✅ Air Fryer French Toast Sticks (serves 6)
12 thick slices white bread (Texas Toast)
1 1/2 cups whole milk or half and half
4 tbsp butter
3 large egg yolks
3-4 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1 tablespoon vanilla extract
Cut your bread into thirds
Place sticks in a single layer in the air fryer at 350°F/177°C for 2 minutes. This will dry your bread out just enough so that you won’t have soggy bread sticks.
While your bread is in the air fryer, make your french toast mixture; pour milk and butter into a microwave safe bowl. Place in the microwave for 1-2 minutes until the butter is melted and the milk is nice and warm, you don’t want it too hot
Add 3 egg yolks and mix together with an immersion blender, fork, or whisk. Because I used my immersion blender, I put my mixture in a 4-cup measuring cup to safely mix
Mix in vanilla, cinnamon, and brown sugar
Pour mixture into a shallow glass dish
Grab your bread sticks, place into batter and flip around
Place in a single layer into air fryer
Sprinkle more cinnamon and sugar if desired
Cook at 350°F/177°C for 8 minutes, flipping the sticks halfway through.

✅ Air Fryer Puff Pastry Danishes

1 package (8 oz) cream cheese, softened room temperature
¼ cup sugar
2 Tbsp all purpose flour
½ tsp vanilla extract
2 large egg yolks
1 Tbsp water
1 package (17.3 oz) frozen puff pastry, thawed
⅔ cup seedless raspberry jam or jam of choice
INSTRUCTIONS
Beat cream cheese, sugar, flour, and vanilla until smooth, add 1 egg yolk
On a lightly floured unfold each sheet of puff pastry and cut each into nine squares
Mix together 1 tbsp water and 1 egg yolk (egg wash)
Top each pastry square with a spoonful (about 1 tbsp) of cream cheese mixture & 1 rounded teaspoon jam
Bring 2 opposite corner of pastry over filling, sealing with yolk mixture
Brush tops with remaining yolk mixture
Place in a single layer on lightly greased tray in air fryer basket & cook until golden brown, 8 minutes at 320°F/160°C. Serve warm & refrigerate leftovers

✅ Air Fryer Monkey Bread
BREAD
12 Rhodes White Dinner Rolls (or any pre-made frozen dough), thawed to room temperature
½ cup brown sugar
1 teaspoon cinnamon
½ stick of butter, melted
GLAZE: combine ½ cup powdered sugar, ½ tsp vanilla & 1 Tbsp milk
Cut thawed rolls in half, dip into melted butter, transfer to sugar/cinnamon mixture and coat, then place in deep oven safe pan.
Let rolls rise, uncovered, in a pre-heated air fryer (that is powered off) for 20-30 minutes.
Carefully cover with foil, then bake at 340˚F/170°C for 10-20 minutes. You will know bread is cooked when an instant read thermometer reads about 180˚F/82°C.
Remove foil and bake for 2-3 more minutes to lightly brown the top. Carefully remove pan, let cool for just a minute, then invert a plate and turn the pan over onto plate. Drizzle glaze over the top and enjoy!
TIP: to quickly thaw, warm oven to 200˚F/93°C, then turn off. Put rolls on a plate with plastic wrap over the top and allow rolls to thaw in oven, for 30 min.

You know those meals you can make when you have no cohesive ingredients in your fridge, and you're putting off a trip to the grocery store for as long as possible? In my house its things like crispy salmon burgers, fried eggs, or potato soup. Staple meals.
What is your definition of a perfect staple meal? For me, it is one has only a few basic ingredients. It can be adapted to suit what you have on hand. And it must, of course, be a healthy square meal.
This one has it all; protein, fats, carbs, veggies. The sourdough starter makes a bread layer over the top of whatever filling you decide on.
I originally read about this idea over on the Traditional Cooking School Blog. I adapted it a bit and have been enjoying it for many years!
The Sourdough skillet is the perfect staple meal.
All you need is:
Veggies (any will do)
Meat (totally optional)
Salt
Pepper and Herbs (again, optional)
Fed Sourdough Starter (more on that HERE)
Eggs
Cheese (once again, OPTIONAL)
Baking Powder
Butter (or even coconut oil..some kind of fat)
So, let's tally up the things that are a must..Veggies, sourdough starter, eggs, baking powder, salt, some kind of fat.
For a grand total of SIX (did I count that right? ONLY 6??) ingredients!
If you don't have THAT on hand, well then get ye to the store, post haste!
Sourdough Skillet Ingredients
Four cups filling
Options for filling could be:
lentils
ground beef
black beans
shredded chicken
onions, peppers, garlic
carrots, potatoes, green beans
zucchini, tomatoes, basil
I could go on and on. The options are endless. The beautiful thing about this dish is it is more of a concept than a recipe.
Sourdough Mixture to go on top
In a large bowl mix
1.5 cups fed sourdough starter
3 eggs,
1 teaspoon salt
1 teaspoon dried herbs (optional)
3 tablespoons butter (or coconut oil)
2 teaspoons baking powder
Sourdough Skillet Process
Preheat the oven to 400 degrees.
Ideally, if you cooked your filling in the cast iron skillet, it is already preheated. You can read more on my tips with cooking in a cast iron skillet HERE. Preheating is the best step to take to ensure nothing sticks.
Add the cooked filling to a large cast iron skillet.
Spread the sourdough mixture over the top.
Sprinkle with 1.5 cups grated cheese. (optional)
Bake for 25 minutes, or until bread is cooked through and golden.
You could seriously have this sourdough skillet every single night and never feel like you're eating the same thing. Ok, I typed that and then realized it could be a slight exaggeration. But, for real, imagine all the possibilities!
If you need my help brainstorming, I put together a quick little ebook with five recipe variations. You can snag that up here:

Texas Red Chili - Bowl of Red
Texas Red Chili - AKA Bowl of Red - AKA Chili Con Carne
The timeframe and origins of chili are debatable such as many things in history. Did it start in the US or did it come from Spain?
In 17th century there is an old Southwestern Native American legend that a chili recipe was put on paper by a beautiful nun, Sister Mary of Agreda of Spain.
In the 18th century there are records in San Fernando de Bar, now know as the city of San Antonio, of a spicy “Spanish” stew that is similar to chili.
In the 19th century things became more clear. Chili was cooked on chuckwagons where Cowboy cooks didn't carry perishable items, it was made popular in Tex prisons, it went national when Texas sets up a stand at the1893 Columbian Exposition in Chicago.
My favorite account is the women of San Antonio known as the “Chili Queens” selling this they called chili that was makde with dried chilis and beef in the Military Plaza Mercado. From the July 1927 issue of Frontier Times. In this article, Frank H. Bushick, San Antonio Commissioner of Taxation, The chili stand and chili queens are peculiarities, or unique institutions, of the Alamo City. They started away back there when the Spanish army camped on the plaza. They were started to feed the soldiers. Every class of people in every station of life patronized them in the old days. Some were attracted by the novelty of it, some by the cheapness. A big plate of chili and beans, with a tortilla on the side, cost a dime.
One thing that is not debatable is the original chili started off as Chili Con Carne (chili with meat) and it started off in the Southwest. Chili was about the meat and the flavors from the chilis. There were no fillers such as beans, noodles or rice.
State Dish of Texas - 1977 - RESOLVED by the House of Representatives of the State of Texas, the Senate concurring, That the 65th Legislature in recognition of the fact that the only real bowl of red is that prepared by Texans, hereby proclaims chili as the State Dish of Texas.
