1/2 c Orange juice,fresh

BUTTERNUT SQUASH RECIPE - A GREAT WINTER SQUASH VEGETABLE TO ADD TO YOUR GARDEN
Hi! This is Going Organic. You can find our website at goingorganic.weebly.com! Today I am going to talk to you about cooking Butternut Squash.
Butternut squash is a sweet and delicious winter squash that tastes much like sweet potato. Even though winter squash is raised in the summer, they can be stored in a cool place for months before eating. So historically, this squash was saved and eaten during the long winter months.
Butternut squash is also very nutritious. This squash is high in Vitamins A, C, E, Thiamin, Niacin, B6 and Folate. It is a great vegetable to add to your garden.
To start this recipe, you need to wash the outside of the squash. Then take a large sharp knife. Cut the ends off the squash. Cut the wider section of the squash from the narrower section. Then slice these two sections in half. Scoop out the seeds. Place the flat sides of the squash down into a large casserole dish with about one half inch of water in the bottom. Cook it for at least 15 minutes in the microwave. (Until the entire inside flesh is soft.) Allow a few minutes for the squash to cool enough, so that you can touch it. Use a fork to pull away the skin of the squash from the cooked flesh. (Be sure to save the squash skin for your mulch pile or worm bin.) Butternut squash is one of the few winter squash that can be peeled. However I tend to cook it with the skin on and peel it after it's cooked.
Butternut squash is already so sweet, that I don't like to add a lot of ingredients to it. So for this recipe we just need mini-marsh mellows and chopped walnuts. Place the cooked flesh of the squash into a smaller casserole dish and mash it with a fork. When it is completely mashed, smooth it evenly across the bottom of the dish. Then sprinkle mini marsh mellows on top and sprinkle chopped walnuts over that. Place the squash in the oven on broil for a few minutes to toast the marsh mellows. Then it is ready to serve.
This is a very tasty and healthy winter squash recipe. It can also make a very healthy dessert. And a nourishing recipe that even kids will enjoy.

Preheat oven 325*F
Prepare large fresh butternut
As shown on video.
Bake for 1 hour
Scoop squash out into bowl
Add:
1 cup brown sugar
1/3 cup milk
1/4 cup melted butter
2 eggs beaten
1/2 teaspoon Cinnamon
1/4 teaspoon each of, Allspice, Cloves and salt
1 tsp vanilla
Mix well by hand
Topping:
1/4 brown sugar
1/4 cup plain flour
3 Tablespoons butter
1/2 cup chopped pecan
Bake for 30 minutes. Serve after sets 10 minutes
