Cheesy Traditional Squash Casserole
6 tablespoon butter (divided)
5 medium yellow squash, sliced ¼-inch thick (about 7 cups)
1 medium yellow onion, chopped
Salt, to taste
Pepper, to taste
2 eggs
½ cup mayonnaise
½ cup milk
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 sleeve Saltine crackers, crumbled
½ cup grated Parmesan cheese
Melt 3 tablespoons of butter in a large skillet over medium-high. Add the squash and onion. Season lightly with the salt and pepper. Cook until the squash is tender, about 10 minutes, stirring occasionally. Cover with a lid for a faster cooking time.
Remove from the heat and drain the squash and onion well using a colander, for a few minutes.
Meanwhile, in a bowl whisk together the eggs, mayonnaise, milk, and cheeses.
Lightly stir the squash mixture and wet mixture together. Scrape into a 12-inch buttered Dutch oven or 9 x 13-inch casserole dish.
Sprinkle the top with the crumbled crackers followed by the Parmesan cheese. Evenly pour the remaining 3 tablespoons of butter (melted) on on top.
Bake until the casserole sets up and is lightly browned on top. For inside baking: 350 degrees F for about 25 minutes. Serve warm.
Tip: if you using Ritz crackers for the topping, use about 2 sleeves.

1/3 cp milk
REGULAR CORN BREAD
2 cups corn Meal
1 egg
½ c milk
¼ c water
1 tbs olive oil
1 onion chopped.
2 squashes chopped.
2 zucchinis chopped.
8 oz sharp cheddar
8 oz gouda cheese
1 stick butter
Salt and pepper to taste.
1 tsp roasted garlic paste.
1 tbsp garlic powder
1 tbsp onion powder
1 tsp celery seeds
1 ½ tsp sage
1 Goya chicken, bouillon powder
3 eggs
2 ½ cups chicken broth
1 tsp smoked paprika.

Forever we’ve referred to it as a vegetable – and to be honest, will continue to do so. But no matter what category it falls under – fruit or vegetable – it is one of our summertime favorites. Squash is great grilled or roasted, but we can’t resist a good casserole recipe. Who can resist a cheesy baked casserole sprinkled with buttery cracker crumbs?

⭐️GREEN BEAN CASSEROLE
INGREDIENTS
4 medium (1 1/2 lbs / 680 g) yellow squash sliced 1/4 inch thick
6 oz (170 g) smoked bacon diced (optional)
1 small onion diced (128 g)
1/4 tsp salt
1/2 tsp black pepper
1/4 cup (59 mL) water
1 large egg
1/4 cup (57 g) mayonnaise
6 oz (200 mL) heavy cream
4 oz sharp cheddar cheese (shredded)
1 oz (28 g) grated parmesan cheese
(divide parmesan between cream mixture and topping)
20 Ritz crackers crushed
2 Tbsp (28 g) unsalted butter melted
**extra butter to grease baking dish
- In a cold pan add diced bacon, then turn on heat to cook
- Once bacon is cooked, remove rendered bacon grease
- Now add small diced onion to same pan with bacon and sauté until softened
- Add sliced yellow squash, 1/4 tsp salt and 1/4 tsp pepper to pan and cook with onion and bacon for 3 to 5 minutes on a medium heat
- Next add water to help deglaze pan, cover with a lid, lower heat and simmer for 10 minutes or until squash is cooked and softened
- Set aside to cool for at least 15 minutes or until needed
- In a large bowl add egg, heavy cream, mayo, 1/4 tsp black pepper, shredded sharp cheddar cheese, half of the grated parmesan cheese and combine well
- In a separate bowl add crushed crackers, the other half of parmesan cheese, melted butter and mix
- Remove any liquid from cooled squash, then add to bowl of cream mixture and combine well
- In a buttered 8 x 8 square baking pan or at least 1.7 quart baking dish add squash mixture, then top with crushed cracker mixture
- Bake UNCOVERED in a preheated oven at 350ºF / 176ºC for 25 to 30 minutes or until the casserole is golden brown and bubbling
- This casserole easily serves 4 to 6 side servings
