These Carrot Cake Cupcakes are gluten free, grain free and my answer to what's for dessert when your son has adopted a paleo / primal diet and he's coming for Easter dinner.

Craving for carrot cake but only want a small serving? This carrot cake in a mug is a must try!
Recipe adapted from
Good for 2 people

Total fat 21.9 g | Sat. Fat 12.2 g | Cholesterol 117 mg | Sodium 167 mg | Carb. 4.1 g | Fiber 1.3 g | Sugar 1.8 g | Protein 6.1 g
INGREDIENTS:
2.5 tbsp almond flour
1/4 tsp baking powder
1/8 tsp salt
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
a pinch of ginger powder (optional)
1 egg
1/8 tsp vanilla extract
1 tbsp coconut oil
2.5 tbsp grated carrots
2 tbsp sugar substitute
Mix well and microwave for 90 seconds or until it passes the toothpick test. Let it cool.
For the meantime, make the frosting.
For the cream cheese frosting:
Using a hand mixer, beat together the following ingredients:
1 oz cream cheese
t tbsp unsalted butter
1/8 tsp vanilla extract
3 tbsp powdered sweetener
Optional add-ons: walnuts, grated carrots

No fuss, super easy carrot cake. Soft, fluffy and moist cake with cream cheese glazing. I adapted from my other carrot cake recipes to make this one with simpler ingredients. It's not overly sweet, do try!

Vegan Carrot Cake Recipe - Mother's Day/Spring Dessert Recipe - Cupcakes
Vegan Carrot Cake is delicious. This recipe was originally requested by Deonsworld, but Vegan Carrot Cake or Cupcakes are a great vegan dessert for Mother's Day, Easter, or any spring time day.
Vegan Carrot Cupcake and Cake Recipe
Ingredients you will need for this how to:
6 Medium sized carrots, grated
2 ½ cups self rising flour
¼ teaspoon cloves
1/2 teaspoon cinnamon
¼ teaspoon nutmeg
1 1/3 cup white sugar
¼ cup brown sugar
¾ cup applesauce
½ cup vegetable oil
Directions:
1. Preheat oven to 350 degrees F
2. Whisk together flour, cloves, cinnamon, and nutmeg
3. Toss carrots in flour mixture until coated
4. In another bowl, mix together white sugar, brown sugar, applesauce, vinegar, and vegetable oil.
5. Combine the sugar mixture and the carrot mixture. Mix well, maybe use an electric mixer.
6. Place vegan carrot cake batter into a 9 inch cake round that has been greased and lined with parchment paper.
7. Bake for 45 minutes.
Vegan Icing Frosting Recipe for Vegan Carrot Cake
Ingredients:
1 ¼ cup confectioner's sugar
3 tbsp almond milk
Directions on how to make the icing/glaze:
1. Mix confectioners sugar and almond milk
2. Pour on top of the carrot cake

Hello welcome to Sundae Bakes new baking channel!
Muffin, so easy to make and if you are creative you can make variations with this simple plain muffin recipe. These are the ingredients that are currently available in my pantry. You can use any that you already have!

Ingredients
All Purpose Flour 300 grams
Baking Powder 1 tsp
Baking Soda 1 tsp
Salt 1/4 tsp
Sugar 170 grams
Eggs 2
Plain Yogurt 160 grams
Unsalted Butter 40 grams
Milk 80 grams
Oil 90 grams
Bake first in 210C pre-heated oven for 5 mins and then lower down the temperature to 170C bake for 15-20 mins.
Chocolate — cocoa powder, couverture chocolate chunks
Oreo — oreo cookies
Matcha — matcha powder, white chocolate chips, sweet cream cheese
Blueberry — fresh blueberries and almond
Strawberry — strawberry jam, sweet cream cheese, strawberry biscuits, sweet cream cheese
Carrot — grated carrot, walnut, nutmeg powder, cinnamon powder, sweet cream cheese

When everyone wants a different flavor muffin, try this!
Make a lot of variety flavors from ONLY 1 RECIPE! Carrot cake, Braspberry (Justin Timberlake) Double Chocolate and Banana. You can add a lot of other mixins if these 4 don't suit your tastes.
I've adapted this from the most famous Blueberry Muffin Recipe on You Tube, Preppy Kitchen's John Canel. You can find the original video here:
After making his recipe (without adding blueberries) I divided my doubled badder into 4.
Carrot cake - add 1 tsp cinnamon, 4 oz grated carrots
Banana - 1 mashed banana, 1 tsp cinnamon
Braspberry (blueberry + raspberry) - 4 oz combined blueberries and raspberries, mixed with 1 tsp of flour. (I used frozen but fresh will work too)
Chocolate - add 2 tbsp cocoa powder and 1/3 cup chocolate chips
Bake at 400 degrees F for 20 - 30 minutes depending on the size of your pan.
