Moroccan food pairs well with wine, particularly wines from the south of France and neighboring Spain or Portugal. And although a red is the usual partner to lamb, the North African spices here make this dish equally compatible with an aromatic and spicy white Côtes du Rhône. If opting for red, try a spicy, young Grenache or Tempranillo with fresh ripe fruit or a Portuguese red blend (like Silk and Spice), which works well with the cuisine by cutting through the fats and complementing the spices. And one can never go wrong with a sassy Zinfandel!
