How To make Caraway Burgers
1 1/2 lb Ground Beef
1/2 c Onion; Finely Chopped, 1 Md.
1 t Salt
1 t Caraway Seed
1 t Worcestershire Sauce
1/4 t Pepper
1 c Beer; Any Brand
Mix all the ingredients together except the beer. Shape mixture into 6 patties, each about 1-inch thick. Place the patties in an ungreased baking dish, 10 X 6 X 1 3/4-inches. Pour the beer over the patties, then cover and refrigerate at least 3 hours. (Meat may turn gray, but is ok) Remove patties from the marinade. Broil or grill the patties 4 inches from the heat, turning once, to the desired doneness, about 15 to 20 minutes.

BLT lobster roll recipe:
1 to 1/2 cups of chopped cooked lobster meat
5-6 slices of bacon (fried until crisp)
1/3 cup mayonnaise
1 stalk of celery finely chopped
1 tbsp chopped celery leaves
2 tbsp chopped fresh basil
2 tbsp lemon juice
2 tbsp butter
4-5 top split hot dog buns (I added some crab to my lobster mix and managed to stretch it to 5 buns)
Freshly ground pepper
Lettuce leaves
1 tomato chopped into pieces
1 tbsp chopped fresh chives
In a small bowl combine the mayonnaise, chopped celery stalk, basil and lemon juice. Chill until ready to use.
Put the butter in a skillet and heat over medium high heat, add the hot dog buns and toast them about 2 minutes per side.
Spread about 1 tbsp of the mayonnaise mixture into each hot dug bun.
Stir in the lobster meat to the remaining mayonnaise mixture and season with salt and pepper to taste.
Place a lettuce leaf in each bun, top with a piece of bacon and tomato. Add some of the lobster mixture and then sprinkle chives and celery leaves over top. Garnish with additional bacon if desired.
Serve immediately.
Caraway Coleslaw:
1/2 mayonnaise
1/2 cup sour cream
1 tsp dijon mustard
3 tbsp apple cider vinegar
2 tsp caraway seeds
1 tbsp mustard seeds
salt and pepper to taste
4 cups of shredded cabbage
2 grated carrots
1/2 sweet onion thinly sliced (I didn't use this because I don't like onion in my coleslaw)
Whisk the mayonnaise, sour cream, mustard and vinegar. In a dry skillet over medium heat, toast the caraway and mustard seeds. Toast until fragrant about 2-3 minutes. Keep in mind that the mustard seed may start to pop and fly about the room.
Add the toated seeds to the mayonnaise mixture and mix well. Season with salt and pepper if desired.
Combine the cabbage, carrots and onion in a large bowl. Add the dressing and toss until combined. I used a bag of commercially prepared coleslaw mix.
Cover and chill until ready to eat.

These rye squares are the best thing since sliced bread because there is no need to slice them at all. They come out the oven pre-sliced. Even better still you can trim the edges and tear the squares apart into two pieces which can then be used to make closed sandwiches. Two in one, now that’s an efficient recipe!
As ever they are super easy to make and don’t take a long time either. You can swap the honey for some other sweet syrup like treacle or maple syrup. Swap the caraway for cumin, anise, or fennel. Toast the seeds and grind them up to make a seasoning powder. It’s all up to you.

Handmade Deli Rye Bread Rolls | Perfectly Soft and Fluffy Rye Bun Recipe
These deli rye bread rolls are a great alternative to regular 100% white flour rolls. The crumb is super soft and springy without using any fat in the dough. It is the rye flour that makes this happen because it has practically no gluten it makes the dough extensible and lets it puff up and expand more as it is rising.
You can control the texture of the crust to your liking. I used an egg wash which made it a little chewy, but you can simply spray it with water to make it crispier. The use of a preferment gives the rolls more flavour and will extend their shelf life too. Wholemeal rye flour is best for this recipe as it has more flavour.
