How To make Chicken & Oyster Casserole
1 lg Fryer (about 3 lbs.), cut up
1/4 c All-purpose flour
1 1/4 ts Salt
1/4 ts White pepper
2 tb Shortening
1/2 c Boiling water
1/2 c Heavy cream
18 Oysters
2 tb Toasted slivered blanched
-almonds Reserve back, wings, and neck of chicken for later use. Wash remaining pieces and dry. Dredge with flour mixed with 1/2 teaspoon salt and 1/8 teaspoon pepper. Brown on all sides in hot fat. Remove to 2-quart casserole. Add boiling water, cover, and bake in preheated moderate oven (350 F.) for 1 hour, or until tender. Add cream, remaining salt and pepper, and the oysters. Cover and bake for 10 minutes longer. Sprinkle with almonds and serve at once with hot baking powder biscuits, if desired. Makes 4 servings. Amazing Chicken Casserole Recipe
My chicken casserole recipe is exclusively Chinese in style using many Chinese spices. The total preparation and cooking time for this chicken casserole recipe is about 30 minutes.
????Ingredients:
❣️500g Chicken thighs with bone
❣️2 big potatoes
❣️250g mushrooms (shitake mushrooms are the best, others are also fine)
❣️1 green bell pepper
❣️1 red bell pepper
❣️1 medium size onion
❣️3 tablespoons of olive oil
????Seasonings:
❣️1 tablespoon of sugar
❣️1 tablespoon of Sichuan broad bean chili paste
❣️1 tablespoon of Oyster sauce
❣️1 tablespoon of light color soy sauce
❣️1 tablespoon of dark color soy sauce
❣️1 tablespoon of rice cooking wine
❣️Quarter teaspoon of white pepper powder
❣️Quarter teaspoon of salt
????Preparation:
• Trim off the excess skin and fat from the chickens
• Peel off the potato skins and cut them into 3cm size chunks
• Cut the green, red bell pepper, onion, and mushroom all into 3cm pieces
• Mix all the seasonings except sugar in a bowl
????Cooking steps:
• heat up a casserole pot at low heat, and add the olive oil and sugar, do not stir, just wait until the sugar is caramelized, and the colour turns to light brown.
• Add:
o The chickens in the pot, skin side down, fry until both sides golden brown
o the mixed seasonings in the pot
o the onion, mix well
o 150ml hot water, cover the lid, and cook for 6 minutes at medium heat
o the potatoes and cover the lid and cook for 8 minutes
o the mushroom and cover the lid and cook for 3 minutes
o the peppers and cover the lid and cook for another 3 minutes
• Turn off the heat, take out, and serve with rice or bread.

Chinese Chicken Stew 中式炖鸡
Ingredients:
3 - 4 pax

4 chicken drumsticks (~600g or 21.16 oz in total)
2 red onions (cut into quarters)
4 potatoes (cut into chunks)
400g or 14.1 oz carrots (cut into chunks)
Enough water to cover the drumsticks
0.5 teaspoon salt
2 tablespoons light soy sauce
2 tablespoons oyster sauce
2 tablespoons premium dark soy sauce
Add more salt to taste (we added 1 teaspoon)
Some cornstarch solution
1 tablespoon sesame oil
