How To make Carrot Date Nut Bread
-JUDI M. PHELPS 1 1/2 c Carrots -- peeled and sliced
-about 5 or 6 1 Orange -- remove seeds and
-cut in small pieces 1/4 c Buttermilk
3 c Flour
2 ts Baking soda
1 t Baking powder
1 t Cinnamon
1/2 ts Nutmeg
1 t Salt
2 lg Eggs
1 1/4 c Sugar
3/4 c Vegetable oil
1 c Pitted dates
slivered
1 c Walnuts :
coarsely chopped
Put carrots in heavy saucepan with 1 cup water and 1/2 teaspoon each salt and sugar. Cover and simmer until tender, 25 to 30 minutes. Drain, if all moisture has not evaporated. Put orange, buttermilk, and carrots in blender. Whirl until pureed. You should have about 2 cups of puree. Sift flour with dry ingredients except sugar. In mixing bowl, beat eggs and beat in sugar, oil and carrot puree. Stir in dry mixture and mix until well blended but do not beat. Stir in dates and nuts. Spread in 2 greased and floured small loaf pans (about 8-1/2 x 4-1/2 x 2-1/2 inches). Bake at 350 degrees F. 45 minutes to 1 hour, or until pick inserted near center comes out clean. Remove from pans to wire racks. Cool overnight before cutting. Makes 2 loaves. Source: The Zucchini and Carrot Book by Ruth Conrad Bateman. Dates and Carrot Cake: This is a healthy carrot and dates cake in which part of the maida (all-purpose flour) is replaced with whole wheat flour. This is not just a healthier version, but also a tastier one, for it has the right proportions of the star ingredients - carrots and dates, and also includes chopped nuts. You could use either cashew nuts or walnuts as these go well with dates and carrots. The smaller bright orange carrots are best suited for this delicious and moist dates and carrot cake.
This incredibly tasty and healthy carrot and dates cake would make an excellent Easter cake, and even a good choice of Christmas Cake. So do give it a shot. You'll love it, and so will your family.

If you’re looking for an incredibly moist carrot cake that is EXPLODING with flavour, then this recipe IS IT! Soft, spiced cake layers topped with a tart cream cheese frosting, you won’t be able to get enough of this cake!
CREAM CHEESE FROSTING:
HOMEMADE CAKE RELEASE:
INGREDIENTS (I recommend using gram measurements):
Carrot Cake
- 2 cups (225 g) finely grated carrots - about 3 medium sized carrots
- 1 cup (190 g) crushed canned pineapple - with the liquid removed
- 2¼ cups (290 g) flour - regular all purpose (see note 1 on blog if you want to use cake flour)
- ¼ cup (30 g) cornstarch - also known as cornflour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2½ tsp cinnamon - ground
- 1¾ tsp ginger - ground/powdered
- ¼ tsp cloves - ground
- ½ tsp nutmeg - ground
- 1½ cups (300 g) soft brown sugar - firmly packed (see note 2 on blog)
- 3 large eggs - room temperature
- 1 cup (200 g) unflavoured vegetable oil - I use canola
- 3 tsp vanilla essence/extract
- ½ cup (110 g) yoghurt - unsweetened, regular not Greek (low fat Greek yoghurt is okay). Room temperature.
- 1 cup (100 g) pecans or walnuts - coarsely chopped. I like to use both so I use 1/2 a cup of each.
Bake at 160 °C (320°F) with the fan on for 35 minutes. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).
Cream Cheese Buttercream
- 1 cup (225 g) unsalted butter - room temp
- 4½ cups (570 g) icing/confectioners sugar - use more for a thicker frosting (see note 1 on blog)
- 1½ cups (335 g) cream cheese - cold, firm type (see note 2 on blog)
- 1½ tsp vanilla essence/extract
- 1½ tbsp lemon juice - must be fresh

Carrot Date Bread
Ingredients
3 eggs
½ cup oil
1 teaspoon vanilla
½ cup sugar
3/4 cup buttermilk
2 cups flour
1 tablespoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon allspice
1 medium carrot, grated
1 cup pitted chopped dates
9 x 5 loaf pan
Preheat the oven to 375 F
Beat eggs, oil, vanilla, and sugar until the color turns pale yellow. Add the milk and beat until combined.
In another bowl whisk the flour, baking powder, baking soda, cinnamon and allspice.
Slowly add the flour mix to the wet mix and whisk to combine. Add the dates and fold gently.
Pour the batter into a greased and floured pan, bake for 30-45 minutes.

TODAY'S RECIPE IS No Egg No Oven Tea Time Carrot Cake | Carrot Pound Cake Recipe | Yummy
INGREDIENTS:
One medium size carrot
Curd 1/2 cup
Sugar 1/2 cup
Oil 1/4 cup
All purpose flour 1 cup
Baking powder 1 tsp
Baking soda 1/2 tsp
Cinnamon powder 1/2 tsp
Milk 5 tbsp
Grated carrot
6 inch pan
Grease oil
Place a stand & heat the pan for 5 mins on medium flame
After 5 mins place the mould
Cook it on medium low flame for 30-40 mins
Or bake in a preheated oven at 180c for 30-40 mins
NOTE: 1 CUP = 250 ML

How to make a super moist and delicious Carrot & Dates Cake.
Here's what you'll need:
1 and 1/2 cup brown sugar (300g)
3 large eggs (room temperature)
3/4 cup sunflower or canola oil (185ml)
1/3 cup plain yogurt (90g)
2 tsp vanilla extract (10ml)
2 cups all purpose flour (250g)
2 tsp baking powder (10g)
1 tsp baking soda (5g)
1 tsp salt (5g)
