INGREDIENTS
FOR THE PASTA
3 lbs (1362 g) ground beef 85/15
1 medium (200 g) onion
2 cup (200 g) shredded carrots
10 tbsp (150 g) tomato paste
1 tsp (4 g) garlic powder
1 tsp (4 g) chili powder
2 tbsp (10 g) oat flour wheat flour is fine
4 cups (960 ml) vegetable broth
3 cups (730 ml) milk 2%
1 lb (454 g) brown rice penne Any pasta will work. I use Trader Joes Brown Rice Penne
1 cup (112 g) cheddar cheese shredded
6 cups (180 g) spinach
Salt and pepper to taste
FOR THE BROCCOLI
6 cups (1020 g) broccoli 1-2 bunches
3 tbsp (44 g) olive oil
Salt and pepper to taste
INSTRUCTIONS
FOR THE PASTA
Heat a large pot over medium high heat and add in the ground beef to brown.
Cut the onion and carrots into a small dice. Cut the spinach into smaller pieces to break up the leaves. I use shredded carrots to make the chopping easier but regular carrots also work.
Once the beef has browned, add in the onion and carrots and cook for 4-5 minutes.
Add in the tomato paste, vegetable broth, milk, oat flour, chili powder, and garlic powder. Stir to incorporate and raise the heat to bring to a boil.
Once the pot has begun to boil, add in the pasta, reduce the heat to low and cover. Cook for 7-10 minutes or until the noodles have softened. Cook times will vary depending on the type of pasta you use.
If you find that there is still a lot of liquid remaining in the pot, remove the lid and allow some of the liquid to boil off.
Add the cheese and spinach to the pot. Season with salt and pepper to taste.
FOR THE BROCCOLI
Preheat your oven to 450°F.
Wash and cut your broccoli into florets. Toss in 3 tbsp of olive oil. Spread the broccoli on to a couple of sheet pans.
Cook the broccoli for 10 minutes then remove from the oven and turn. Cook for an additional 5-7 minutes.
PLATING
This recipe makes 10 servings. Divide your ingredients evenly between 10 containers.
