peppercorns- 10-12
- Bay Leaves- 2
Spice Powders:
- Coriander Powder- 2.5 tsp
- Garam Masala Powder- 1 tsp
Other Ingredients:
- Onions sliced- 2 (150 gms)
- Green Chillies slit- 2-3
- Ginger Garlic paste- 2.5 tsp
- Coriander leaves, chopped- 4 tbsp +1 tbsp for garnish
- Mint leaves, chopped- 2-3 tbsp
- Salt- 1 tsp
- Refined Oil- 3- 4 tbsp
- Thick Coconut milk- 100 ml
- Water- 500 ml
Preparation:
- Marinate the chicken pieces with items mentioned and set aside for 30 mins.
- Also wash and soak the Basmati Rice for 30 mins.
- Slice the onions, slit the green chillies and chop the coriander & mint leaves.
- Prepare the coconut milk or use readymade.
Process:
- Heat 2 tbsp oil in a pan and place the marinated chicken pieces side by side. Sear the pieces on high to medium heat for 3 mins till browned. Flip on the other side and repeat the same for 3 mins on the other side. Remove and set aside on a plate.
- Add another tablespoon oil to the same pan and heat it.
- Add the whole spices, give a stir and add the sliced onions. Fry on medium heat for 5-6 mins till light brown in color.
- Add the ginger garlic paste and fry on low heat for 2 mins.
- Add the fried chicken pieces back to the pan and stir fry for a minute.
- Now add the coriander powder and Garam masala powder. Mix and fry on low heat for 2 mins till the chicken pieces are coated with the masala.
- Now add 100 ml coconut milk & 500 ml water and give a mix.
- Keep the heat on high and add slit green chillies, chopped coriander & mint leaves and 1 tsp salt.
- Give a stir and wait for the water to come to a boil.
- Add the drained rice to the boiling water and give a gentle stir. Cook the rice on medium heat for 5 mins.
- Again give a gentle stir, reduce the heat to low and cover & cook on low heat for 5 mins.
- Remove the lid, give a gentle stir and cover and cook on low heat for another 5 mins.
- Once done, garnish with chopped coriander leaves and let it rest for 15-20 mins before serving.

SIMPLE AND EASY CHICKEN PULAO | INDIAN CHICKEN RICE BOWL RECIPE
Ingredients for Chicken Pulao:
- Chicken, big pieces with bones - 500 gms
For marination:
- Salt- 1 tsp
- Turmeric powder- 1/4 tsp
- Lime juice- 1 tsp
- Rice- 2 cups (around 400 gms)
- Onion, sliced- 2 medium
- Fried onions (birista)- 1 medium
- Tomato, sliced- 1 medium
- Mint leaves- 15-20 leaves
For the green paste:
- Ginger, chopped- 1 inch
- Garlic- 5 cloves
- Coriander leaves- 1/2 cup
- Green chillies, cut into pieces- 5
Whole spices:
- Shahjeera- 1/2 tsp
- Bay leaves- 2
Other ingredients:
- Coriander powder- 1 tsp
- Garam Masala powder- 1.25 tsp (Link to our Garam Masala Recipe:
- Refined oil- 3 tbsp
- Salt- 1.5 tsp
Preparation:
- Clean and wash the chicken pieces. Marinate it with the items indicated. Set aside for around 30 mins.
- Prepare a coarse paste with the items indicated for the green paste. Set aside.
- Wash and soak the rice for 30 mins.
Process:
- Heat oil in a heavy bottom pan and add the Shahjeera & Bay leaves.
- Once it splutters, add the sliced onions and fry on medium heat for 7-8 mins till the onion starts becoming brown.
- Add the sliced tomato and a pinch of salt and fry on medium to low heat for 3-4 mins till soft.
- Now add the marinated chicken and fry on high heat for 4-5 mins.
- Add the green masala paste, coriander powder and Garam masala powder
- Fry on medium heat for 4-5 mins by adding a splash of water.
- Add the mint leaves and continue to fry it for another 3 mins on low heat.
- Add the soaked & drained rice and mix & fry for around 2 mins.
- Now add 3 cups water (or 4 cups/double the water based on the type of rice used).
- Give a mix and add 1.25 tsp salt. Bring it to boil, cover & cook on low heat for 15-20 mins giving a mix once after 5 mins.
- Sprinkle the fried onions on top and allow to rest for 30 mins before serving.
