Mildly flavored fish fillets (snapper, gurnard, cod) 5-6
Fresh spinach 1 bag
Butter 25gr
Flour 2 tbsp
Milk 1cup
Cheese 1/2 cup
Breadcrumbs 1/2 cup

Meals in a jar are a wonderful item for your prepper pantry. They contain a complete meal, require only water to be added, and cook up quickly for a warm, hearty, healthy meal. This Chicken Florentine rice bake takes advantage of two items that are on sale this month, February 2022. The spinach is a favorite around our home. Mr. Wicked Prepared balks when I add fresh spinach to a dish, but he loved this dish with the freeze-dried spinach and said it’s his favorite meal in a jar that I’ve made thus far. The chopped spinach is also a great way to sneak a little extra nutrition into any food you cook. Try it in a meatloaf! You can powder the spinach (or any other freeze-dried fruit or veggie) if your kids balk at the green bits! Here is the recipe and below it are links to the ingredients.
Chicken Florentine Rice Bake
1 ¼ C. Instant White Rice
½ c. Freeze-dried Spinach
1 c. Freeze-dried Chicken Dices
2 Tbsp. Freeze-dried chopped onion
1 tsp. Chef's Choice Seasoning
¼ c. Thrive Life Veloute Sauce Mix
¼ c. Thrive Life Bechamel Sauce Mix
¼ c. Freeze-dried Sliced mushrooms
⅓ c. Freeze-dried Parmesan Cheese
Layer all ingredients in order listed in a wide mouth quart mason jar. If storing longer than a few months, seal with an oxygen absorber.
To prepare and serve, preheat oven to 350 degrees. Empty jar contents into an 8x8 baking dish that has been sprayed with cooking spray. Add 3-3 ¼ cups cold water and mix until all ingredients are blended. Place dish in preheated oven. Bake for 30 minutes, stirring contents after 15 minutes. Now your dish is ready to enjoy!

CHICKEN FLORENTINE CASSEROLE | easy prep ahead weeknight meal using leftover rotisserie chicken |
Looking for ways to use rotisserie chicken or cooked chicken of any kind? This Chicken Florentine Casserole is a new favorite of ours! It's super easy to make and can be prepped ahead of time making it a perfect weeknight dinner. Plus it's creamy and comforting, without being loaded down with tons of butter, cheese, and heavy cream, just enough to make it ultra satisfying. Serve it with a side salad, and dinner is done!

Ingredients:
2 cups chicken, shredded or chopped
8 oz rigatoni, cooked
2 Tbsp butter
1/2 yellow onion, chopped
5 oz cheese (Swiss & Monterey jack)
2 tsp minced garlic
2 Tbsp flour
1 cup milk
1 1/2 cups water
1 1/2 tsp chicken bouillon
1/2 cup sour cream
salt & pepper
6 oz baby spinach
Sautee onion in butter to soften. Add garlic, cook 1 minute, then add flour. cooking 1 minute and stirring to coat. Gradually add milk and water, stirring to avoid clumps. Add chicken bouillon, cheese, and sour cream, stirring to melt cheese and combine. Combine all ingredients in casserole dish, and bake covered at 400⁰ for 40 minutes.
Topping:
3 oz fresh bread crumbs
2 Tbsp melted butter
1/4 cup parmesean
1 tsp dried parsley
Add topping and bake uncovered 10 minutes longer or until breadcrumbs are golden brown.

This recipe has what we might call the ‘four c’s’ of an ideal casserole – it’s creamy, it’s cheesy, it’s comforting, and it’s crowd-pleasing. I’m not going to claim that anything is perfect, but this one comes pretty close and it packs in enough spinach to make popeye proud. In other words, it’s well-rounded comfort food and it’s incredibly tasty to boot.
