Ingredients

zucchini, sliced 1/3 inch thick
1
each
squash, yellow, sliced 1/3 inch thick
1
each
squash, white, sliced 1/3 inch thick
1
each
onion, sliced thin
1
each
tomato, seeded, chopped
3
tablespoon
green olives, sliced
1/2
teaspoon
oregano, dried
1
each
cheese soup, can, low-fat
1/4
cup
half and half, no-fat
2
tablespoon
flour
1
salt, to taste
1
pepper, to taste
1/4
cup
italian bread crumbs
2
tablespoon
cheddar cheese, low-fat, shredded
Directions:
Preheat oven to 375 degrees. Spray casserole dish with cooking spray.
Toss vegetables in casserole dish. Combine oregano, cheese soup, half & half, flour and salt in pepper in a small bowl; mix thoroughly. Toss vegetables with soup mixture; sprinkle breadcrumbs and cheese over top. Bake for 30 minutes or until vegetables are tender but al dente.

1TBS OF ZERTO ROMANO OR ANY LOW FAT SHREDDED CHEESE
1 MEDIUM VIDALIA ONION
2 MUSHROOMS
2 OR MORE TBS OF EACH RED, YELLOW PEPPER ( OR ANY VEGGIES THAT YOU ENJOY!) ABOUT ONE CUP INCLUDING ONIONS WORTH OF VEGGIES
SPRINKLE OR MORE OF FRANK'S HOT SAUCE (OPTIONAL)
DASH OF PEPPER
2 CRUSHED GARLIC CLOVES OR MORE IF YOU LIKE

DIRECTIONS :
SAUTEE YOUR ONION AFTER YOU CHOP IT UP. IN A. MEDIUM HEAT SKILLET THAT YOU SPRAYED WITH COOKING SPRAY OF CHOICE
ONCE BROWN ADD MUSHROOMS, PEPPERS, GARLIC, SALT AND A BIT OF ITALIAN SEASONING

IN A FOOD PRCRSSOR OR CUISINART ADD OATMEAL AND MAKE INTO FLOUR
IN A LARGE BOWL ADD EGGS, COOLED VEGGIES, ZUCCHINI, GRATED CHEESE, OATMEAL FLOUR, FRANK'S HOT SAUCE, ONION POWDER, SALT, PEPPER ITALIAN SEASONING AND MIX WELL
TOPPING :
IN A SMALL POT MELT BUTTER ON A LOW HEAT AND CORN FLAKE CRUMBS AND ADD A BIT OF ITALIAN SEASONING TOO. MIX WELL
ADD MIXTURE TO THE BAKING DISH THEN SPRINKLE WITH 1TBS OF ROMANO OR SHREDDED CHOICE OF CHEESE. THEN SPRI ON THE CORNFLAKE MIXTURE
BAKE FOR ONE HOUR! CHECK AFTER 50 MINUTES. IF GETTING BROWN YOU CAN USE TIN FOIL TO COVER AND PREVENT BURNING!
SERVE RIGHT AWAY OR PREPARE IN ADVANCE! ONCE COOL KEEP COVERED IN THE FRIDGE. EAT WITHIN FIVE DAYS. A WONDERFUL SIDE DISH!
