Tex-Mex Chili/Homemade Recipe/Subscriber Request!
Ingredients:
Spices:
* (1) pkt of Taco Bell Taco Seasoning
* 1 tp Badia Complete Sazon
* 1/2- 1 tsp Onion Powder
* 1/2- 1 tsp Garlic Powder
* 1 tsp Red Robin Seasoning
* 1/2 tsp Smoked Paprika
* 1/4 tsp Ground Turmeric
* 1 tsp Weber Chicago Steak Seasoning
* 2 TBS dried Chives
Cheese's:
* 1 cup - 1 1/2cup of Ragu Double Cheddar
* 8oz Velveeta Queso Blanco, cubed
* 4oz Cream cheese
Meats:
* 1lb Ground Beef
* (1) link from a 15oz pkg of Ole Mexican Foods Chorizo Sausage
Beans and Sauce:
* 1 29oz can of tomato sauce
* 1 can of seasoned black beans
* 1 can of chili beans in chili sauce
* 1 can dark red kidney beans
* 1 can of corn
* 1 can of pinto beans
*** NOTES***
* All of the Spices, Meats, and Beans can be substituted according to your own preference! DO NOT feel that you have to follow this exactly. Have fun with it. I would HIGHLY suggest to add the Chorizo if you have never had it before!
* The amount of seasonings as well, may be altered to your OWN preference, add more or less accordingly.

Large Pot or Soup Pot -
Baking Sheet -
Mixing Bowls -
Cutting Board -
Spoon -
Ladle (for serving) -
Blender or Immersion Blender (if you choose to puree a portion of the soup)
Smoky Ham and White Bean Soup with Homemade Croutons.
Ingredients:
2 tablespoons of butter
4 sprigs of fresh thyme
2 small stalks of celery
2 small carrots
1 large white onion
4 cloves of garlic, minced
A sprinkle of oil
Salt and pepper to taste
Smoked paprika
3 cans of cannellini beans, drained
1 pound of diced ham
1 box of low-sodium chicken broth
Green onions for garnish
Homemade Croutons:
Stale bread, any size or shape
Olive oil
Salt, pepper, garlic powder, onion powder, and paprika for seasoning
Instructions:
In a large pot over medium to medium-low heat, melt 2 tablespoons of butter. Add 4 sprigs of fresh thyme.
Add 2 small stalks of celery, 2 small carrots, 1 large white onion, and 4 cloves of minced garlic with a sprinkle of salt and oil. Sauté until the vegetables are fragrant and soft.
Prepare the homemade croutons: Drizzle olive oil over pieces of stale bread and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Bake at 350°F for about 10-13 minutes or until they are crunchy.
Add smoked paprika to the vegetables in the pot.
Once the croutons are ready, set them aside.
To the pot, add 3 cans of drained cannellini beans and 1 pound of diced ham.
Pour in enough chicken broth to cover the ingredients.
Add 2 bay leaves and season with 1 teaspoon of salt and 1 teaspoon of black pepper.
Bring the mixture to a boil, then reduce the heat to a simmer. Let it simmer for about 20-30 minutes until the vegetables are tender.
After simmering, take out some of the soup to puree it, if you desire a thicker texture. You can puree as much or as little as you like.
Check the seasoning and adjust if needed.
Serve the soup hot, garnished with green onions and the homemade croutons.
