How To make Caraway Lamb Hotpot
1 1/2 kg Stewing lamb or mutton
1 1/2 tb Margarine or butter
4 tb Flour seasoned with s & p
3 lg Onions, peeled and sliced
8 Potatoes, sliced thickly
2 1/2 c Warm beef stock
2 ts Melted margarine or butter
1 ts Caraway seed in muslin bag
1 sl Streaky bacon
Melt margarine or butter, saute meat and onions together. Alternate layers of meat and onions with sliced potatoes in a casserole dish, finishing with a layer of potatoes. Brush potatoes with melted margarine or butter and top with chopped bacon. Place a bag of caraway seeds on top. Pour over stock. Cover dish and place in a low to medium oven for approximately 1 1/2 hours or until meat is tender. For the last 20 minutes remove cover to allow potatoes to turn golden and bacon to crisp. Remove caraway seeds prior to serving.

How to Make Beef Goulash - This is an easy and simple Hungarian soup or meat stew made with vegetables such as potatoes, carrots, sweet corn, and usually seasoned with paprika and some spices.
⬇⬇ INGREDIENTS FOR BEEF GOULASH ⬇⬇
► 600 grams of Beef - cut into chunks
► 1 tbsp of Smoked Paprika
► 1/2 tsp of Sweet Paprika
► 1/4 tsp of dried thyme
► 1 tbsp of Tomato paste
► 1/2 tsp of Black pepper
► 400 grams of freshly diced Tomatoes
► 3 minced Garlic cloves
► 1 large Onion - cut into small pieces
► 2 freshly diced Carrots. Mostly, root vegetables are used and potatoes are commonly used also.
► 2 tbsp of All-purpose Flour: this helps to thicken the stew;
► 1 freshly sliced Red Bell pepper. The green bell pepper can be used also.
► 1/4 tsp of Cayenne pepper
► 1 tsp of Ground Caraway seeds (ground cumin seeds)
► 2 Bay leaves
► 1 cup of Meat stock
► 3 cups of Beef Broth
► 1 tbsp of White Wine or vinegar
► 2 tbsp of Olive oil (or cooking oil)
► 1 tbsp of Beef Stock Cube
► 1/2 tsp of Salt
► 1 tbsp of Sugar.

Beef Goulash With Caraway Seeds
Hello my friends and welcome to Tony's Comfort Kitchen. This beef goulash with caraway seeds recipe is my version of a traditional Hungarian goulash. I used braising steak. If you use stewing steak or even shin you will need to cook it for longer, more like 2-3 hours, but the taste will be worth the wait. A true winter warmer ????
Ingredients
500g braising steak or stewing steak
1 1/2 tbsp vegetable oil
2 tbsp plain flour
1 onion chopped
1/2 red pepper
1/2 green pepper
4 cloves garlic
2 tbsp sweet paprika
1 tbsp caraway seeds
500ml beef stock
2 tbsp tomato puree
large dollop of soured cream and some chopped parsley to finish

Lamb, olive and orange stew:
1kg boneless New Zealand Lamb leg, diced
1 teaspoon fresh thyme leaves
1 teaspoon fresh rosemary leaves, chopped
2 cloves garlic, peeled and chopped
3 onions, peeled and sliced
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 x 5cm piece cinnamon
2 carrots, peeled and sliced
1 orange
2 tablespoons soy sauce
1 sweet potato, peeled and diced
100g unpitted olives - a mixture of green and black
Roast pumpkin humus:
200g pumpkin or butternut squash
1 x 400g can cooked chickpeas, drained and rinsed
2 - 3 cloves peeled garlic
2 tablespoons tahini paste
½ teaspoon lemon zest
the juice of 1 lemon
olive oil -- approximately 150ml
Minted broccoli cous cous:
80g instant couscous
110ml tepid water
200g broccoli florets, cut into chunks
a handful of fresh mint leaves
a handful flat parsley leaves
2 tablespoons extra-virgin olive oil
Almond dukkah:
1 tablespoon coriander seeds
1 teaspoon fennel seeds
1 teaspoon cumin seeds
2 tablespoons sesame seeds, toasted (or toast in the pan with the other seeds)
½ teaspoon nigella seeds (or use extra cumin, or caraway seeds)
100g toasted almonds
50g toasted pinenuts
½ teaspoon sweet smoked paprika
1 teaspoon flaky sea salt
